One of the #1 questions I get asked on a daily basis is what I snack on. Cashew cookie is my all-time favorite! How can you go wrong with only 2 ingredients – cashews & dates?
Lately I’ve been into all things lemon flavored so obviously I cannot get enough of the lemon bar! Dates, cashews, almonds, lemon juice and lemon oil… simply delicious.
I’m a vegetarian living in Sierra Leone, and Larabars are essential! I often have a hard time getting access to fruits and nuts when I travel in rural areas, so I always make sure to have a Larabar on hand wherever I go. Right now, my favorite is banana bread – it makes me nostalgic for the banana bread my mom used to bake us growing up. Plus, I feel great eating them knowing that there are only 3 ingredients (bananas, dates, and almonds)!
I only recently discovered Lara bars while doing Whole30 and my favorite is the simple cashew cookie.. which is just cashews and dates.. yum
I love Larabars but I can’t eat chocolate, peanut butter, banana, or dairy, so I REALLY love the fruits + greens bars! The Mango Spinach Cashew bar literally has just that, plus unsweetened apples and apricots. Yummmm
My favorite is the Key Lime Pie, made with just dates, cashews, almonds, unsweetened coconut, lime juice concentrate and dried lime juice concentrate!
Okay, this is probably one of the toughest questions of my week! I LOVE Lara bars and picking a favorite,……ugh. While I’m pretty sure I’ve tried just about every single flavor, I always find myself drawn back to the Chocolate Chip Cookie Dough. Maybe it’s the name since I miss the days of good old fashioned cookie dough without the worries of what foods are in it that I can’t eat. 🙁 But, none the less, the flavor is perfect and consistent every time. Perhaps it’s the cashews, or the dates, or maybe just the yummy and safe chocolate. Whatever it is, the balance is perfect and keeps me coming back every time! Yay for Chocolate Chip Cookie Dough! 🙂

I am so loving the coconut cream pie! Although there is something for every mood, this is my decadent pleasure! Made only from 5 ingredients, in salivating thinking about this amazing mix of dates, unsweetened coconut, almonds, cashews and extra virgin coconut oil. Yum!!!!!
