I luuuuuuurvvvvvv oatmeal. I love it so much. BUT I’m not a fan of the fact that I’m hungry almost immediately after eating it. When people say it sticks to your bones and keeps you full for hours, they mean minutes. When I was eating oats on a regular basis, I was eating more often than I needed to because I just felt hungry all the time. I still sometimes eating gluten free granola as a treat, but I try to stay away from it most of the time. But that doesn’t mean the cravings don’t go away. So whenever I get a craving, I make chia seed pudding to suffice. And it satisfies every time!

You guys. I wasted almost 3 hours of my life the other day. Did you guys see the Batman vs Superman movie? WHAT.THE.FUDGESTICKS?! It was awful. Not even like, ok this could improve, no. It was terrible throughout. I know nothing about movies but I know that was one of the worst I’ve seen in a looooooong time. And you know those actors got paid BANK. And they are gonna make a second one because of how it ended. The only fun part of the entire movie was looking at Wonder Woman. Now SHE is one nice looking specimen. But isn’t that dumb? I watched that movie because I like that kind of stuff and all that intrigued me the entire time was a hot woman. Do you think that actors think it was a good movie? Or do you think they regret it? I always wonder this kind of stuff and think about it in my own business perspective and choices I made. Do you think they regret making money? Let’s ponder this for a second….

Ok, I’m over it.

So after a weekend of getting my eyebrows tattooed (microblading) and not being able to go in a lake for a week, I feel empty. I’ve gotten so use to going to the lake a couple times a week to get better at surfing and this weekend was spent just wishing. BUT having new eyebrows tattooed on is totally worth the sadness of staying out of dirty water for a bit. If you missed it on Snapchat or instagram yesterday, I’m going to be talking all about my experience with that plus my experience with other treatments that I’ve been trying out AND I’ll be sharing all my makeup and skin routine products. About 3 years ago, I talked about my experience with accutane and so now I’m going to share what it’s been like after accutane and what I’ve done to keep acne at bay and keep my skin looking better and better with time.

It’s going to be so fun to share this stuff with you guys! So if you’re into that kind of stuff, awesome! Leave your questions below and I’ll answer them in my upcoming post! And if that doesn’t interest you, awesome! I will continue to have new recipes every week and have over 650 free recipes here to choose from, so no need to get upset! I’m just excited to share different interests with you guys outside of just healthy and delicious food! So if you have any questions now that you want to see answered next week, leave a comment here or on Instagram or tweet me!!

“Peanut Butter” and Jelly Overnight Chia Pudding

  • Yield: 2-4 1x
Scale

Ingredients

Instructions

  1. Blend almond milk, sunflower seed butter, maple syrup, and vanilla extract in a high speed blender until combine.
  2. Place the blended mixture into a resealable large jar (or 2 smaller jars) then add chia seeds. Seal jar and shake.
  3. Place in refrigerator for about 30 minutes then shake again. This will keep the chia seeds from separating from the liquid. Then place back in the fridge overnight or for at least 3+ hours.
  4. The next day, mix in some raspberry jam and top with fresh raspberries! Easy breezy!

Oh, Hi! I’m Juli.

I’m a food hoarder. And a really bad dancer. If you don’t know me well, you will probably not understand my humor. Therefore, I apologize ahead of time. Thanks for listening to my ramblings of my ever-changing life and trusting my kitchen mishaps. Your trust in me is appreciated.

      1. Made it this weekend (used almond butter, and frozen raspberries, and frozen blueberries), so, so good! Non-paleo friends loved it too!! I was so surprised at how much a small amount will fill you up. Thanks for the great recipe!

  1. i think it’s great you’re doing other topics! I’ve recently been lucky enough to get a BUNCH of free Biotherm products and i’ve noticed such a huge difference in my skin from it. Usually i’m super laid back when it comes to skin/hair care, but i’m kinda glad to be learning all the other products that are out there. Look forward to checking it out 🙂

  2. I have a question! I know you did that limelight procedure in the past (the one that makes [is it melanin?!] spot on the surface of your skin and fleck off like coffee grounds). I think I want to do this to help get rid of some sun spots but its sooooooo expensive! Was it worth it??

Also I remember that you did your own wedding makeup. Can you give any tips? That’s my plan, but I’m scared I will be too excited to put mascara on myself correctly.

    1. Hi Lisa I had lots of sunspots and after reading friends post about rodan and fields I decided to sign up and try their reverse regimen. I had amazing results and my skins never felt better. If you’re interested in finding out more feel free to email me tiffanyg828@gmail.com

    2. I didn’t realize you did your own makeup for your wedding. That is awesome! I would LOVE to hear more about that because I’m going to be doing my own makeup for a wedding this Septmeber. Any tips or tricks are much appreciate. Thanks!!

