Jalapeño Popper Chicken Salad (+ cooking video!)

Before I get into my Bachelor recap from last week (still haven’t watched this week’s episode yet) let me just tell you something – I LOVE this chicken salad. It’s smoky, it’s spicy and it’s really damn amazing in butter lettuce wraps. I think I may have to whip this up this week because now I’m really craving it.

But let’s move on to what’s important here – The Bachelor. My sister-in-law and I have decided something…Arie needs facial hair. Like really, really bad. Just a little bit of scruff would really go a long way on him. He has these eyes that look like the White Walker king and, well, the White Walker king even has hair on his skeletor face. Arie needs to watch Game of Thrones and get his life together. Becca mentions that Arie’s eyes “suck people in”…well that’s because he’s a White Walker, Becca. You idiot.

Just kidding, Becca seems incredibly nice.

So let’s paint a picture. The episode starts off with Arie riding in on a motorcycle to pick Becca up and Krystal mentions that she’s seen a lot of people lose body parts while on a motorcycle. Jeez, Krystal, jeez. But for real, motorcycles are crazy dangerous. I’ll stay in my SUV instead. Becca hops on the motorcycle with Arie and holds on tight and says to Arie, “We aren’t in Kansas anymore.” Well you haven’t been in Kansas the entire time. And you’re not even from Kansas so that line doesn’t work here.  They pull up to some warehouse where a chocolate fountain isn’t pouring. Nothing is more defeating and depressing than a stale chocolate fountain. Oh, and mussels that looked like they sat out overnight. Gross. Becca gets the most insane date ever which sets her standards incredibly too high for the future with Arie – she was given probably $20,000 worth of clothing, shoes and jewelry. I’m thinking Neil Lane was trying to get publicity early on in the season since so many people get too bored with this show and give up towards the end. So he gives her a bunch of jewelry…that she has to give back. Except for the earrings, which Arie puts into her ears for her. Becca asks, “Have you done this before?” and Arie says, “Yes I have…for my mom.” Back to the lies, you go. What son is helping their mother put earrings in? Your mom isn’t 95 years old, Arie!!

So Becca gets a date where she gets $20,000 worth of gowns that she can’t fit into her suitcase and probably has to leave behind, then Krystal gets a date to Scottsdale where she has to watch VHS tapes of Arie’s childhood, go to his high school, then meet his family. Talk about a turn off. Who has a VHS tape player? I don’t even have a DVD player at this point. It’s called Netflix. Time to grow some facial and get with the future, Arie. I heard on a podcast recently that Krystal has defended her voice that sounds like she smokes a pack a day, telling people on her instagram that she was incredibly sick. But that does not make up for the fact that she holds oooooon to the last letterrrrrr of every other worrrrrrd. And she never stops smiling. I know a few people who never stop smiling and at some point, they break. Sadly hers will be on national television at some point.

Now, the group date was AWESOME!! I mean, the bumper cars definitely gave quite a few women concussions and Annaliese broke down into uncontrollable crying from a childhood bumper car trauma…but all of it was amazing. The producers did this outstanding childhood reenactment of a child  getting taunted inside a bumper car rink and then they would circle back to Annaliese hyperventilating. Poor girl. We all have our triggers. And when all these women show up to give each other head traumas, everyone is dressed in pants…except BeKAH who has middle school gym shorts rolled up 16 times, no bra, and hoop earrings down to her belly button. Having hoop earrings that large is dangerous. Someone should tell her before her earlobes are ripped apart. Anywho, they all put on their race suits and BeKAH looks like an adolescent boy in hers, but Arie loves it! Think about that for a second. Then they all smash into each other in their car while wearing neck braces that looked incredibly similar to what my dog wore after he had his manhood removed. Interesting choice.

The date ends with 15 women all trying to fight for time with Arie. And Arie does the meanest thing so far. He picks up the rose for the date and tells Chelsea that she was amazing and really opened up…then he hands the rose to Seinne. That has to be a producer move because Rachel use to always do that when she was about to kick a person off. That’s a cruel, cruel joke. But since Chelsea is crushing it with the filler game, I couldn’t tell if she was upset.

If you missed this episode, the only thing you truly missed was BeKAH and Arie eating each other’s face then Arie kicking off Jenny, who kind of loses it. This poor girl is young, drunk and bummed to have to leave all her new friends she just made. Arie tries to hug her goodbye multiple times and this drunk chick ain’t having it. You can’t feed women alcohol then dump them. It just isn’t a good idea.

That’s all that happened. Crying, concussions and a White Walker. Can’t wait to watch tonight to see what happened last night. Fingers crossed Arie sprouts a few facial hairs. This show is crack.

