It’s amazing what a good night sleep does for a person. Ever since I got back into town last week from two back-to-back trips, I haven’t slept very well. I’ve been thinking about work I need to get done, I was worried about Jackson being sick, and the temperature in our house has been weird since it’s been going from super hot outside to freezing cold in a matter of seconds. And because of all of that, I’ve found myself wandering to the couch most nights and waking up with a sore neck from the sh*tty pillows. BUT NOT LAST NIGHT! Last night I slept like a champ and I woke up feeling happy AF. Sleeping is my favorite.

Have you guys watched Ali Wong yet? She’s a comedian on Netflix and she is hysterical. She talks a lot about having babies and what it does to your vagina and life, and man, it’s hilarious and disheartening all at the same time. I wish all my friends were honest comedians and would share their birthing stories in a truthful way. Instead, most of them have repressed those feelings and memories in order to have more children. Which I support. My friends keep popping out super adorable, quiet children. And I’m into those kinds of kids. Quiet children are awesome. I was not one of those children.

Speaking of awesome, I’m going to record a podcast with my sister-in-law this week. I’ve always wanted to have her on the podcast, but timing never was right. But she has some free time this week so I’m forcing her to sit in my living room and talk about the royal wedding, Jersey Shore, and really anything that pops in my mind. So if you guys have any questions you would like me to ask her, feel free to leave them below. If not, we will just talk the Nikki Bella and John Cena breakup. I’m heartbroken personally, so I think it should be talked about.

Anywho, let’s talk briefly about this recipe. I shared this recipe a while back on Aaptiv when I worked on a campaign with them. But that was over a year ago. And while I was doing some cleaning of my computer, I was reminded of this delicious recipe and how every PaleOMG reader should have it. So I changed just a couple things to make this recipe easier and even tastier! This is an awesome summer recipe to make and have throughout the week on a hot summer day. I’ve been eating it in a coconut wrap or with plantain chips and it’s all quite lovely.

Ok, so my sleep high is wearing off and reality of what I need to get done today is setting in so…BYE!

Oh, Hi! I’m Juli.

I’m a food hoarder. And a really bad dancer. If you don’t know me well, you will probably not understand my humor. Therefore, I apologize ahead of time. Thanks for listening to my ramblings of my ever-changing life and trusting my kitchen mishaps. Your trust in me is appreciated.

  1. I had this when you had it on aaptiv and it was SO delicious! Can you talk about whether or not you think it was the breakup was a publicity stunt? I was totally against the idea until I saw that they were basically back together the day their show was starting again. Either way, I hope they get back together!

  2. Absolutely love your chicken salads and can’t wait to try this one, just a warning to get ready for the “what can I substitute for the Balanced Bites fajita seasoning” questions 🙂

Love the blog, recipes and podcast…keep up the great work and I promise to NEVER ask what I can substitute for ANYTHING in your recipes (seriously one of my pet peeves…I would be kicked off of the internet if I was a recipe blogger because I would just lose my mind over that!)

  3. This looks delicious!!! Have you tried flavorgod seasonings? I’ve used them for quite a while now and love them so much!!!!

  4. It looks like John Cena and Nikki Bella are getting back together, so you don’t have to be sad anymore 🙂

  5. I can’t wait to make this!
Any ideas what spices I can sub for the Balanced Bites ones?
    Just kidding! ????

I also want to know if the whole breakup thing was just for the show!

  6. I made this for dinner a couple nights ago and loved it! I didn’t plan ahead at all so it didn’t have time to chill… still tasted awesome and of course even better for lunch the next day. I didn’t have fajita seasoning; instead I had everything on hand to make taco seasoning… so it became Taco Chicken Salad 😛 Thank you for consistently sharing recipes that I can rely on being tasty, easy, and 10 year old food critic approved!

  7. I enjoy your recipes and embrace the healthier lifestyle, which is why I am always shocked to see you call for a store-bought rotisserie chicken! They are so loaded with all that is not good! My solution is to make your own chicken. There are so many great recipes and techniques out there that are better suited for the great recipes you post! The meal we eat is only as good as its worst ingredient! You can make your own chicken and freeze it in desired portion sizes!

  8. Hello Juli,

Thank you so much for a great recipe. My clan is not a huge chicken salad fan but I changed their minds with this one. The flavors are bold but not crazy and it is a nice take on a classic. I added nom-nom paleo’s chili lime pepitas too since I happened to have them.

I also made your Summer Squash fritata at my in-laws when it was my turn to make breakfast and it was a hit too!

    Thanks again,

    Michelle

  9. Oh my gosh this is soooo good! I love all of your chicken salads and every time I try a new one I think “this is the best one”, but this one really might be although the jalapeno popper salad has bacon and it doesn’t get much better than bacon! Either way, this is amazing. I had a lot of deli chicken, almost 4 cups so it needed more mayo than called for, and I had some Primal Kitchen chipotle lime mayo on hand so added a couple of tablespoons of that as well, but other than that made as-is and it was fabulous…thanks for another great recipe!

  10. Hey Juli! Can’t wait to try this! The link for the fajita seasoning isn’t working. Do you have any recommendations or favorite fajita seasoning mixes?
