Sneak Peek Recipe from Juli Bauer’s Paleo Cookbook: Frozen Mango Margaritas
- Yield: 2 1x
Ingredients
For the rims of the glasses:
- 2 tablespoons lime juice (about 1 lime)
- coarse sea salt
For the margaritas:
- 1 cup frozen diced mango
- 1⁄4 cup lime juice (about 2 limes)
- 4 ounces agave tequila
- 2 ounces Grand Marnier
- lime wedges, for garnish
Instructions
- Place the 2 tablespoons of lime juice in one shallow bowl or plate and the salt in another. Press the rim of a glass in the lime juice, then in the salt to coat. Repeat with the second glass.
- In a blender, blend together the mango, 1⁄4 cup lime juice, tequila, and Grand Marnier until smooth, about 30 seconds.
- Divide the frozen drink between the 2 glasses and serve garnished with lime wedges.

Made these for company during a recent heat wave and they were a huge hit! I did add some ice to the blender to help keep them extra cold…and that seemed to work very well. Delish!
Saw you today on the Home & Family show. Great job & may I say you are a beatiful person! My health is forcing me to look at a healthier eating style. Pretty sure it has been badly damaged by gluten. I am most likely gluten intolerant. Anyway, friends & family are trying to help me & support me in getting healthier & making better choices. They have shared the Paleo style with me & let me just say, it is a very hard process for me. I am trying…I love pasta & bread sooooo. But then a silver lining came to me when I found this yummy recipe cause my other love…MARGARITAS!! So thank you, I can now take this Paleo thing seriously!????

I should have known 6 ounces of liquor was too much for two drinks, but Ive had so much success with your other recipes that I didn’t even think about it. Cutting the liquor in half would make them much more palatable.