  • 1/21 teaspoon salt

  3. Place jalapeños on a the stove top over a high flame and rotate every couple minutes until the jalapeño begins to blacken and blister. Once roasted on all sides and slightly softened, rinse under cold water and remove the blackened skin, then mince the jalapeño. (for less spicy, remove the seeds before slicing)
  4. Add the chicken, bacon, jalapeño, red onion, mayo, hot sauce, garlic powder, salt, black pepper and chopped chives to a large bowl and mix until completely combined.
  5. Serve in lettuce wraps or on any gluten free or paleo bread you prefer!

Oh, Hi! I’m Juli.

I’m a food hoarder. And a really bad dancer. If you don’t know me well, you will probably not understand my humor. Therefore, I apologize ahead of time. Thanks for listening to my ramblings of my ever-changing life and trusting my kitchen mishaps. Your trust in me is appreciated.

    1. LOL you want to know about her top…and I want to know what is on top of the sandwich. Specifically – what kind of bun is that?! It looks deeelish!

    1. I have a gas stove, but often roast them in a cast iron pan because my grate configuration makes it inconvenient to roast more than one pepper at a time. My personal experience with an electric oven is broiling seems to cook them and I like them blistered. Let them cool enough to handle and rub the skin off without using water. You’re just washing flavor away if you do that.

    1. Just an update, I made this for my meal prep lunches this week with lettuce wraps… sooo good. My husband said it would make any man eat healthy, he couldnt believe he actually ate something in a lettuce wrap. Thanks Juli!

I’m playing catch up with the Bachelor as well. It’s so early that I’m trying to give everyone a fair shake but I don’t think I’m a fan of Chelsea. I think Krystal is cute but then she opens her mouth and I’m like “please stop talking.” I think it’s going to be an interesting season! I’ve got your Instant Pot Smokey Chili cooking now and moving onto the next episode! Can’t wait to try this chicken salad! Thanks for keeping our food choices BOMB!!!

  2. You have been motivating me and giving me amazing recipes for my family for years now! Your arms look so amazing!!! Thank you for being such an inspiration!

  3. This looks delish, and super easy. I only have the Chipotle mayo, which I’m thinking would be a good sub, then leave out the hot sauce? Will report back when I give it a try!

  4. Just made this for lunch and it’s so good! I had no idea roasting jalepeños would take the flavor to a whole new level. Thanks, Juli!

  5. This looks so good! Is there anything to use besides the mayo? I’ve tried to like it and just don’t! I’ve used smashed avocado in the past, but I was wondering if you had any other ideas?? Thank you!

  6. God damn this is good. Eating it in a paleo wrap right now. The roasting of the jalapeños is everything. Holy balls. And the bacon gives it a great crunch. Thank you for bringing this into my life!!!

  7. Juli, I’ve made several recipes of yours in the past, and this one is next level – delicious and easy! I roasted the jalapenos in the oven on the same tray as the bacon, mostly because I was too lazy to dirty another pan. I ate this with paleo crackers like a dip. I think it will be great as an appetizer for tailgates in the fall!

  8. Such simple ingredients. Come together and this sh*t is booooomb. God damn. Put it in a paleo wrap. Bacon gives it a nice crunch and the roasted jalapeño = yummmm. Thank you for bringing this into my life!!! So perfect for leftover chicken!

  9. So I have made so many of your recipes and have loved every one. This is not exception! I took out half the jalepeno seeds thinking it may be too hot, but I wished I would have just left them all in! Not at all too spicy. Picky husband approves too
You are by far my favorite food blogger 🙂

    1. i definitely feel like the heat with the jalapeño changes once you roast it so i loved it with all the seeds, which i definitely normally wouldn’t even be able to eat if it was raw! so glad you liked it!! and thank you so much for the kind words!! xoxo

  10. I made this recipe last night with a few adjustments. I wasn’t sure how spicy it would be, so I only used one jalapeno without the seeds. My mistake! Definitely should have used more. I also wrapped the salad in a organic whole wheat tortilla with some mixed greens and it was DELICIOUS.

    I’m still craving it!

Thanks for the great recipe, Juli!

  11. Your Bachelor recaps are so fantastic! THANK YOU!!

Also, this recipe is JUST SO DAMN DELICIOUS!!!!!! I even had to make it with jarred jalapeños since I live in a remote area & don’t have access to fresh jalapeños right now, still totally delicious. Thank you!

  12. You guys! Go and make this chicken salad. It is so delicious! I made it yesterday and my family scarfed it. They loved it so much I made it again tonight. Juli, thanks for this great low-carb recipe- our family is keto and this was perfect!!

