My Meat Sauce I Put On Everything

Wearing high heels anywhere is so unrealistic. Especially while drinking. I’ve figured out, my toes almost always swell when I drink. Seriously, they get hot, swell up, and get tingly. Like when you’re on an airplane. Or pregnant. At least that’s what I’ve heard. I’ve never been with child.

I say this because I’m watching Sex and the City. But also, because I wore heeled boots out a week ago and my toes were crying after 2 or 7 shots of vodka. And when my toes cry, I whine. I’m an only child, so I’m sure you can imagine how often whining occurs. Answer: #fartoooften. I hate myself sometimes. And my toes. My chubby, drunk toes.

Speaking of drinking times, as you may know, the season finale of The Bachelor was on the other night and that meant girls night. And girls night includes food, more food, drinks, and more drinks. And gossip. It’s the best part. We decided for the finale, we would drink every time someone on the show said ‘connection’ or ‘love’. So I’m sure you can imagine how many drinks were downed. But that’s not what’s important here….

Sean chose….Catherine. WTF?!?! Are you serious? I was screaming at the TV. I’m not sure if it was the booze talking, but I was mad either way. This show is already complete bullsh*. I mean every single girl thinks she is in love with a guy after a couple weeks. And when I say a couple weeks, I am exaggerating. But then they make him pick the wrong person?! After telling us he’s a born again virgin?? Are you freaking serious? Way to make the Bachelor a COMPLETE bore. I mean come on. I was in pissed off-thrown for a loop-shock. It was so disappointing. I think he picked Catherine because he knew Lindsay would jump his bones. And he’s trying to keep it in his pants after living 28 years. I guess he made the right decision. Bastard.

I’m almost positive gluten poisoned me. Seriously. After eating gluten, then drinking a bottle of Kim Crawford, my stomach is f*cked. I am resisting to blame it on the alcohol. That would be out of my system by now. But this gluten from last week is haunting me. I’m pretty sure gluten is a parasite and this parasite is making babies in my insides that are very hungry children. Most are. And now they are drunk parasite children. What I’m trying to say here is, my insides hate me. I’m staying away from sugar, alcohol, and new restaurants. My life just got boring, didn’t it? Damnit.

My Meat Sauce I Put On Everything

Ingredients

Scale
  • 1 pound ground chicken
  • 1 pound bulk pork mild italian sausage
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 (14 ounce ) cans of tomato sauce
  • 3 garlic cloves, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • ½ cup fresh basil, finely chopped
  • salt and pepper, to taste
  • 12 tablespoons fat of choice (I used bacon fat)

Instructions

  1. Heat up a large saucepan over medium heat, add a couple tablespoons of fat of choice then add minced garlic cloves, the bell peppers and onion along with a little salt and pepper to the pan.
  2. Move vegetables around until onions become translucent.
  3. Add ground chicken and bulk italian sausage to the saucepan and break up the meat.
  4. When meat has begun to cook through, add the spices.
  5. When meat is almost done cooking, pour in the two cans of tomato sauce.
  6. Salt and pepper once more, then reduce heat and let simmer for 5-7 minutes.
  7. When all the flavors are well mixed, add the chopped fresh basil, mix well, and serve!
  8. Easy peasy! Put on mushrooms, brussel sprouts, spaghetti squash, eggs, acorn squash, really anything you want. Or eat it cold. It’s pretty damn good cold.

  6. I hear you on the gluten. Try not to eat it any more myself, but it sneaks in there. Picked up a salmon teriyaki bowl at Whole Foods yesterday, and I think the sauce on it must have contained a fair amount of gluten. I bloated up like balloon all afternoon. Stomach cramps. You know the drill.

  7. Hilarious. While I may not be able to relate to your shoe pain, I could relate to the last part (“What I’m trying to say here is, my insides hate me. Damnit.”) — after avoiding it, I can say that though my life is a bit boring (and my GI tract seems to have won this round), my insides feel better.

  8. Heels are the bane of my existence. When I lived in Vegas I wore them a lot. I’m so glad to be back in Colorado where it’s not expected that girls *always* wear heels. I get away with wearing them far less often. Which makes my feet very happy.

    i think the bigger disappointment is desiree being chosen as the bachelorette. she is such a – bore. should have been leslie – she is smokin hot.

  24. Have you ever been tested for celiac disease? It sounds like you have serious issues with gluten. If you have celiac, it is important to get it in your medical charts–future hospital stays (maybe someday you’ll have pregnant toes instead of drunk toes!) will take your gluten intolerance far more serious if it is documented. It is a simple blood test. You do have to be eating a little bit of gluten for the test to work so you might want to plan for the test after a vacation where you know you’ll cheat a bit. People with celiac disease can take up to a month to heal from exposure to a few crumbs of gluten.

    Thanks for your awesome site! My youngest daughter is celiac and lactose intolerant so it was easy for my husband and I to transition to Paleo when we started CrossFitting a year ago. Your banana bread gets made every other weekend around here–satisfies the gluten or sweet longings for our whole family. 🙂

    …Way more than I love wearing heels, although they do make for a huge confidence booster, until 2 hours in when my toes start to cry like yours. The trick is to find that perfect pair that fit and don’t put all your weight into your toes. They’re pricesless. I have a pair of Nine West pumps that I can actually wear out all night, even dancing and standing. Priceless!

  33. Gluten hangover is a real thing (for me at least)! Since drinking and eating crap food often go hand in hand it’s hard to tell, but it really does feel just like an alcohol hangover (without the stabbing headache) when you wake up the next morning except that IT’S STILL THERE THE MORNING AFTER THAT. And then you’re like, crap. Shouldn’t have eaten that sammich.

    But then again I usually don’t get many GI effects from gluten; it makes my ADD SOOO much worse. Feels like my neurons are trying to fire through pudding. Stupid gluten. Thanks for the recipe!

    1. when I was competing, i didn’t drink for that very reason. now I drink whenever i feel like it, i just know my workout won’t be very strong the next day

  44. So I have now already made this recipe twice – and posted a pic on facebook. Which in turn has made multiple friends comment and some have now made it and exclaimed to me about it. This recipe is KILLER!!! It even got my mom to eat brussel sprouts!

    I made it using ground turkey and ground pork with a tablespoon of the well-fed italian sausage seasoning. So much flavor and so excited that I have some still in the freezer!

  51. I didn’t have tomato sauce the night I made this, so I just put everything else together and ate it straight up with no sauce. It was amazing! It is a good idea to keep this on hand and serve it with eggs too! I am on day 12 of the DSD so I need a way to spice up the eggs!! Love the recipe!!

  60. H, Juli! This recipe looks great. I’m curious as to what kind of tomato sauce you use. I always have a hard time finding tomato sauce at the store that doesn’t have any added sugar.

    1. i usually get my tomato sauce at whole foods and have an easy time finding it without sugar, but i couldn’t tell you off the top of my head which kind it is. i’m sorry!

  61. Loved it! Has a bit of a kick for those of you who are sensitive to spiceyness. I couldn’t find “bulk sausage”. I actually still don’t know what that is… so I just picked up some “FREE FROM” tubed sausages and squeezed them out of the tubing. Totally gross (gagged a little) but it worked!

  64. Tweaked recipe by using lean ground turkey, 1/2 lb of Italian sausage. Ran out of tomato sauce so I improvised with ketchup and diced tomatoes. Came out AMAZE-BALLS!!! Thanks! This is my go-to sauce now!!!

  68. I have to say – this sauce is one of my favorite foods! I make it once every few weeks and put it on pretty much anything!

    The only things I’ve adjusted are I make a few slices of bacon first (using that fat for the veggies) and then chop the bacon and add it in when I put in the tomato sauce…I also use 15 oz of tomato sauce, and 15 oz of diced tomatoes (I like chunky sauce)!

Just purchased a spiralizer because I wanted to try making the Shrimp Piccata Pasta which looks amazing but before I did, I wanted to use up some ground beef I had in my freezer so found this meat sauce and OMG, it’s amazing. It’s an explosion of flavors in your mouth. I made it with ground beef and sweet italian sausage since that’s what I had in my fridge. I spiralized some sweet potatoes and I’m literally the envy of everyone in my office because my lunch smells AMAZING! I have so much meat sauce that I’m planning on freezing some for later (cause next up is the Shrimp dish!) Love my spiralizer, love this meat sauce. It’s like a brand new world for me!

  71. I heard Sean and Catherine are still together. I was also shocked with his choice but guess he knew what he was doing. Gluten is a poison mostly because the wheat of today is not the wheat of our ancestors. I’m using almond, coconut and rice flour in my paleo recipes. Thanks for the recipe.
