It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.
Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.
Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.
I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.
What’s up with people wearing track suits? So weird.
Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.
Simple Blueberry Muffins
- Yield: 8-10 1x
Ingredients
- 1 cup almond butter
- 1 cup almond meal/almond flour
- 3 eggs, whisked
- 1/2 cup raw honey
- 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut oil, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- pinch of cinnamon
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees.
- Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
- Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
- Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
- Eat them and be happy. And merry.

Ok so i know this is an older post but i need help! We just started Paleo 2 weeks ago and i have never used almond flour/meal. I bought the Bob’s red mill and opened the bag and got a whif of a very funky smell. Is that normal for almond flour? or is is bad? i have tried google but everything but that comes up. Help please!!!!!
No it shouldn’t smell funny. It may smell different to you since you haven’t used it yet. Just check the expiration on it
can i use peanut butter instead of almond butter?
Sure! Just not paleo
These were delicious! I threw a banana in there, and also used coconut sugar/nectar instead of the honey (was out of honey). They melt in your mouth, and had just the right amount of sweetness. This will be my go-to muffin recipe from now on!
I made these this morning and it was soooo easy! I ate three one right after another and I had to stop so I wouldn’t become a blueberry ha ha ha. Now off to bake another treat. Thanks Juli!
I made your Blueberry Muffins and I had a problem of them sinking in the middle. They tasted good but didn’t look at all like your picture. I am new at baking Gluten free but am an avid baker so I am confused at what might have happened. Do you have any idea what I might have done wrong for them to react that way? They also wouldn’t come out of my silicone cups. They seemed really wet on the bottom. All the blueberries sunk to the bottom of each muffin. I used all the ingredients exactly as in your recipe. So even though they tasted really good I would like to be able to make them for guests too. I will be trying more of your recipes for sure. I hope you can give me some pointers on my problem with the result I got with these.
I just made these muffins and while they tasted absolutely divine, they sunk in the middle and just look terrible. I’m not sure what I did wrong, hmm. Don’t worry, they’re definitely still edible 😉
Juli, I recently discovered your blog and I’ve tried a few recipe so far. These muffins were unreal good! You can’t tell they’re paleo at all from texture or taste ! Yay;) I cut out on the honey and added chocolate chips cuz I’m a chocolate junkie.
Thanks again for all your great recipe and your awesome and funny blog;) keep it up
I’ve been eating paleo for 2 months and am now ready to venture into baking. One big question I have is about the honey. I thought all sweeteners were a no-no on the paleo diet. That is one of the reasons I started following it because I think that I am insulin resistant. Anyway, if I leave out the honey will it still hold together? Should I substitute it with another liquid?
Yes it definitely will still hold together without the honey!
Holy shizzz…this batter almost didn’t make it into the muffin tins. I stood in my kitchen, eating it with a spoon out of the mixing bowl, until I forgot they needed to be baked. These are flat out delicious!!!!
I just made these using blackberries, since that’s what I had. I cut the recipe in half because I didn’t want to waste a cup of organic almond butter on a recipe I hadn’t tried before. These muffins are awesome! I wish I hadn’t cut the recipe, although I did get 7 good size muffins! The taste and the texture are excellent! Thanks so much for posting!
