Fish is so intimidating. I have no idea why. It’s not hard to cook. It smells a little funny, but I sometimes do too and I’m not intimidated by myself. Well, I decided to stop being a lil b*tch and cooked up some fish. Salmon to be exact. And it turned out beautifully. Speaking of stinky things, let’s talk about a Facebook thread that occurred the other day. I wrote on my PaleOMG Facebook page that I had consumed mass amounts of broccoli that night. Well, what’s new. But people began to comment back that I wasn’t going to be fun to be around. Implying that I was going to be a fart machine. Well people, I don’t know what your butts are doing, but mine definitely is very cool with me consuming broccoli. Grains, absolutely not. But broccoli, my body is down for that. I even went on a date recently, yes I Juli B. went on a date, and had eaten broccoli early in the day. No mishaps occurred. Long story short, you broccoli farters out there, you’re weird. But I like you.
I need you to help me make a decision people. My friend invited me to go to Lake Powell. I want to go but I hate swim suits and I don’t drink very much. My friend’s like both, very much. Even though I know I suck as a friend in the party aspect, they still invited me. Do I go? Tell me what to do. TELL ME.

Ginger Citrus Salmon with Cucumber and Orange Salsa
- Prep Time: 15 mins
- Cook Time: 8 mins
- Total Time: 23 minutes
- Yield: 2 1x
Ingredients
For the fish
- 2 salmon filets (I don’t know what size, whatever size you buy)
- 1/4 cup canned coconut milk
- 1 tablespoon Coconut Aminos
- 1/2 teaspoon fish sauce
- 1/2 teaspoon fresh ginger, grated
- 1/4 teaspoon orange zest
For the salsa
- 1 cucumber, diced
- 1 large orange, peeled and diced
- 1 tablespoon fresh ginger, grated
- 1/2 jalapeno, finely chopped
- 1/4 cup canned coconut milk
- pinch of salt and pepper
Instructions
- Chop all your salsa ingredients, toss all ingredients together in a bowl, then place in refrigerator.
- Heat up a medium skillet over medium heat and add your coconut milk, coconut aminos, fish sauce, fresh ginger and orange zest.
- Once the coconut milk begins to slightly bubble, add your salmon filets to the sauce.
- Cook salmon for about 2-4 minutes per side or until cooked to preference.
- Plate salmon then top with salsa, making sure some of the coconut milk makes it over the salmon!
- Boom sauce!!












Yes. You should go with your friend. Its good to get out of your comfort zone every once in a while. and hey… you MIGHT have fun!
YOU READ MY MIND! I AM NOT JOKING! I was seriously just looking at what I had in my fridge… and had no idea how to piece it all together! I have all these oranges and didn’t know how I was going to throw them together with a meat… I thought this less than 10 minutes ago. I decided to log on setting this thought aside, and was thinking about making the rosemary chicken and dates recipe you have up… and saw this! WOW. I am slightly freaked out right now! Creeeeeeeeepy!
Okay, this is admittedly weird for me to leave as my first comment, but I just had to. I had the broccoli problem before I became a paleo eater. Like BAAAAAD. Now I can eat a pound of the stuff and it’s no problemo. I keep digestive enzymes around for non-paleo guests so they can also eat broccoli with no fear.

You should go to Lake Powell. I’m sure you look awesome in a swim suit but if you don’t want to wear one, then don’t. Or do like a friend of mine, and wear a sports bra and booty shorts to go swimming. It’s just like working out! As for drinking, take a bunch of stuff that you do like – sparkling water or whatever floats your boat. You can keep drinking from your stash all night and sooner or later they’ll even get tired of bugging you about it (if they are the kinds of friends who would bug you for not drinking enough).
I agree with these amazing people. You should go. You don’t have to drink if you don’t want to. And you don’t have to wear a bikini. But you should go because you never experience anything sitting on the sidelines. “if you ever get the chance to sit it out or dance. I hope you dance.” You will have fun and you will blog all about because we are nosey and live through you 😉
This looks wonderful. I’ve never cooked salmon with coconut milk before but it seems so obvious now. I can’t wait to give it a try!
I’ve been facing this problem lately too, being invited to events where the main attraction, in the end, is drinking alcohol. Right now I am focused on my training and eating properly, I just don’t fancy the idea of getting shit faced, but still don’t want to say no to events. I always get shit for being the “healthy-boring-fart” when I want to call it a night because I am getting up early to hit the gym. working out makes me happy and feel good, waking up with a hang-over and inability to workout doesn’t.
I find it harder to go to the events, trying the whole time to “be strong” and say “no thanks, I’m sticking with my soda” everytime people want you to take a shot. either way you’re a bore in their alcohol consuming eyes. But there are exceptions! Sometimes you meet cool people to hang out with anyway, drunk or sober ones!
If you feel they will be supportive of you not wanting to keep up with their drinking pace than go! As for the bathing suit, girl there are PLENTY of girls who’d kill for your banging body!! Woot!

If I had your abs, I’d be wearing the shiz out of a bathing suit. Do it! And I completely agree, broccoli makes my tummy super happy. The obscene amount of chocolate chips I told you about? Not so much…
Go to the shin-dig! Lake days are always good times, even if you are only there to partake in the vitamin sunshine. And I second the sports bra & spanky shorts combo. Go comfortable and you’ll surely have a nice time.
I used to think broccoli did bad things to me, since going paleo I’ve discovered it wasn’t the veg, but the crap I usually ate along with it. I mean, broccoli casserole has cream of chicken soup and massive amounts of cheese – ugh.
