“Peanut Butter” and Jelly Overnight Chia Pudding
I luuuuuuurvvvvvv oatmeal. I love it so much. BUT I’m not a fan of the fact that I’m hungry almost immediately after eating it. When people say it sticks to your bones and keeps you full for hours, they mean minutes. When I was eating oats on a regular basis, I was eating more often than I needed to because I just felt hungry all the time. I still sometimes eating gluten free granola as a treat, but I try to stay away from it most of the time. But that doesn’t mean the cravings don’t go away. So whenever I get a craving, I make chia seed pudding to suffice. And it satisfies every time!
You guys. I wasted almost 3 hours of my life the other day. Did you guys see the Batman vs Superman movie? WHAT.THE.FUDGESTICKS?! It was awful. Not even like, ok this could improve, no. It was terrible throughout. I know nothing about movies but I know that was one of the worst I’ve seen in a looooooong time. And you know those actors got paid BANK. And they are gonna make a second one because of how it ended. The only fun part of the entire movie was looking at Wonder Woman. Now SHE is one nice looking specimen. But isn’t that dumb? I watched that movie because I like that kind of stuff and all that intrigued me the entire time was a hot woman. Do you think that actors think it was a good movie? Or do you think they regret it? I always wonder this kind of stuff and think about it in my own business perspective and choices I made. Do you think they regret making money? Let’s ponder this for a second….
Ok, I’m over it.
So after a weekend of getting my eyebrows tattooed (microblading) and not being able to go in a lake for a week, I feel empty. I’ve gotten so use to going to the lake a couple times a week to get better at surfing and this weekend was spent just wishing. BUT having new eyebrows tattooed on is totally worth the sadness of staying out of dirty water for a bit. If you missed it on Snapchat or instagram yesterday, I’m going to be talking all about my experience with that plus my experience with other treatments that I’ve been trying out AND I’ll be sharing all my makeup and skin routine products. About 3 years ago, I talked about my experience with accutane and so now I’m going to share what it’s been like after accutane and what I’ve done to keep acne at bay and keep my skin looking better and better with time.

“Peanut Butter” and Jelly Overnight Chia Pudding
- Yield: 2-4 1x
Ingredients
- 1 cup almond milk
- 1/3 cup sunflower seed butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup chia seeds
- 1/2 cup raspberry jam (I used this recipe but only used raspberries or you can use store bought)
- 1 cup raspberries
Instructions
- Blend almond milk, sunflower seed butter, maple syrup, and vanilla extract in a high speed blender until combine.
- Place the blended mixture into a resealable large jar (or 2 smaller jars) then add chia seeds. Seal jar and shake.
- Place in refrigerator for about 30 minutes then shake again. This will keep the chia seeds from separating from the liquid. Then place back in the fridge overnight or for at least 3+ hours.
- The next day, mix in some raspberry jam and top with fresh raspberries! Easy breezy!

I have a question! I know you did that limelight procedure in the past (the one that makes [is it melanin?!] spot on the surface of your skin and fleck off like coffee grounds). I think I want to do this to help get rid of some sun spots but its sooooooo expensive! Was it worth it??

Stemming off this question, if those aren’t always your lashes, what type of lash glue do you use? The few times I have tried false lashes they start to pop off a few hours later, ugh!
Looking forward to your beauty posts. I’m useless when it comes to makeup so will be great to see what you do. I used to have cystic acne on my face which was horrible and really embarrassing. I learnt that expensive products, professional facials, peels, etc help but the only way to solve the problem permanently was through changing my diet, healing my gut and feeding the good bacteria. So for me, a paleo diet with lots of vegetables, healthy fats and fermented foods / probiotics was a big part of that. And I also stopped drinking alcohol. A lot of it was trial and error and educating myself. I guess you have had a similar experience. How did you approach changing to a paleo diet and how long did it take you to see results from that in your skin? I think a lot of people here would benefit from knowing.

and word about the oatmeal. i stay full for 20 minutes and then I’m just hungrier than I was before eating the stuff.
I love the beauty stuff. I’m in my mid thirties (37 is still mid – right?!?!?!?) and am NOW getting acne after never really having a problem with it before. I was diagnosed with Hashimotos Thyroiditis, so obviously that is a trigger. Anywho…always looking a good skincare regimen using natural products. Supplements that help with acne??? Also would love to hear about other permanent makeup solutions.
I got a microderm about 6 mos ago and that was a total disaster for me. 🙁
I have tried to make chia pudding a few times and EVERY time I try it, it never thickens up. Do you know what I could be doing wrong? It is so frustrating because I really have been wanting to try it and have seen so many good recipes like this one.
like the chia seeds don’t expand? if it doesn’t thicken up, it probably means you’re using too much liquid
Tessa, I have also found that when I make it, it helps if I heat up the liquid before I do the shaking. For some reason if I use almond or cashew milk straight out of the fridge, it wouldn’t thicken, but if I heat it up, or put a little hot water in the jar and shake the chia seeds in that before I add the cold ingredients, then it turns out wonderfully.

Okay, Juli….I’ve been wondering this for a while. You mentioned having oatmeal cravings. How do you typically handle a craving? I’ll follow a clean diet for a few days that WHAM-O! a craving so intense it makes my mouth water. My exercise routine has been so great, but these stupid cravings just sideline my health goals. Any advise would be great:)
that’s a sticky one. i’ll give into cravings in certain ways. like today i wanted something sweet, so i bought a piece of gluten free pumpkin bread at the coffee shop. or say i’m craving something like a dairy queen blizzard, i make my own ice cream. so i give in to some cravings in some ways. but i find the more that i give into cravings or have sugar, the more i want those things more often, so i try not to overdo it. the more i make better decisions about the cravings i have, the less crap i eat. i hope that makes sense! let me know if it doesn’t or if i can answer that any better!

I would love to hear about how you care for your face when working out every day. I tend to wash my face in the morning and evening, but that means I tend work out in my makeup. Do you remove your makeup before working out, or just wash your face after? I have pretty dry skin so I try not to wash my face too often.

When you say almond milk, when you don’t feel like making it, what brand do you rely on when buying it? I typically always make mine from your cookbook but my kids seriously drink it up so fast that I barely get any. I get a little overwhelmed at the grocery store when looking at all the different brands out there now.
i just find whatever brand is the cleanest at whole foods or sprouts! just look the ingredients to decide! this is a good one i find out whole foods: http://malkorganics.com/flavors/unsweet/
Oatmeal doesn’t keep me full unless I mix in egg whites or protein powder to thicken them up and add protein! I didn’t really get the same satiation effect with chia pudding either, but that may be because I didn’t use enough chia seeds and liquid!
LOVE this chia pudding! Its sweet, without being overly sweet. I used almond butter instead of sunflower butter and it was delish!! I make this 1-2 week to balance out the eggs. I made the homemade jam too – amazing! Thank you!! Please make MORE chia pudding recipes!!!!

Thank you so much for posting this recipe, and thank you to the gods of the internet for helping me come across it. It is incredibly good. I was a little scared to try chia pudding, worried I would be like a kid and get all squirmy about the weird texture. I was brave though, and tried it. It was damn delicious. I made it again as soon as it was gone, except this time I made a double batch. I’m super excited about options other than egg for breakfast, and this is soooooooo stinkin easy! i wish i could help you with that heather, but i fought acne for years without medication and nothing worked. so i finally turned to accutane and it completely changed my life for the better, so i’m pro medication over here.
Do you know how long chia seed pudding keeps in the fridge? Is it something I could make a big batch of and eat for breakfast all week? Does it need eaten in 1-2 days?