  3. I’m always envious of your eye makeup in snaps! Not sure if you’ve ever answered this before… but if those are your lashes A: congratulations and B: what’s your go-to mascara? And if they are not always your lashes: where do you get false lashes? I’ve only done false lashes like twice, and I loved them but felt overwhelmed by them.
looking forward to the post/posts you have planned. I’m a bit of a lazy tomboy when it comes to skincare, but as a late 30’s ginger I need to start taking care of this face. Thank you for always sharing with us readers!!
pretty confident this recipe is going in my fridge tonight. Agree with the feeling hungry after oatmeal.

    1. Stemming off this question, if those aren’t always your lashes, what type of lash glue do you use? The few times I have tried false lashes they start to pop off a few hours later, ugh!

  4. Looking forward to your beauty posts. I’m useless when it comes to makeup so will be great to see what you do. I used to have cystic acne on my face which was horrible and really embarrassing. I learnt that expensive products, professional facials, peels, etc help but the only way to solve the problem permanently was through changing my diet, healing my gut and feeding the good bacteria. So for me, a paleo diet with lots of vegetables, healthy fats and fermented foods / probiotics was a big part of that. And I also stopped drinking alcohol. A lot of it was trial and error and educating myself. I guess you have had a similar experience. How did you approach changing to a paleo diet and how long did it take you to see results from that in your skin? I think a lot of people here would benefit from knowing.

  5. I am so excited for your beauty/skincare post! I am also really interested in your Invisalign experience. I would love a post on “A Day in the Life with Invisalign”. I am getting it (my trays should be in by the end of this month) and I am nervous and excited because I am a snacker and an all-day beverage drinker (tea, coffee, lemon water) and I think I have to alter my habits/schedule. I would love to see you handle it, as a food blogger.

  6. SO looking forward to your upcoming beauty post! Not in a creepy way, I’ve noticed over the last few years how you’ve transitioned into such a natural and – for lack of a better word – well maintained beauty. It’s inspiring! and so intrigued about the micro bladed brows.

Hoping you drop names when you talk about your treatments for those of us living in Denver 🙂

and word about the oatmeal. i stay full for 20 minutes and then I’m just hungrier than I was before eating the stuff.

  7. I love the beauty stuff. I’m in my mid thirties (37 is still mid – right?!?!?!?) and am NOW getting acne after never really having a problem with it before. I was diagnosed with Hashimotos Thyroiditis, so obviously that is a trigger. Anywho…always looking a good skincare regimen using natural products. Supplements that help with acne??? Also would love to hear about other permanent makeup solutions.

I got a microderm about 6 mos ago and that was a total disaster for me. 🙁

  8. I have tried to make chia pudding a few times and EVERY time I try it, it never thickens up. Do you know what I could be doing wrong? It is so frustrating because I really have been wanting to try it and have seen so many good recipes like this one.

    1. Tessa, I have also found that when I make it, it helps if I heat up the liquid before I do the shaking. For some reason if I use almond or cashew milk straight out of the fridge, it wouldn’t thicken, but if I heat it up, or put a little hot water in the jar and shake the chia seeds in that before I add the cold ingredients, then it turns out wonderfully.

  9. I haven’t tried chia pudding (YET). Will have to give this a try! We have a bunch of cherries I can make into a jam sort of substance I bet..

Really looking forward to your eyebrow / makeup post. As a lady with light eyebrow (aka basically CLEAR), I’m always looking for eyebrow options. 😀

  10. Hello!
Very excited to hear about your beauty routines! I am also very interested in micro blading! Do you still need to fill in at all? did it hurt? How long did the procedure take? Do you have to re do the micro blading in the future?

Also, what do you treat your under eye area with for anti aging? You always look so youthful! I am 25 and already seeing some wrinkles ????
    Thanks!
    -Melanie

  11. Okay, Juli….I’ve been wondering this for a while. You mentioned having oatmeal cravings. How do you typically handle a craving? I’ll follow a clean diet for a few days that WHAM-O! a craving so intense it makes my mouth water. My exercise routine has been so great, but these stupid cravings just sideline my health goals. Any advise would be great:)

    1. that’s a sticky one. i’ll give into cravings in certain ways. like today i wanted something sweet, so i bought a piece of gluten free pumpkin bread at the coffee shop. or say i’m craving something like a dairy queen blizzard, i make my own ice cream. so i give in to some cravings in some ways. but i find the more that i give into cravings or have sugar, the more i want those things more often, so i try not to overdo it. the more i make better decisions about the cravings i have, the less crap i eat. i hope that makes sense! let me know if it doesn’t or if i can answer that any better!

