It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.

Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.

Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.

I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.

What’s up with people wearing track suits? So weird.

Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.

Simple Blueberry Muffins

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
  3. Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
  4. Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
  5. Eat them and be happy. And merry.

    I’ve made these a few times and love them. Decided to adapt the recipe to hit a craving I had for carrot muffins. I nixed the almond butter, took the honey down to 1/4 cup and added a 1/4 cup each of shredded carrots, walnuts and raisins. Delicious!!

    I made them in silicon muffins wrappers. They were easy to get out, but a little oily so I may take the coconut oil down to 1/4 c too.

    I made these twice and although they are soo yummy they fall apart and are super moist. Any suggestions?

    I make these muffins, a lot! I am working my way into the paleo lifestyle. Instead of the blueberries, though, I put chocolate chips, and it works perfectly. My husband and 5 year old daughter will both eat them, which is really something. Also, I sub 1/4 cup of coconut flour for the almond flour.

    Made these last night and unfortunately I was pretty disappointed. I had really high hopes because of all the great reviews, but I’m not sure what went wrong. I followed the recipe exactly, but had to leave out the honey because I’m doing the Whole30. They were extremely dry and heavy. Would honey really make that much of a difference? I made the Sweet Potato Chai muffins w/o honey and they turned out great!!
    Also, what kind of almond butter is everyone using? I used the fresh almond butter from Whole Foods which is really thick…could that be the issue?

      the honey may help keep them moist, but i’m not completely sure. I use the fresh almond butter as well, so I don’t think that’s the issue. I’m sorry they didn’t turn out well lauren!

    15-20 minutes is WAAAAYYYYYYY off. I’ve had them in there almost 35 minutes and they’re still super wet in the middle. This is my first foray into paleo baking and I might have something wrong, but as written, this recipe is a fail.

    So I have made these muffins about 5 times. Each time they have come out a little different but taste so yummy!! Every instance though, my muffins fall in the center! Mine are very moist in the center (not sure if they should be quite so moist …still so good), but I devour them (really I mean like 4 a day :/ )
    How can I keep the muffins from falling in the center?? They rise so great in the oven, but never stay.
