I need to get my nails done. Like, bad.

Who thought up, ‘you know, I want John Travolta to play the mom in the movie Hairspray’? So strange. And uncomfortable.

So on Monday, I posted a lil’ picture on instagram of the food I was eating at my favorite restaurant Cuba Cuba with the special man in my life. I even tagged him in it. Only because his instagram is private and you have to request to follow him. So once I posted it, he got 16 follow requests. All from women that he didn’t know. HA! We are nosy sons of b*tches, aren’t we ladies? I know I sure am. I once stalked How Sweet It Is blog for an hour trying to find a picture of her husband that she always talked about. That’s weird. But thanks for creeping on my boyfriend. He’s real good lookin’, I promise you!

I wish I had a Trader Joe’s.

I’m in a slight depression that I have to wait the entire summer to see ‘Shameless’ again.

WHAT THE F*CK IS GOING ON WITH THIS SNOW!?!?!? This time last year, I was in a sun dress in the park, watching people play volleyball since I’m too uncoordinated to play along with them. I’d like to be doing that again. But no, instead I am heating my car up for 15 minutes since my ice scraper is broken. Then getting parking tickets because I’m too lazy to put my boots and snow jacket back on to fill the meter. I love to bathe in my own self pity on times. Obviously. The sun will be here soon and life will be lovely. With sundresses. LOTS of them.

Speaking of sundresses, I just bought four new ones. One from Victoria Secret and one from ModCloth. If shorts won’t fit me, at least sundresses will. And that’s what I will wear the entire summer. Not sure what I’m going to workout in, but it’s looking like naked is going to be my only option.

I want a cookie.

You rock those sundresses. Seriously, they’re the only things I want to wear all summer. Anything else is too hot and sticky here in Oklahoma.

  2. Sara says:

Anything with plantains in it is awesome!!! Can’t wait to make this!!!!!!

  3. Em El says:

Looks tasty, other than the celery. Which, by the way, is the worst thing god ever created.

Will have to give this one a go this weekend, minus the soul-crushing celery. Maybe I will try a little jicama for the crunch instead.

    1. Catherine H. says:

I agree about the celery… and I think I’d leave the onions out of this, too. I LOVE your idea for the jicama, though!! Perfect!

woman. sundresses are the ONLY thing to wear in the summer. They NEVER make you feel fat! Plus, who gets hot in a sundress???

I’ve also stalked How Sweet – I wanna know what her hubby looks like! Why are we so nosey….

My excitement for this recipe is through the roof!!! I just used plantains for the first time last week (in your cilantro cauli rice with plantains and chicken recipe) and FEEL. IN. LOVE.

    LOVE.

PS, you need to start linking which dresses you buy. Like you said, nosy. And I also can’t fit in shorts, so I need to see my options. 🙂

Cuba Cuba is my fav too. My husband took me there on our first date. Their mojitos are what got him into my pants. On the first date!? I married him so it’s ok.

You know we are getting a Trader Joe’s right?

I’m always looking for lettuceless salads and this looks perfect. I think I’ll make it for next week. I usually eat the same things for about two weeks straight and my current meal of choice is getting a little outdated.

SUNDRESSES ALL SUMMER LONG. The only time they suck is when it’s windy but you just learn to deal.

  9. Jessica says:

Funny I always end emails with “I want a cookie” or “I want a donut”.

This salad looks amazing. Will definitely need to make soon!

I have never cooked a plantain before. I actually bought my first one this weekend to make your baked plantain chips (in your cookbook). Just waiting for them to ripen a bit.

I also wear sundresses and skirts all summer. But I also wear bike or yoga shorts under them, b/c my thighs rub together, and chaffing sucks!