  12. I would love to hear about how you care for your face when working out every day. I tend to wash my face in the morning and evening, but that means I tend work out in my makeup. Do you remove your makeup before working out, or just wash your face after? I have pretty dry skin so I try not to wash my face too often.

  13. I literally cannot wait for your beauty post! I am so bad/lazy about trying out new beauty things. I also hate spending money on something for it to not work or just be a sucky product. I’ve been needing some new ideas for skincare so this couldn’t come at a better time!! Thanks for all you share 🙂

  14. Omg we totally think Alike, Batman vs Superman was horrible! Wonder Woman was definitely the only good thing about the movie! The chia pudding looks delish, going to have to try it!

  15. I want to know about how you do your lashes, they always look fab! I’m seriously struggling to find a mascara I like and paying for extensions isn’t an option at the moment. Thanks!

  16. I CANNOT wait to read about your microblading experience! Was it costy? I want to do it sooo bad. My eyebrows take the longest in the morning and my face looks goofy without them done.

  17. Question on the eyebrows: How much did it cost and how long does it last? I recently read another blogger’s article that was in NYC. She said it was $550 and only lasts 1 year.

  18. Super excited about your upcoming beauty posts! Would also love to know who you went to for the treatments and how much the procedures cost for those of us who live near Denver. Have you tried any lash growth products, lash extensions or do you just used fake lashes and mascara? What are your favorite makeup products? Do you get any Botox or fillers? Have you tried dermaplaning or micro-needling? What about lasers or chemical peels? Your skin looks amazing!

  19. This recipe is so good! And, so easy! I had to restrain myself from eating the whole batch at once!! The taste reminds me of the delicious tapioca pudding my grandma used to make, but this recipe takes a fraction of the time and I don’t even have to turn on the stove. Thanks!

  20. This recipe was so delicious! All your recipes are always so amazing! The recipes from your cookbook Juli Bauer and your site are always delicious! Thank you for sharing!

  21. When you say almond milk, when you don’t feel like making it, what brand do you rely on when buying it? I typically always make mine from your cookbook but my kids seriously drink it up so fast that I barely get any. I get a little overwhelmed at the grocery store when looking at all the different brands out there now.

  22. Oatmeal doesn’t keep me full unless I mix in egg whites or protein powder to thicken them up and add protein! I didn’t really get the same satiation effect with chia pudding either, but that may be because I didn’t use enough chia seeds and liquid!

  23. LOVE this chia pudding! Its sweet, without being overly sweet. I used almond butter instead of sunflower butter and it was delish!! I make this 1-2 week to balance out the eggs. I made the homemade jam too – amazing! Thank you!! Please make MORE chia pudding recipes!!!!

  24. Juli,
Thank you so much for posting this recipe, and thank you to the gods of the internet for helping me come across it. It is incredibly good. I was a little scared to try chia pudding, worried I would be like a kid and get all squirmy about the weird texture. I was brave though, and tried it. It was damn delicious. I made it again as soon as it was gone, except this time I made a double batch. I’m super excited about options other than egg for breakfast, and this is soooooooo stinkin easy! I have the pumpkin chia pudding setting up in the fridge for tomorrow. I’ve got the other ones bookmarked to try later. Can you please start working on more chia pudding recipes??? I’m going to need more very soon!

  25. Just made this pudding (and jam) and I love it! It really tastes like peanut butter and jelly, so good, thank you for sharing the recipe!

  26. This is soo delicious!! Thank you for the recipe!!
I used the Trader Joe’s canned coconut milk and almond butter cause I had it on hand and it turned out great!!!

Keep on rockin’ out stellar recipes!!

  27. I LOVE THIS CHIA PUDDING!! Tried this recipe last week and doubled the batch for 8 servings to meal prep for 2. Such a pleasant change from our tried and true egg casserole. Made it again this week and looking forward to try older chia puddings, too. Thanks for another delicious and easy recipe!

    1. i wish i could help you with that heather, but i fought acne for years without medication and nothing worked. so i finally turned to accutane and it completely changed my life for the better, so i’m pro medication over here.

  28. Do you know how long chia seed pudding keeps in the fridge? Is it something I could make a big batch of and eat for breakfast all week? Does it need eaten in 1-2 days?

    Looks delish!
