I know what you’re thinking…REAL ORIGINAL JULI…and you’re right. This recipe isn’t a original. Really almost any paleo blog you look at out there, you can find some kind of egg muffin/egg cupcake/egg round, but that’s because it’s simple. And that’s what people like. Simple sh*t. Most people don’t like to spend hours in the kitchen, they’d rather be flirting with men at Whole Foods. That’s just me actually. Whatever. I’ve never even talked to a man at Whole Foods. I have hopes of that occurring though. Someday…someday.

Guess what I got this weekend!?!? PaleOMG Black Tanks!!!! Yes I did! Check out the link to buy your own from Renegade Fitness {NO LONGER AVAILABLE}!! We will be getting something even cooler in soon! Just you wait!

no one will even know you did burpees in your PaleOMG shirt!

Anywho, even though this recipe is a bit dumb, it’s still super special to me. You know why?!? Because it was the first video I made of myself cooking!! So exciting! I’m not really good with being on camera. But I tried. I talked about a lot of random sh*t…but that’s what I do in my blog posts so I guess it makes sense. If you think I look stupid in the video…you’re correct. Special thanks to Tom who helped me edit this video and spent hours putting up with me and to Laura (the roomie) for recording me on a Saturday afternoon. She’s pretty damn awesome. And btw, the cooking video is on my YouTube station which has all my wod videos I had to turn in when I did the AgainFaster Wod Series. Some embarrassing. Ignore those. My b.

On-The-Go Egg Bites

5 from 24 reviews

  • Yield: 6 1x

Ingredients

Scale
  • 1lb ground pork mild italian sausage
  • 12 eggs, beaten (if preferred)
  • 12 narrow sweet potatoes, sliced
  • salt and pepper, to taste

Instructions

  1. Preheat your oven to 350 degrees.
  2. Add your ground pork to a large skillet over medium heat. Use a spatula to break it up into crumbly pieces
  3. While the pork is cooking, slice your sweet potatoes a little bit thicker than a chip would be…I’d say the thickness of 2 quarters stacked together. Real technical. Then beat your eggs (unless you are going to crack them directly into the egg cups).
  4. Once the meat is cooked through and there is no pink remaining, transfer that to a plate (a slotted spoon will be best because it will keep the leftover fat in it, but just pouring it works as well).
  5. Now add your sliced sweet potatoes to the pan with the leftover fat and turn the burner on high.
  6. Cook for about 5 minutes per side, depending how thick they are but you want them to be soft so they will cook through fully when they are in the oven.
  7. Now place a cooked sweet potato slice into your silicone muffin pan or greased muffin tin, top it with a little ground pork, then another slice of slice potato and top it all off with some beaten eggs or crack an egg into it, it will bind it all together!
  8. Cook for about 10-15 min or until nothing oozy is moving around in the tins when you check them.
  9. Let cool, top with hot sauce!!

I got about 13 cups made with these ingredients!

Way to rock it out…just a thought, you should do a new vid a week with any of the more technical recipes.

    1. juli says:

Your wish is my command Rob!

How long do you think these will last? Like, staying fresh wise. It is doubtful they will actually last until the go bad -but I’m just afraid of eggs in my fridge. i don’t know why. I can’t even keep hard boiled eggs in there.

    1. juli says:

Haha I’m thinking 3-4 days most likely. They will get a bit sketchy after that. But leftover anything never freaks me out

  4. April says:

Loved the video! So cool to have a voice to go with your ramblings haha! How the heck are you still single? You’re such a cool chick!

    1. juli says:

Lol probably single since I have a deep man voice. Men aren’t into that weirdly enough.

  7. juniper says:

You’re exactly like I imagined you! Except with an even sexier butt since you always talk about getting fat off nut butters…whatever girl. Keep eating those nuts!
So one comment — I totally feel you on the tea hatred, I love coconut milk lattes with maple syrup, it’s my kryptonite. BUT! You have to try Good Earth brand original tea. Most tea tastes like dishwater, and if you add coconut milk it tastes like dishwater with coconut milk added, but good earth is truly glorious. It’s sweet — naturally — and kinda spicy, and it keeps me awake at work until I am free to dash to the coffee shop and spend too much money on delicious delicious espresso.
You are amazing and I tell everyone about you with even the slightest provocation. “Oh you’re engaged! That’s awesome! Speaking of awesome, check out PaleOMG! Maybe you can get in shape in time for your wedding…er, what?”
Ok, I’m done verbally molesting you. Party on!

    1. juli says:

Hahahaha Thank you SO much for the support Juniper, I seriously appreciate it soo sooo much!! I’ll have to try that tea out. But it’s the last one I’m trying. I have so many stupid boxes of tea at this point.

Sooo excited to have a video finally! Very nice addition to your already engaging site! 🙂 Congratulations… the video was exactly as I expected it to be from you… FUN and easy to relate to and watch! BTW – purchased a black tank the minute I saw the photo on the site!! Even before I started reading your entry and watched the video! 🙂 Looking forward to more fabulous dance (err… I mean cooking) videos from you! You rock the spandex by the way… no more comments about your a$$ and nut butters!!! I’d love to have your a$$! Wait.. that didn’t sound right did it? Well, you know what I meant! 🙂

    1. juli says:
