It’s official. Chocolate and I have broken off our long term relationship. We’ve had a bumpy one. A really messy one you could say. Love-Hate. We break up then get back together in a very passionate way. Make up sex style. I’m disappointed in myself for just saying that. Not really. But for reals, it’s over this time. For at least 5 weeks. Jason bet me $3 that I couldn’t resist chocolate for 5 weeks, until after the CrossFit Open, so I must prove him wrong. He will be wrong.

Wanna know what I did this Saturday night? It was pretty epic so get ready. I ate dinner with my parents and uncle, we cooked fajitas, then talked about child birth because my uncle just had a kid, I mostly talked about how gross it is, then I went home. Don’t worry, this is where sh*t gets real. I dyed my hair (because my natural color is blonde so I have to dye it every 2 weeks) then put on a yeast face mask and watched youtube videos. Yep. I sat on my couch with my glossy hair slicked back, a face mask hardening my skin that smelled like rising bread, in a huge baggy sweatshirt and shorts with a hole in the butt cheek. What am I doing with my life.

Oh wait, I also made a dessert that failed. Wish you could understand the smells that filled my house that fine Saturday night. I’m pretty sure I was high. High school all over again. Kidding. Slightly.

I also cried during a muscle up wod. I had 20 to do and finished 19, failed 6x on the 20th one, tore my hands, then cried in disappointment. I also kicked the wall and said ‘f*ck you’ loudly. Real mature Juli, real mature. I hate you muscle ups. I.HATE.YOU.

What’s up with people wearing track suits? So weird.

Ryan Gosling is adorable. I wish he would take me on a date that included him falling in love with me. And smiling at me. A lot. It’s not that much to ask people.

Simple Blueberry Muffins

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
  3. Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
  4. Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
  5. Eat them and be happy. And merry.

    So YUMMY. PaleOMG is so perfect. Had to modify slightly due to what I had on hand. Used regular organic hpney and sweetened coconut. But still over 80% paleo (which is my goal 80% 100% of the time). Super good. Tomorrow I hope to try the French Toast….

    BTW, childbirth might be a bit messy but it’s an amazing empowering experience and a great way to test your strength and tap into that “paleolithic” instinct rather that relying on what the over processed modern world claims to be right and healthy.

    my love for you grows leaps and bounds with every post! these muffins are DIVINE!! (though mine sunk in the middle too, but who cares how they look when they’re this delicious and don’t stick around the house long?!)

    I’ve been Paleo for a year, but just (FINALLY) made the leap with my 4 year old 3 weeks ago. I’ve had the hardest time gettin her to eat enough FAT. she plowed her way through these muffins before I could blink….think I’ll keep these on hands AT. ALL. TIMES. for awhile!

    Made these last night and oh my heaven! They are complete paleo mouthgasam worthy 🙂 Didn’t have blueberries so I used strawberries instead and they were delish! Can’t wait to make more and gift them to my paleo family friends

    I made these this morning….holy crap they are delicious! I divided the mixture in half (pre-blueberry) added blueberry to one half and Enjoy LIfe chocolate chips to the other. Both types turned out A-MAZING. Next time I might mash some bananas and add those in as well.

    Hi there! I made these this afternoon and, like everyone else has been saying, they are delicious. Paleo baking is a little different from all the other baking I’ve ever done but I’m learning – like with these: next time, I won’t fill them so full as they overflowed big time. That baking soda is what does it. I also added a few blueberries and a little more coconut on the tops before they went into the oven. However, even my husband loves them so these will become a regular in our house! Oh – and for the commenter who can’t find almond flour/meal, if she has a Trader Joe’s somewhere near her, they carry it and it’s generally cheaper than any other place you can find it. On a personal note, I’ve now been doing crossfit for about a month and still wonder some days what I’ve gotten myself in to 🙂 Thanks for the awesome recipe!

    Just discovered your blog a few weeks ago and am hooked!! I know that grains don’t work for me, I keep trying to make them work but in the process put on lots of weight. So am back to trying to figure out what to eat, and wow you have shown me that I can eat.
