It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

20 muscle ups?! You rock that’s totally impressive. I wasn’t feeling like going to crossfit today but you just got me motivated to get out the door!
Glad I could motivate you Katie!! Kill it!
those are super fluffy, and blueberries are cheap right now. i dropped a quart of rasperries all over the check out line on Saturday, and i thought to myself ‘jeez i am glad those weren’t the blueberries, because they would be out of control rolling.’
sweet potato brownies=delish. they were the first choco i had since Jan15. not that i was counting. for $3 you can do it. then use that $3 to buy chocolate.
also, during your next youtube sesh you have to watch ‘my drunk kitchen’. you will thank me.
I’ll check it out Malsut! And glad you liked the recipes :):)
Another win…I thought you said you couldn’t bake…pfft
…while that saturday night of yours does sound eventful, you should spend next saturday night watching ghost rider…he’s badass like the honey badger and since you are also honey badger badass, you should see it…who doesn’t love super heroes who suck souls…just sayin 🙂
Lol that sounds like the weirdest show on earth, but i’ll try it just for you Rob
I’m a comic book nerd Juli, its Ghostrider…not a chick flick, but killer action scenes and good for some laughs, not exactly a plot driven emotional film. I will be expecting you to prove you are awesome when the next Dark Night comes out 🙂
Oh Rob, ohhh Rob
Awesome recipe! My son (4 years old) is totally into eating Paleo these days after reading Sarah Fragoso’s new “Paleo Pals” cookbook. We made your blueberry muffins this morning and he ate THREE.
That’s freaking awesome Brianne!!
I just got my copy of Paleo Pals in the mail from Amazon today. I hope it’s enough to convince my 4year old to make the switch! Keep your fingers crossed for me! Glad it worked for yours! 🙂
I’ve never seen that book, hope it works!!
You had me at muffins!! Just made these and they are awesome!!
YAY! Glad you liked them Jenni!
just found your website the other day, and wanted to try this recipe since it seemed pretty foolproof (i’m not that great in the kitchen domain). substituted coconut flour instead of almond flour since the whole foods near me ran out of almond flour/meal. still taste great! the tang of the blueberry cuts through the sweetness of the honey. great for a quick, on-the-go breakfast 🙂
Glad they still turned out well Ann!
As soon as I finish my Whole30 (9 more days!) I am so making these, they look amazing and I’m really surprised you got them to rise like that, everything I’ve cooked with almond flour has been flat!
Well done on the muscle-ups, I struggle with pull-ups! 🙂
These definitey aren’t flat Emma! Hope you like them once you can try them!
Oh. Em. Gee. This are SO YUM. Yep, I made them at 10pm, and they are really great. Thanks! Keep it up!
Haha that’s freaking awesome Ashley! Muffins at night are way better than the morning
Great recipe for simple blueberry muffins. I bet this would make a great breakfast treat on the weekends.
Fo sho Nick, fo sho
I can’t wait to make these.
Every. Single. Filthy Fifty I do, I throw my effing jump rope. Or when my shoe laces come untied, I throw a fit…legit tantrum. I’m mature in the gym too.
Good luck in the Open!
Lol I HATE that feeling. soooooo frustrating
