It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.

Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.

Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.

I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.

What’s up with people wearing track suits? So weird.

Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.

Simple Blueberry Muffins

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
  3. Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
  4. Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
  5. Eat them and be happy. And merry.

    Yes! My husband grew up above the Arctic Circle, so he always had blueberry muffins (berries from the tundra!) growing up. Thanks for the recipe- I’m about to blow his mind with it when he comes home from work next week!

    1. I was disturbed about the child birth sentence and almost skipped the whole paragraph. Instead I grew a pair (figuratively), and read on to discover your best qualities. Hair dying, yeast face mask wearing, youtube watching, paleo chef girl-r-dee, crossfitter. I can’t wait to see who your soulmate is.

    2. Muscle ups were created for 5’0 gymnasts weighing in at a whopping 110#. Not athletically inclined average to above average women. It’s just not meant for us 5’6+ girls. That’s like saying you hate chocolate because it doesn’t fit in your dietary description. And that’s not why you hate it.

    3. Oh, and the muffins…send them east. Better yet bring them to me.

    I almost cry A LOT during my WODS, well, lately, with my raging hormones it’s been what I’d consider ‘a lot’…my first time experiencing that was my 2nd run at Helen, fuck. I fucking HATE thrusters, so much.

    Did these rise like that in the oven or did you mound them up? I find that almond flour stuff never rises, just hardens into whatever shape you mold it…

      Yeah I was super surprised when they puffed up how they did! Those pictures are of just 1 muffin, no stacking involved.

    Juli, I found your blog over the weekend, thanks to a Pinterest post.

    Let me just start by saying, I think you are quite hilarious! I love your sense of humor! I just recently started the Paleo lifestyle, last week, yep REAL recent! So far, so good, lets just say that I haven’t killed anybody yet, which I though was perhaps a possibility because I couldn’t have my oats in the morning. Plus, I really wanted to shovel all the girl scout cookies I just recently bought down my gullet, but that’s a whole other story! I resisted the temptation. Those darn girl scouts! Just sayin……

    I’m new to Crossfit as well! I have a whole lot of new stuff going on my life I guess you would say! I tried it once a few ago, sipped the kool-aid and haven’t looked back! I’m LOVING it! I previously worked out 5-6 days a week, mainly focusing on weight training and small doses of HIIT cardio, lord I hate cardio! I was getting burnt out and needed a change. Crossfit has refueled my fire! Yee haw!

    Anyway, enough about me! Just wanted to drop you a line and say thanks for this awesome blog, always making me laugh and for these awesome recipes! Now that I know I can make blueberry muffins and still eat Paleo, my life is pretty much complete!

    PS: Could I use Almond Flour in place of the Almond Meal in this recipe? I have a big honkin bag in my fridge and would like to use it before it looses it’s freshness. I made apple protein muffins with it previously, let’s just say they were so bad my dog wouldn’t eat them. Yep, that bad! SOOOOO incredibly dry, so needless to say I’ve been skeered to use the Almond Flour again. lol Let me know what you think.

      And yes you can use almond meal or almond flour in the recipe, they are pretty close to each other in the almond family.

    Okay, I love you! Officially. I was totally thinking of berry muffins this morning. Didn’t have a recipe. Did a berry crumble instead. It rocked..but not a muffin.

    Psyched that you posted this today! Do you think unsweetened applesauce could be substituted for the honey?

      Yeah berry crumble definitely still sounds amazing! I’m not sure if the applesauce would make it too heavy…but its worth a try!
