It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

Making these right now as part of the “Alyssa attempts to convince her boyfriend to go paleo with her.” Very excited.
Love, Love, Love your recipes! I make them as after WOD snacks for our box and everyone raves about them…so thanks : )
I’m sure you’re aware, but I’ve found other websites using your recipes/photos and claiming as their own….do you all share between one another?
If they don’t link back to me, they’re just assholes. Or have no common sense. Which is most likely what’s happening
OMG!!! It tasted damn good!!!! Way to go!!!!!
Guess what? I brought two muffins for my friends. they loved it!! Thanks for sharing your recipe. I will make more muffins for holiday.
These were amazing! Thank you!!!!
You are frickin hilarious. The muffins were pretty good too! I also hate muscle ups, gross, not that I can even do one, I just hang there feeling ridiculous.
I can’t currently have honey. What would be another substitute for that? The only sweetener I can have is Stevia. Can I just sub that? What amount would I use?
I haven’t worked with Stevia, so I’m not sure how much you would use, but i’m sure it would work as well!
Dear Juli
How many of them would you have for a “normal” breakfast?
I’d say 2 when you eat it with some protein!
they are just GREAT!
even my BF had them for breakfast and he is quite a challenge when it comes to breakfast
Is almond butter the same thing as almond spread?
I’m not sure where you’ve seen almond spread but you would have to look at the ingredients! almonds should be the only ingredient
I’m doing a whole life challenge through my cross fit gym, which means I have to eat paleo for two months! I’ve made a few of your other desserts and love them. The problem I have with this one is the honey in it.. Unfortunately the challenge is paleo with a twist-no honey allowed! I can use stevia and have discovered coconut sugar.. Any recommendations on the amount of stevia I would need???? HELP.
i actually have no idea, i haven’t ever used stevia in recipes
