I get tired of people complaining about not knowing what to eat for breakfast. Actually, that’s not true. Because I just give them a simple answer: leftovers from the night before. I don’t see anything wrong with leftovers for breakfast. I’m usually excited to wake up the next morning, just so I can’t eat my leftovers. True fact. But I do sometimes make you breakfast ideas to ease you into your breakfast needs. And here is one. This recipe should be named “Crockpot baked sweet potatoes mixed with Dairy free pesto topped with fried eggs” but it’s just not that catchy. Or creative. Because I lack in those areas of my brain. So instead, I gave you an easy spin on breakfast. Or lunch. Or dinner. Or even a snack. The possibilities are endless here, people.

Story time!! So I was sitting on the toilet the other morning, whitening my teeth, while looking at Instagram. You know how we all have our secret  habits we do at home. Well, that’s one of mine. Except it’s not a secret now. Darn. Don’t worry, I was only going pee. Swear. You don’t talk about the other thing on a blog. You lose readers that way. So as I sat there, I suddenly had to sneeze. And if you’ve ever used whitening strips before, you know that’s the last thing you want to happen. Those thin little strips will blow across the room and stick to the wall. So I tried to keep my mouth open while I sneezed. And instead of shooting my whitening strips onto the wall, I spit all over my arms. And phone. It’s like sneezing while driving. You want it to not happen so bad but you can’t do anything about it.

Since we touched upon pee, let’s go into it even more. My seat warmers in my car sometimes make me feel like I wet the seat. Anyone else think that? Anyone?

Alone, yet again.

So the other night, we had our weekly girls night. It involves us eating food out of a crockpot, eating snacks from whatever everyone else brought, and then eating dessert. And chocolates. My friend Kam always has a candy jar at her house. Not really a jar, a basket. Tha b*tch. We usually watch some kind of show in between shoving food in our face, but since the bachelor ended, we don’t really care about watching anything else. So we decided to start playing games. So we played Telestrations the other night. Ever played it? It’s awesome. I want to play it while slightly intoxicated, so a ladies margarita night may be in store. But if you haven’t played this game, here’s my explanation. It’s like the game telephone but with pictures. So you have to draw things and the person next to you has to guess  what it is. And it goes around the circle and usually turns into something completely different. Especially when it comes to someone who lacks a bit of artistry. Let’s check out Laura’s drawing. Her clue was ‘finger food.’ So first think about how you would draw finger food, then look how her brain translated it onto paper.

5 Stars 4 Stars 3 Stars 2 Stars 1 Star

4.9 from 9 reviews

Ingredients

Scale
  • 1 sweet potato or yam, poked with a fork
  • 2 eggs, cooked to preference

For the pesto

  • ⅔ cup walnuts
  • 11.5 cups fresh basil leaves
  • 1 garlic clove, peeled
  • ½ cup olive oil
  • juice of ½ lemon
  • salt and pepper, to taste

Instructions

  1. Poke holes in the sweet potato with a fork. Wrap the sweet potato in foil and place in a crockpot for 8 hours on low or 4 hours on high.
  2. Once the sweet potato is done cooking, remove from foil to let cool to the touch before removing the skin. Then mash the sweet potato with a fork.
  3. For the pesto, place walnuts in the food processor along with basil leaves and garlic clove, and pulse until the leaves break down. Then slowly add the olive oil while the food processor is still running. Lastly, add lemon juice and a bit of salt and pepper. Puree until smooth.
  4. Once the sweet potato is mashed and pesto is finished, mix 2-4 tablespoons of the pesto into the mashed sweet potato.
  5. To finish off the meal, cook up an egg however you like yours. I fried mine to over easy.
  6. Top egg on top of sweet potato pesto mash.

I know the feeling with the breakfast thing – I just finished my breakfast (danish time) at work where everyone else is eating freshly baked bread, croissants etc – And me eating leftover dirty cauliflower rice with pulled pork generates generates all sorts of responses with the general theme being – YOUR STRANGE

    1. Chris says:

The strange ones are the ones still eating all the food that makes them feel crappy all day.

  2. Lonnie Andersen says:

Ohhh by the way, new to you page, love the fact that you blog about all sorts of everyday things, often not at all related to the recipe… and the food is great!

  3. Rachel says:

Yum 🙂 I have all the ingredients for this right now, boooyyaa! Ps. Ever tried using baking soda to whiten your teeth? I’ve been doing it for a while now, faster and cheaper I think (my teeth also got super sensitive from the white strips).

  4. Mindy says:

This looks delicious. I’ll have to make it. But while mine always taste amazing, it always looks…let’s go with unappetizing.
(Btw, one of my friends put the seat warmer on in her car for me and didn’t tell me. I got all panicky because I thought I’d peed and didn’t know it. You’re not alone. You’re just in a small part of the population called “awesomely weird”)

  5. Marlene says:

Looks amazing as do all your recipes with sweet potato. I wish I could get my hands on sweet potatoes out here in

Sorry posted before I was finished writing. Anyways I was trying to say in okinawa Japan I can’t seem to find sweet potatoes or yams. There are however purple sweet potatoes. They don’t taste the same though. It’s called the okinawan sweet potato. I wonder if this recipe would be good with that?

    1. Cledbo says:

I really like those Japanese sweet potatoes, the ones I used to get were white on the inside – are they the same ones?
I would mash them with coconut milk, personally, I think the flavour would really suit. Maybe mix some roasted nori sprinkles in, just for the heck of it 😉

I also love sweet potato booze, aka shochu, which I used to drink way too much of when I lived in Kagoshima years ago. Southern Japan repr’zent!

Also on topic – my breakfast this morning was mashed cauliflower a la Well Fed, with a lamb chop and some sliced mushrooms. Screw conventionality.

JB, if you’ve never played Cards Against Humanity, you MUST. So wrong, yet so much fun.

    1. Vince says:

LISTEN TO HEATHER! Cards Against Humanity is awesome with the right group. Hard to get a hold of though because it’s always sold out. 🙁

      1. Brianne says:

There’s a free download of Cards Against Humanity online. Just google it. You can have it printed at a print shop for relatively cheaply.

    2. joelle (on a pink typewriter) says:

YES!! So fun, and more so with drinks. 😉

  8. Aubrey says:

Haha, yes! I couldn’t wait for this morning to come so I could eat my left over salmon and snow peas. Truth.

  9. Laurie says:

My problem is…what CAN’T I eat for breakfast! I love breakfast food. I constantly have to tell myself, calm down, Laurie, you can have that tomorrow…no need to stuff yourself into a foodcoma before 9 AM!

Love leftovers for breakfast! Recently been making plantain, chorizo, eggs, and avocado skillet-hash over potatoes and heating it up for breakfast! PERFECTION!

  10. Kay says:

Some people can just not get pass the idea of eating foods for breakfast that they would only eat for dinner….it’s ok to eat breakfast foods for dinner, but not the other way around…who told you to only eat a certain food at a specified time? Grow up and eat what you would like for breakfast…I like hot soup sometimes in the colder month….yes for breakfast! Just saying! 🙂
