I love these cookies. No seriously. I absolutely love them. I got them out of my house right away. I get that question a lot if I eat all the desserts I make. The answer is, kind of. If I have nut free desserts, I freeze a lot of them for the future and give some of them away. If the dessert is made with nuts, I try them then I try to give most away because I’ll keep wanting to eat them and my stomach doesn’t do well with nuts. Don’t make a dirty joke out of that. That’s gross.

Speaking of my book…It’s official. I have my second cookbook, The Paleo Kitchen, in my hands!! I couldn’t be more excited. They overnighted the book after it was printed so after working the morning shift at my gym, I came home to the book on my front door step. Even though I was so excited to see the book, I was even more excited to see my dog. Yep, Jackson won over the book. So after kissing him for at least 5 minutes and using my really annoying voice to show how excited I was to see him, I decided to move to the book. I couldn’t be more happy with how it came out. The photography looks gorgeous, the designer drawn elements pull the book together, and the colors fit perfectly. The book is wonderful. I absolutely cannot wait to share it with you come June 10th! Enough about the book. Let’s talk about more important things. Like Jackson. Jackson had his first play date with another Frenchie this past weekend. A girl frenchie. A girl frenchie only two weeks older than him. He pretty much fell in love right as they sniffed each other’s butts. I mean, met eyes. They played for 2 hours straight and this girl, even though probably weighing 6 pounds less than him, completely put him in his place. She would chase him, she would knock him down, and she would kiss him non stop. All he wanted to do was hump. TOTAL married couple right there. They seriously loved each other so much that it was hard to separate them. I could tell all day that Jackson was depressed after leaving her. Hopefully they get to play soon. And hopefully Jackson stops humping her face. That’s unlikely, she’s really cute.
Did you ever notice that dogs look just as ugly as humans when they yawn? I’m serious. It’s just a random fact I have for today.
OMG. I could not be more excited with this fact. Did you know that Avatar is making a second movie?? YESSSSSSSSSS. Avatar is probably my favorite movie of all time. Don’t judge me. I totally like sci-fi hot alient dudes. And ladies. I’m just into them, ok? Well, I found that a second movie is in the making. I think it’s more in the talking, they haven’t actually started filming, but I’m still over the moon with excitement. Probably as excited as I am about my book. How sad is that? I just really wanted to be one of the Avatar people after that movie. Earth was so lame.
But these cookies aren’t!!!
Soft & Chewy Double Chocolate Cookies
- Yield: 13-15 1x
Ingredients
- 1 cup thick almond butter (I used Barney Butter Smooth Almond Butter because it’s similar to thick nut butters. If you use too oily, the cookies won’t come together. You were warned.)
- 1 cup coconut sugar
- 1 egg, whisked
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- pinch of salt
- 1/4–1/2 cup Enjoy Life Mini Chocolate Chips
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together almond butter and coconut sugar using a large spoon. Then add egg and mix again until well combined.
- Add 1/4 cup of cocoa powder at a time. At this point, I used my hands to incorporate the cocoa powder into the dough. Add all the cocoa powder and completely combine.
- Then add baking soda, vanilla, salt and chocolate chips and combined until everything is well mixed. This was all hands for me. It’s a dirty job, but someone has to do it. (This should be a very thick dough at this point. If it’s not, you need a thicker almond butter like I said before).
- Use a cookie scoop to scoop out around 2 tablespoons of dough and make into a round ball. Place on silpat or parchment paper lined baking sheet. This dough will create 13-15 cookies that size.
- Once you’ve placed all the balled dough onto the baking sheet, use a fork to press the cookies down just slightly. No need to really flatten them out, just get them to look more cookie shape instead of ball shape. If you press them down too much, they’ll come apart when they bake so be careful.
- Place baking sheet into the oven and bake for 10 minutes.
- Remove from oven and let cool for 5-10 minutes until removing from baking sheet to place on cooling rack. If you try to remove these from the baking sheet early, they will come apart. So don’t be stupid here. Patience is a virtue.
- Eat up!

Yesterday Cappello’s posted on IG that they were now at the Whole Foods by me. There were copious cookie emojis. I was ELATED, as I’ve been wanting to try their cookie dough forever but never pulled the trigger ordering it.
So, I skipped out on work a bit early to run by WF before the gym. Well…. there was the Cappello’s pasta. But… no cookie dough. Asked three different employees. Nuttin. BUZZKILL.
So… now I’ll have to go get me some cocounut sugar and cocoa powder from my true grocery store soulmate, Sprouts, and whip these babies up.

I actually found this stuff at Marshalls in the food aisle! It was extremely inexpensive.
Awwww shit! These look AH-MAZING and EASY (my 2 criteria for cooking) !!! Could you ditch the cocoa and use the nut butter, coconut sugar, baking soda, etc as a cookie base for different kinds of cookies? I bet you could!
LOL Juli! Avatar was always meant to be a trilogy, but it’s taken awhile for James Cameron to be able to get to make the second two. So you get two more!
They’re also adding an “Avatar-land” area to the Animal Kingdom at Disney, and I believe the current plan is for its opening date to coincide with the second film’s release. Construction on that has just begun!
So… there’s lots to look forward to. Also these cookies! 😀
