It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

These are amazing! They are by far the best paleo muffins I have ever had! I made a few changes as I have cut out coconut from my diet (for now) 🙁 I subbed organic clarified butter for the oil and flaxseed for the coconut flakes. They turned out so moist and yummy, just like grain “poisoned” muffins! Thanks sooo much for the recipe!! Love your blog 🙂
I usually don’t write reviews, but WOW these muffins are delicious!!!! Moist, flavorful, and it taste like it should be something guilty.
Forgive me if this question may have already been answered but you list “almond butter” do you mean the oil type butter, not the peanut butter type? A little confused.. haha
Love your blog btw too! So funny, real, down to earth, and just normal! haha 🙂
Have a great day! Hoping to make these tomorrow for a social event on Sunday!
no the peanut butter type. you can usually find almond butter by the peanut butter or freshly grind it yourself
Thanks for the clarification on the almond butter! 🙂 Can’t wait to make these little jewels tomorrow afternoon! Yum!
I’m another homebirther!
OK, when you really think about it, I guess birth is gross. But still, it is TOTALLY EMPOWERING if you don’t let an American OB fuck it all up – like the tend to. (American maternity care is HORRIBLE! They make it all worse.)
It brought me closer to my husband & was just amazing both times I’ve done it (With midwives in attendance – not doctors.) 😀
Do you think I could sub almond flour for coconut flour?
yes but no clue measurement wise
These are amazing! Since I am unable to keep from tinkering with a recipe, I did sunbutter instead of almond, 1/2 banana instead of honey, and added 1/2 cup dark chocolate chips! So easy, so good. I will be making these again!
Btw Juli you are my hero! When I want to bake or am looking for a dinner recipe I always come to your site! Thank you for all you do!
This post is hilarious! I’m about to attempt 13.5, pray for me! Damn you Fran
I love these. I love these so hard. I accidentally forgot to add the coconut oil (forgot it in the microwave) and they were still fantastic. Crumbly, but fantastic.
One more thing. You need to tell modcloth to give a code for your readers so when we buy, you get the love. I just discovered them because of you and they should be thanking you for spreading the word.
Can you use any coconut oil?
