Ginger Tahini Cookies
- Prep Time: 10 minutes
- Cook Time: 13 minutes
- Total Time: 23 minutes
- Yield: 12-14 cookies 1x
Ingredients
- 1 cup tahini
- 1 cup maple sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup cassava flour
- 1 teaspoon ground ginger
- 1 teaspoon baking soda
- pinch of salt
- 2 tablespoons Manitoba Harvest Hemp Hearts
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a large bowl, mix together tahini, maple sugar and vanilla extract using a large spoon. Then add egg and mix again until well combined.
- Then add cassava flour, ground ginger, baking soda, salt and Manitoba Harvest Hemp Hearts then mix to combined.
- Use a cookie scoop to scoop out around 2 tablespoons of dough and make into a round ball. Place parchment paper lined baking sheet. This dough will create 15 cookies. Once you’ve placed all the dough onto the baking sheet, use a fork to only slightly press down each cookie dough ball.
- Place baking sheet into the oven and bake for 10-13 minutes until browned and slightly crispy.
- Remove from oven and let cool for 5-10 minutes then move to cooling rack. Then eat up buttercup!

Hemp hearts are THE BEST tasty little nutrient nuggets on the market! I love them in smoothies and oatmeal!

The cookies sound awesome! If I feel peckish in the afternoons, I’ll mix up a little trail mix of hemp seeds, coconut oil, sprouted pumpkin seeds, goji berries and cacao nibs and eat it out of the cup with a spoon. Healthy, filling nut-free snack.
Definitely on smoothies for some crunch! And in a fake oatmeal (rice) conglomeration. Looks yummy!
First I’ve heard of these gems. Look forward to adding the nutrition punch to smoothies and adding to your pumpkin chocolate cookies which are my nephews favorites. A new fav may be these.

I would most definitely add these to my morning smoothie bowl! I have added hemp hearts to walleye before to get a nice “breading” on it – it was delish!
