Fish is so intimidating. I have no idea why. It’s not hard to cook. It smells a little funny, but I sometimes do too and I’m not intimidated by myself. Well, I decided to stop being a lil b*tch and cooked up some fish. Salmon to be exact. And it turned out beautifully. I was lucky enough to get an awesome piece of salmon from my friend Ryan who catches little fishies himself! If you live in CO and want fresh fish this summer, Ryan is your man to talk to! Speaking of stinky things, let’s talk about a Facebook thread that occurred the other day. I wrote on my PaleOMG Facebook page that I had consumed mass amounts of broccoli that night. Well, what’s new. But people began to comment back that I wasn’t going to be fun to be around. Implying that I was going to be a fart machine. Well people, I don’t know what your butts are doing, but mine definitely is very cool with me consuming broccoli. Grains, absolutely not. But broccoli, my body is down for that. I even went on a date recently, yes I Juli B. went on a date, and had eaten broccoli early in the day. No mishaps occurred. Long story short, you broccoli farters out there, you’re weird. But I like you.

I need you to help me make a decision people. My friend invited me to go to Lake Powell. I want to go but I hate swim suits and I don’t drink very much. My friend’s like both, very much. Even though I know I suck as a friend in the party aspect, they still invited me. Do I go? Tell me what to do. TELL ME.

Ginger Citrus Salmon with Cucumber and Orange Salsa

Ingredients

Scale

For the fish

  • 2 salmon filets (I don’t know what size, whatever size you buy)
  • 1/4 cup canned coconut milk
  • 1 tablespoon Coconut Aminos
  • 1/2 teaspoon fish sauce
  • 1/2 teaspoon fresh ginger, grated
  • 1/4 teaspoon orange zest

For the salsa

  • 1 cucumber, diced
  • 1 large orange, peeled and diced
  • 1 tablespoon fresh ginger, grated
  • 1/2 jalapeno, finely chopped
  • 1/4 cup canned coconut milk
  • pinch of salt and pepper

Instructions

  1. Chop all your salsa ingredients, toss all ingredients together in a bowl, then place in refrigerator.
  2. Heat up a medium skillet over medium heat and add your coconut milk, coconut aminos, fish sauce, fresh ginger and orange zest.
  3. Once the coconut milk begins to slightly bubble, add your salmon filets to the sauce.
  4. Cook salmon for about 2-4 minutes per side or until cooked to preference.
  5. Plate salmon then top with salsa, making sure some of the coconut milk makes it over the salmon!
  6. Boom sauce!!

    You should absolutely go. Bring delicious food and desserts and no one will care if your not drinking. And seriously if I had your body I’d go to the grocery store in a swim suit… just saying.

    Self confidence (or lack there of) and swim suits suck…had my very own trauma with trying them on this week:-( Wish I could love and appreciate my body for what it is instead of seeing what it isn’t. I am working on it though…so that part of me says to go to the Lake and have a fantastic time – there are no mirrors there and I am sure that your friends love you. 🙂

    Juli, you should totally go. If my friends invited me to the lake I’d be totally nervous to wear a swimsuit, but then again I’ve probably got about 20 pounds of fat on you. So you should probably just man the fuck up. I say that with love. 😉 GO TO THE LAKE AND HAVE FUN! Bring some yummy non-alcoholic drinks and just enjoy yourself 🙂

    1. I’m envious of Ryan’s lifestyle (although I’m sure it isn’t as glamorous as making a living being a professional fisherman sounds).

    2. Yes, you should go to LP w/ your friends. Don’t drink if you don’t want to…your friends will probably appreciate having someone sober to keep them out of too much trouble. However, don’t be the female equivalent of *that guy* by mentally recording every stupid thing they do/say.

    3. An actual date!? With a real guy? Congrats.

    GO to lake Powell and meet some boys, duh!! Drink soda water with a lime in it; people will think you are drinking so they wont ask you if you need a drink!

    go in a bathing suit and show off those quads that got you to snatch your latest PR; you work hard for them to flaunt them!

    oh, and people already love you but will love you even more if you bring them desserts ESPECIALLY after they’ve been drinking. its a win-win!

    Bah! Too bad I hadn’t seen this before today. I received both an organic cucumber and some oranges last night in my co-op delivery box..darn it. And I am growing an affinity for salmon too. Darn. Oh well, my cucumber is almost gone (had some with my eggs this morning) so next time.

    As for Lake Powell GOOOOOOOOOOOOO! I agree with others…bring stuff you love (tall boys of coconut water perhaps? 🙂 and chill with your friends. They were cool enough to invite you knowing you you aren’t a heavy drinker….which means they DO want you there. So go, and have fun!

    Juli, you should still go, you don’t need to drink to have fun, (in fact sometimes it’s fun watching other people getting stupid) LOL – Lake Powell is beautiful and if nothing else the scenery ought to make it perfect. (a little vitamin D is good too) oh and BTW – broccoli doesnt give me farts either, THANK GOODNESS 🙂
