Cooking videos are back in full swing and they’ll be on the blog every Tuesday with a brand spankin’ new recipe! And today I’m kicking it off with a coffee recipe that makes summer way more fun. Ok, not really, because summer is already the best. But it makes summer mornings more delightful since you don’t have to work for your coffee. All you have to do is make this ahead of time, store it in a container, shake, pour, drink. You can do this! I believe in you!

PaleOMG Iced Collagen Mocha Lattes (+ new cooking video!)

If you hear an condescending anger in my voice today, it’s because I’ve been up for 6 out of my 8 hours of sleep. Not a fan of that. I don’t know how parents do it. But I’ve had a sick pup who decided it was a great idea to puke on our white rug at midnight last night. And he decided to puke bright yellow, which goes swimmingly with our yellow and coral comforter. This comes weeks after Jackson puked bright pink all over our living room rug. Pepto bismol pink. So sketch. But the vet didn’t seem to be worried. So now we are at a crossing where he has ruined every rug in our house, the vet doesn’t seem to worry, and we have a dog that pukes randomly but seems fine the next day. Not really sure what to think. But it was a great reminder that I’m still not ready to have a child. Sleep is my favorite.

Being an adult is the pits. It’s the best, but it’s totally the pits. And I’ve finally taken full responsibility of being an adult by finally budgeting. I’ve always been so broke AF that budgeting was never needed, I just saved everything and prayed that I would be able to make rent. But now that I live with another human and we have to plan a life together and be prepared for an apocalypse at some point, budgeting has become my buddy. So I reached out to my friend Brianna of The School of Betty to get her budgeting spreadsheet and began filling it out starting with January to now. And let me tell you…it has been quite eye opening. And one of the biggest eye openers: coffee. Why the hell am I spending so much on coffee when I like how I make my coffee at home better than a coffee shop?

Do you guys out there ever fill out some sort of budgeting sheet to get you planning for the future and understanding your present ways? This stuff is never talked about in school (just like effing taxes) and it’s such a big part of our lives. I’d love to hear how you guys have budgeted or been enlightened of your own spending habits! Because at this point, I definitely want to cook more meals at home and make my own lattes, because that sh*t adds up reaaaaal fast. Which is why I’ll be enjoying this collagen mocha latte at home today! Excited to hear about your own budgeting hacks or how you have been enlightened in the past. And PS, when will the school system add this sh*t into their plans?? How rad would it be to leave high school or even college knowing how to deal with taxes and budget for the future.

Iced Collagen Mocha Lattes

Ingredients

Scale
  • 2 cups cold brew coffee
  • 1 1/2 cups almond milk
  • 1/4 cup collagen peptides
  • 3 tablespoons maple syrup
  • 1 1/2 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Blend all ingredients in a high speed blender.
  2. Pour over ice.
  3. Keep in sealed container in the fridge and shake before serving.

    Hey Juli! Have you noticed any negative side effects from the collagen peptides? I’ve been using the same brand for about a month now, and LOVING how much better my joints feel (I’m a runner), but I’ve been having this weird frequent urination (like 15-20x a day) thing going on and also chest pain. Full disclosure, I suffer from a chronic illness of my nervous system, so could be totally unrelated to the collagen, but figured I’d ask since you’ve been using it for awhile and I really don’t want to stop it and lose the benefits!

      no i’ve never had any sort of weird side effects from collagen. i don’t think that would have to do with collagen in any way, but i’m also no a doctor so i would definitely speak to a specialist!

    I am trying this first thing in the morning. I hate that I go buy coffee when I have it here, but I hate hot coffee in the summer. I have been wondering if anyone I follow on IG would post a delicious cold brew…..and yay you did!!

    Yum, this looks so good! I have a father who is a financial planner/accountant, so budgeting and taxes have always been a part of my life. I remember being 6 years old and saving my allowance to buy a Barbie. no kidding. Here are some things I do to save money: review my spending every month to see where I’m over-spending, or find places where I can cut back or completely cut out. Check if your electric company has different time of use plans (“peak” or “off-peak” hours), and see if you can switch to a lower cost plan based on your usage. Some cable companies will increase rates after a special promotion period, just call them up and ask if there’s another plan that’s cheaper (there usually is!). Automatically deduct from your checking account every month into your retirement account (compounding interest makes a huge difference when you start when you’re young). Don’t carry balances on your credit cards – that interest eats up money. And if you really have a difficult time with buying extras, pay cash- when it runs out is when you stop buying your extras.

    My husband and I both have pretty crappy salaries–our combined income is less than some of my friends salaries.We both work full time for small businesses though. My husband built a spreadsheet for us and we use it to keep tabs on our budget. But lately we keep overspending: his licensing exams and study materials, traveling to visit family, car repairs, passports, medical expenses. It’s stuff that comes up that we don’t necessarily plan for so we are under water right now trying to keep from having to pay a ton of credit card interest and lose all of our savings. We haven’t take a proper vacation since our honeymoon (which was a road trip). It doesn’t seem to me like many other people are in the same situation as we are. I look round and everyone else seems to be happily getting their hair and nails done, buying new clothes, and eating out whenever they want. I am thinking about taking a second job or side project to alleviate some of the stress that money is having on our lives.
