I ate these gorgeous little guys with my grilled bacon guacamole. It was a good choice. Just warning you now, these are bit spicy. If you don’t like spicy, well, make them differently. I think next time, I’ll just use strips of bacon as my chips for that bacon guacamole. It’s the only reasonable choice.
I mentioned that I was leaving on vacation for Powell soon. Next week to be exact. So I’ve been trying to work on my tan. The last thing I want to be is burned and miserable on the lake. The problem is, everywhere I’ve been tanning permits me to only sit on my butt. Example A: the boat. Watching people wakeboard is much more fun than laying on my stomach being anti social…even though I’m pretty damn good at sucking in my social abilities. Example B: the park. Laying butt side up in the park is never a good idea. Creepy drunk human beings + flying volleyballs equates to an unsafe bikini environment. Example C: my backyard. Do you know how boring and uncomfortable it is to lay on the grass in your backyard? I do. It’s hot as sh*t. I only like to sit in my own sweat so much, and that’s at the gym. Or the bar. Obviously. So the back side (the cellulite side that needs the most tanning) is lacking in color. What the hell is a girl to do?! I don’t effing know. I need to figure it out in the next week though. Maybe I’ll just go stand on the street corner in my underoos, bum facing the sun, of course. I’m kidding. I don’t want to get arrested. Or laughed at. I’ll leave that to the people on my trip in Powell.
Speaking of being awkward in social situations, I think I’ve figured out why I can’t get a date. You all may be shocked, but I’m gonna lay it out there. I’m. Incredibly. Awkward. The other night, when I took that really good picture, a guy at the bar came and talked to me after I got done dancing. He was super nice, good looking, and said he loved my dancing. I awkwardly giggled and said ‘I like dancing, a lot.’ and then our conversation ended. Laura and Sergio let me know the next day that he was hitting on me, but I was too stupid to notice. I’m going to take a dating class soon. Learn how to not enter the friend zone within 25 seconds of meeting someone. I’m a pro at the friend zone.
But back to Powell. If you know Powell, you know there is not cell phone service out there. That’s pretty rad, not gonna lie. I’m pretty pumped to get away from technology. BUT that means I will be not be updating my Facebook or Pinterest or Twitter or maybe even Instagram (gasp…i love instagram). BUT I will still have recipes for you on my website!! I also plan on posting the best burger I’ve ever made. I haven’t made it yet, but I just have a feeling it’s going to be epic.
Grilled Chili-Lime Sweet Potato Wedges
- Prep Time: 20 mins
- Cook Time: 20 mins
- Total Time: 40 minutes
- Yield: 1-2 1x
Ingredients
- 1 sweet potato or yam
- 2 tablespoons choice of fat (I used olive oil but you could use coconut or whatever else)
- juice of 2 limes
- 1 tablespoon chili powder
- 1/4 teaspoon cayenne pepper
- salt and pepper, to taste
Instructions
- Place your sweet potato or yam in a large pot with water that completely covers it.
- Put your pot over medium heat and let the sweet potato cook until you can poke it with a fork and it’s nice and soft. This took about 15-18 for my large sweet potato to cook through.
- Once your pull your softened sweet potato out of the water to cool, heat up your grill.
- When your sweet potato has cooled, cut it into wedges. The size or shape doesn’t matter, just that you love how they look.
- Toss the sweet potatoes in a bowl with the remaining ingredients.
- Place on the top rack of your grill to cook for 15-18 minutes, depending on the thickness of the sweet potatoes. Turn them over half way through cooking.
- When the sweet potatoes have a bit of char to them and nice grill marks, place them on a plate and sprinkle with a bit more salt and chili powder while still hot.
- Let cool so you don’t burn every taste bud you have then eat with Grilled Bacon Guacamole
Notes
You could bake these in the oven as well, just bake them at about 400 degrees for 10-15 minutes, turning them over half way through.
I am going to make these this coming weekend. Along with the guacamole. I love how the word ‘mole’ is there. I also love saying “guac” Caulk and Guac kind of sound-a-like. I know I just made you say the two words aloud and you are laughing now.
I LOVE me some Sweet Potatoes!!! I know you probably shouldn’t do this on your sugar fast, but try making these with Maple Syrup! They are awesome!!!
Oh, and I checked Ralphs and Trader Joes for Coconut Butter and they don’t carry it.. Looks like I’ll have to make a trip to Whole Foods to pick that up for my Americano! Oh, and some beet chips!

Side note, the guys kinda lame for approaching you with “I like your dance moves” … I’d probably be awkward after a line like that too. I mean seriously, what do you say to that? There are only 2 outcomes, you come of sounding awkward or a total perv. Pervy in a bar situation is just plain awkward anyways.

Please stop trying to give yourself skin cancer. Seriously. How can you be all crazy about your healthy eating and then go and purposefully tan your skin? You will also look prematurely old, in addition to having to have your nose or eyelid cut off. Try getting a date then. Kidding. not really.
Try spray tanning, it is safe and looks real. It will last you for a week.

Sometimes awkward isn’t so bad though. You’ll one day find just the right person just doing things that make you happy. Example – I’m selling raffle tickets for my alumni club and telling people how to fill them out. Guy says, “I thought you were asking for me number.” Me, clueless: “No, I’m telling everyone to put their number down on their tickets.” Guy: “Well I’d like your number.” Me, still clueless as he holds out a cell phone: “Hold on, I need a pen and paper.” Annnnnd now he’s my husband.
