It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.

Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.

Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.

I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.

What’s up with people wearing track suits? So weird.

Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
  3. Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
  4. Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
  5. Eat them and be happy. And merry.

Another great recipe from Juli, as evidenced by the fact that I had to scroll over a many day period to reach the bottom of the comments to leave another comment other people will probably never read. I used blackberries and cut the honey in half since my coconut was, unfortunately, the sweetened kind (thanks shitty grocery store). Will definitely be making these over and over! Thank you!!!

These are the best grain free muffins I’ve ever made! My 3yr old son absolutely loves them. I use grated apple instead of the blueberries and sometimes I use cashew butter in place of the almond butter. Thank you for a perfect healthy muffin recipe!

I’m new to Paleo baking, and tried this muffin recipe tonight. (Followed it exactly) The flavor is awesome, but I couldn’t get some of the batter to set. After 35-38 minutes in the oven, most of them are still about 40% wet inside. Any idea what I could have done wrong to mess them up so bad?

Hi Juli! I love your blog. I wish Icould posta picture of my epic fail of blueberry muffins. They blew up. Is there any subs for altitude? Bummedindenver.

    1. juli says:

I live at altitude so I’m not sure how I would change them.

I did it! I have been through over six recipes in search of the perfect chocolate muffin and your base was what I needed. I did everything the same; but, reduce the almond flour by about 1/4 cup and subbed equal parts flax seed and arrowroot powder. Why? Because I am hell bent on incorporating those two ingredients before the go bad in my kitchen.

    My son ate three.

I am a new Paleo convert of about 3 weeks and I’m loving it. Made these muffins this morning and they are AWESOME! Thanks so much for the recipe. It’s a keeper for sure!
PS I didn’t have any coconut flakes so I just omitted them. Still awesome!

These are nothing short of amazing. I have made several of your recipes and they have all been delicious. I know you aren’t completely satisfied with your cookbook but I’m planning to order a copy for myself and one for my sis in Korea…not for the quality of the photos or paper but because I trust that any recipe I make out of there is going to be amazing. I’ve bought lots of cookbooks for the quality of the photos where the recipes were crap. I prefer the other way around. 🙂

Great! I didn’t have coc oil but they still turned out great. 16 month old ate two!

  9. Karyna says:

I made these last night and accidentally left out the almond flour but they still tasted amazing!
