Sugar Detox Carrot Cake Pudding (with a cooking video!)

Two desserts this week. You smart people are excited. You dessert nazis are annoyed. Haters. Well luckily, this dessert has no added sugar in it. So really, it could just be a side dish for all you people who hate desserts and deny yourself happiness. And if you’re doing the sugar detox like me, this is a perfect dessert  for you. If you aren’t doing the sugar detox, you are a much happiner person AND are lucky because you can add honey and chocolate chips to make it stupid good. You b*tches.

That paragraph was all over the place.

So this dessert is made from carrots. Obviously. Carrots are slightly sweet. That’s why some genius out there started making cakes from carrots. Have you ever tried my carrot cake cupcakes? HOLY BALLS. Maybe one of my favorite desserts. Maybe. Anywho, on this sugar detox, I can still have carrots. Woot woot. Puree that sh*t. Add some to vanilla to that sh*t. And love that sh*t. That’s what I did. Like a kid in a candy shop. And I hear carrots are good for your sight. I can see through walls now. Fact.

I kinda miss Drew Barrymore in movies. I like her.

Wanna know something gross? I have a scab on my inner thigh from rope climbs. And now it’s peeling off. It’s a blessing in disguise that I can’t fit into jeans because that could get real uncomfortable. I don’t know why I’m telling you this.

Guess what I have for you…A COOKING VIDEO! So exciting!

Sugar Detox Carrot Cake Pudding (with a cooking video!)

  • 2 cups baby carrots
  • 2 tablespoons coconut butter
  • 2 tablespoons sunbutter (or nut butter)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (or more)
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • pinch of salt

  1. Throw your carrots in a saucepan with water that covers your them.
  2. Place under medium heat and cook for 20-25 minutes or until carrots are soft when you poke them with a fork.
  3. Drain carrots.
  4. Place carrots in the food processor and puree.
  5. Then add the rest of your ingredients to your food processor and puree until completely mixed.
  6. Eat that delicious goodness!

Oh, Hi! I’m Juli.

I’m a food hoarder. And a really bad dancer. If you don’t know me well, you will probably not understand my humor. Therefore, I apologize ahead of time. Thanks for listening to my ramblings of my ever-changing life and trusting my kitchen mishaps. Your trust in me is appreciated.

  1. Yum!
And sorry to be the killjoy, but carrots don’t improve eyesight. That was a myth created by the British military during WW2 to explain why their pilots could see so well at night. Cover story so that no one else knew they had radar technology and they could win battles in the dark.

    1. Carrots may not help your eyesight, but you DO need them for proper vision. or rather, you need vitamin A. carrots have a ton of vitamin A. there are 3 different ways in which we use the Beta-carotene. one is for the cones that make us see colors. one is for the rods which are for night vision. and there was another one which is for mucous production or something…i can’t remember but i learned it in class last quarter in grad school.

anyways, this recipe looks awesome, iwill have to try it soon!

  2. I’d kill for your arms!!!! Oh… and those are some epic dance moves there Juli… love your work.

  3. Well, that video was just awesome! F**king hilarious – i wish i had your moves. And i am totally going to make it today!

  4. Well I just happen to have a bag of carrots sitting lonely and dejected in the fridge. Annnddddddd its raining out. Which means Those b*tches are about to get eaten. Pudding cake style. What.

  5. Christen Suratt

doing another whole 30 with the hubby….guess this would be one way to make it all better!!!!!

  6. That video was hilarious. Going to make this soon!

Re the dancing; I think you should go to the Games next year and dance off with people.

  7. Oh I love the sound of this. When doing sugar again I reckon a little maple syrup would go well with this!

  8. I know I could find the answer if I watched the video again or searched through an entry or two…but is there a website that explains the detox you’re doing? I have a problem saying no to lemonade and cookies and probably could use an intervention. Thank you! This pudding looks ridiculous, and I never would have thought of carrot cake pudding so thank you!

  9. Juli the most offensive thing you have ever said is that you miss Drew Barrymore and like her in movies. Said no one but you…ever.

  10. I miss Drew Barrymore too!

I am starting Day 4 of the Detox…this might’ve just changed my life.

And holy balls, your body is AWESOME!

  11. Kristlynn Snyder

That video was amazing. So glad that I started my day with it, and I will definitely be making this soon. Thanks for being hilarious and awesome!

  12. That.Was.Hilarious. I want to live in y’alls house! Fun!!
Also, I adore carrot cake so I am going to make this ASAP (without honey first, to see how it goes… I’m sweet enough ;P)

  13. Yummm…but when I saw the photo at first, I was thinking it was pumpkin…so now I am thinking of doing a blend of pumpkin and carrots…of course, I don’t think your recipes EVER need revisions…but I am craving some pumpkin-y thing now…

      1. Hi Juli, just wanted to say hello and you are hilarious. I found you thru a pinterest pin I found. I will be following you from now on. Love love your site and the fact that you Crossfit and eat well. I was turned onto kettlebells over 3 yrs ago and our box has incorporated Crossfit the past year or more.

Thank you for all that you do, you are awesome!

  14. I may get fired for laughing so loudly at my desk. Your dancing is priceless! WORK IT GIRL!

And you’ve expressed unhappiness with your body/thighs/whatev but let me tell you – I have acquired a ridiculous amount of discipline and rarely eat ice cream or bananas and lift heavy and do all this so I can try to look just like you! I think you look great and you are totally my role model. 🙂

  15. Jessica Simpson

Hilarious! first video I’ve seen from you, so not only is the food delish but you crack me up!