  13. Not sure if this works everytime, but rinsing your hands with lemon juice can usually help remove the sting from the jalapenos!

  14. Another amazing recipe. I’m about to embark on a keto journey for the first time. I keep reading about “cloud bread”(?)…I wonder if this recipe would paid nicely with that? Anyone know?

  15. This recipe is SOOOOO stinkin’ delicious. I made it with 2% greek yogurt instead of mayo (b/c I don’t like mayo) and it was perfect. My boyfriend loved it too. We had it with lettuce cups, baby bell peppers cut in half to scoop, and plantain chips. YUM! Thanks for sharing 🙂

  16. Making this for the 3rd time. Just wondering what you decide for hot sauce: do you go Frank’s or sriracha? Last few I’ve used Frank’s, gave it more of the vinegar-y tang flav to it. Might try sriracha this time and see…
Either way, I’m obsessed with this recipe.

    1. Update: sriracha didn’t do much for me. Ended up adding Frank’s anyway. Should’ve known. Frank’s red hot is the fucking best.

  17. Sometimes I have a hard time finding good lunch options that are Paleo, and this recipe fits the bill perfectly! I’m not usually a fan of spice, but this has the perfect amount, and my husband loved the recipe too. Thank you for sharing this delicious and creative recipe.

  18. This was amazzinnnggg, made it for lunch for the week on lettuce wraps! Didn’t have chives and forgot to add bacon – can only imagine how even better it would be with these toppings. Will definitely make it again!!

  19. This was SO. TASTY. Unreal! I just made some for lunches, but I’m not sure how long it’s going to last.

I thought for sure 3 jalapeños would be too spicy, so I only made 2 – but it could’ve definitely used a little more heat. Lesson learned: Juli knows best!

  20. This recipe is DELICIOUS. I’m eating it for dinner this week on lettuce wraps and I can’t get enough of it! Even my boyfriend likes it which is shocking because he hates anything relatively healthy. Roasting the peppers was a little difficult since we have an electric stove. I will probably try broiling them next time? Thank you for another winner, Juli! 🙂

  21. This is so damn delicious. I knew it would be good but damn. My teenagers loved it and requested that I make more so they can have left overs in their school lunches. Let’s just say we made a huge vat of it today???????????????? everyone will be happy with their bellies full this week. If you are on the fence or just haven’t gotten around to making this you are 100% missing out.

  22. This is probably a silly question but that’s the best way to cook the chicken for this recipe?! Did you bake it or grill it and did you use season the chicken or just leave it plain?! Thank me so much! Can’t wait to make this later this week!

    1. that’s totally up to you honestly! i’ve boiled the chicken, cooked it in a pan and roasted it. i always put a little salt on it whenever i cook it.

  23. I love chicken salad and what a nice twist! I used less bacon cause that’s all I had and it still came out perfect! Going to have it on a bed of greens. Thanks for all your awesome recipes! Been dairy free for 3+ years and your recipes inspire me!

  24. I struggle a little bit with the flavor of the Primal mayo (not use to it yet) but after letting this sit in the fridge for a day, the second and third day tasted even better once the flavors really melded together! Really good with the roasted jalapeno (I broiled mine in the oven). Even my hubby LOVED this, and I’ve never seen him eat chicken salad before. Will be making this again.

  25. Wow, this is so dang good! Love it!! I am trying not to keep eating it so that I will have some for my lunch tomorrow.

  26. Oh. Em. Gee. This is my new favorite recipe! It’s so dang tasty. I have never been a chicken salad fan, but this recipe totally converted me. I broiled the jalapenos in my oven (since I don’t have a gas stove) and it worked perfectly. I will definitely be making this again and again and again. LOVE LOVE LOVE. Thanks, Juli!

  27. Who the F gave this anything less than 5 stars?! I have made so many paleomg recipes and whyyyyyy it took me so long to make this one I’ll never know. Probably because I’m a dumb B who was afraid of fat for a very long time. Well, hello new favorite recipe from Juli! I used sous vide chicken breasts (so juicy!), turkey bacon (bc pork allergy) and 4 roasted jalapenos. Pure heaven. Making a double batch for next week so hubby can share without me murdering him for stealing my deliciousness. Thank you!

  28. Courtney Rosemond

The only thing I’m mad about is how long I waited to make this!!! So delicious, I had left over smoked chicken which added great flavor.

  29. This looks amazing, can’t wait to try! I know it’s terrible for you, but I’m such a Hellmann’s girl when it comes to mayo…

    1. oh man, i would get away from that stuff. the first ingredient is soybean oil which is a super processed and pretty terrible for you. primal kitchen is so clean and so much better for you!
