These waffles saved my life this weekend. Ok, not exactly my life, but they saved me an excessive amount of calories and money. All week I was dreaming about getting gluten free donuts once the weekend came along but then, I made these waffles and thought, “Why get out of your pajamas, in the car, drive somewhere, spend money, and then be hungry again in 20 minutes because of the sugar spike?” So I topped these waffles with lots of dairy-free chocolate chips and my favorite maple syrup and all those donut cravings went away. I will absolutely get those donuts someday, but as long as these waffles are in my house, I don’t need them!
But let’s talk about more than just these waffles…that are absolutely insanely effing good. Seriously, they are addictive! Let’s talk about my friend Lexi from Lexi’s Clean Kitchen. I’ve known Lexi for a couple years now through the blogging world but I just met her in person back in May when we bunked up together in a house during Paleo(fx)! She may be the tiniest friend I have. I think she’s 4’11” but she BEAMS with personality, intelligence and spunk. Lexi’s Clean Kitchen Cookbook Review: Best-Ever Fluffy Waffles
- Yield: 2 waffles 1x
Ingredients
- 1 tablespoon melted unsalted butter or avocado oil, for the waffle maker
- 1/2 cup blanched almond flour
- 1/2 cup tapioca flour
- 1 teaspoon baking powder
- pinch of sea salt
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 1 1/2 teaspoons pure maple syrup
- 1/2 teaspoon vanilla extract
Instructions
- Preheat a waffle maker and brush it liberally with melted butter. Whisk together the almond flour, tapioca flour, baking powder, and salt in a mixing bowl, preferably with a spout. Add the eggs, applesauce, and vanilla and mix to combine.
- Following the directions for your waffle maker regarding batter quantity and cook time, pour in the batter and cook the waffle until done. Remove and transfer to a low oven to keep warm. Regrets the waffle iron and repeat with the remaining batter.
- Serve the waffles hot with butter and maple syrup. Store leftovers in the fridge for up to 1 week or in the freezer for up to 6 months.

These were great! And they didn’t stick!! I was seriously starting to doubt my Waffle making abilities with other paleo recipes I tried.
These look amazing and I now have a serious craving! But I don’t have applesauce! What can I use as a substitute?
i would just go get some applesauce. this isn’t my recipe, it’s a recipe that i review for the blog, so i would recommend just sticking with how it was made
This is way late and I’m sure you’ve made these by now, but I didn’t have applesauce and there was no way I was getting out of my PJs to go to the store, so I used melted coconut oil instead and they came out fantastic!!
For such a simple recipe this are really great. Paleo waffle recipes are so hit or miss but this is a real keeper!
I just read about making waffles with sparkling water, and I’d like to try it. How much should I use, and should I add it, or substitute it for one of the other ingredirnts in the recipe. This is for a traditional waffle maker.

I did not use butter on my waffle maker because it’s ceramic, so mine didn’t crisp up. They do freeze/reheat well and crisped up nicely in the toaster oven.
has anyone made these as pancakes? I don’t have a waffle maker
Ok I have no idea what I’m doing wrong. I mix all this stuff together and it turns to a thick cement type paste. I had to put 4 eggs in it along with some almond milk to get it the least bit pourable and I still had to spoon it on the waffle maker.
it’s hard to say since i’m not there and i don’t know what brands you are using…
just made these but did pancakes instead of waffles and it made 4 large pancakes and hollllllllly shit balls. Topped it with fourth and heart vanilla bean ghee…. why have a waited so long…. WHY!?!? So good! Love that you share other bloggers recipes!