  16. 1) You’re so funny
    2) I can’t wait to try this and the carrot cake cupcakes you spoke of!
    3) You miss Drew Barrymore?
Well have you seen Whip It? She has a smaller role, but she directed it and it’s flippin hilarious! I bet you’d enjoy!
    4) Thanks for doing what you do!

  17. Can’t wait to try this…as for the dancing, I am pretty sure you’re ready to break dance fight in the club. It’s the *best* way to resolve conflict.

  18. OMGGG!!!! You are freakin FANTABULOUS!! I recently found your blog and I have been cooking up a paleo storm because of it and I don’t like to cook but that’s slowly strting to change. Look forward to your new recipes in my inbox. Oh and FYI (even though you should know this already) your body is awesome. I’m working towards the same thing if I could just leave the grains and sugar alone I’d be good to go. You can see your abs through your shirt!! That’s hardcore!!

  19. Hhahahah I love it ” I swear Im not a complete asshole the whole time”

Your awesome… if we didn’t live on opposite ends of the country we’d be friends lol

Keep it up… I’ll def be making this on a sugar detox as well…

  20. I don’t know what I want to try first, the recipe or those sweet moves. My three year old has asked to watch the dancing part three times then he says “mom, I never seen that dance. How she do that?”

  21. What a great start to my day! This was the first cooking video of yours that I’ve seen. Awesome!!! So wish I had your moves. Dang. And carrot cake pudding… Will definitely give it a try. Sounds so good!

  22. i fricken Love you! watching your video, its like you are me~ and it’s awesome, of course! Thanks for the good tips, and good luck w/ the rest of your sugar detox

  23. I just wanted to tell you that I have a total girl crush on you…and you are a definite inspiration. Thank you for sharing all of your recipes!

  24. You crack me up!!! I have been seriously considering switching to paleo for a little while now. There are many benefits and my friends that eat paleo swear by it. I have been worried about not being able to eat chocolate but your posts and videos are inspiring and assuring me that it is possible to do it. All it takes is a hard work and perseverance. Thank you!

  25. My dearest Juli Bauer, I am going to an amusement park on Saturday and need to pack a lunch in a cooler. Do you have any recommendations for recipes of yours that can be eaten or would still taste good cold?

  26. Juli,

I have been following (ok, stalking) your blog as of late because (a) I love your witty humor; (b) your recipes are DA BOMB; and (c) see a & b. I made my own coconut butter tonight and quite possibly killed my food processor in the process so I will be making this tomorrow if it some how revives overnight. You also inspired me to start the 21 day detox which I will also be taking on starting tomorrow. Keep up with the awesome recipes, amusing posts, and kick ass dance moves!!

  27. this is going to save me since I am sugar detoxing too, week four I may add…keep it coming lady – and keep those videos rolling!!!!!

  28. P.S. I’m so glad you demonstrated the storing in the refrigerator part – I was seriously confused about that

  29. This recipe was so yummy! I tweaked it some, added honey, so not as healthy, but kid & husband & neighbor guy all loved it! Now there is none left! Thanks for the yummy recipes!

  30. dude i freaking love you! haha

aaaand i made this this morning for breakfast and just cooked some bacon. Maybe you don’t think they don’t go together, I don’t care… it was awesome.

    Thanks for entertaining me!

  31. Just wondering what that great tune is you are dancing to? Love everything about you, keep up your amazing work! Oh and I totally want your abs!

  32. Loveee this idea! I know exactly what you mean about the acne thing, your damned if you eat crap… and still damned if you eat healthy and work your ass off. just love hormones NOT! I finally figured out I wasn’t eating enough carbs. Hope it gets better thats no fun. Panoxyl8 you can get over the counter at the pharmacy its really strong and it dried out my face… and this is going to sound cliche but proactive it the only thing that has balanced my face, and eating more which isss definitely not a problem ha.

  33. My boyfriend was looking over my shoulder when I was watching your video and when you started dancing, he was convinced that you used to be a cheerleader! Recipe is awesome, by the way. I’m eating it as we speak 🙂 Also, I love your blog. It’s very inspiring and I hope my young baby blog will be as successful as yours one day. Got any tips?

    1. Tell you boyfriend that I definitely wasn’t a cheerleader. Just a creepy white girl sneaking into clubs since I was 15. And with your blog, do what you love, say what you think, and be yourself.

  34. Wow, the dance I didn’t expect but is fabulous! I love to dance too and my dream was to be a professional dancer sigh… The recipe will make later. Thanks. I love reading your blogs.

  35. Funny girl ! Making this recipe tonight ! Now maybe if I do crossfit and go on with the SCD diet (which is pretty much like paleo) I could look as awesome as you do.

Of course I’d have to get rid of my face. And cellulite. And stretch marks.

Damn. I’ll just go make the carrot pudding .

  36. this is most likely a stupid question: so i’m guessing your fudgy brownies and other similar paleo recipes are a no-go when on a sugar detox? no honey, agave, maple syrup recipes, etc? crap, i need to get on this detox train.

  37. So yummy, even without the sugar. I am totally oing to eat ths for breakfast with somewhere deed coconut and toasted walnuts.

  38. I’m just back from vacation, back on nightshifts, and getting caught up on PaleOMG. Thanks for the cooking video, especially the dancing. Just what I needed at 2:45am. Outasight!

  39. One of my new favorite treats now is dipping baby carrots in coconut butter. It came about the other day when I didn’t feel like making another batch of pudding – not that it’s hard or anything – and opted for this instead. It’s good for a quick fix or when you feel too lazy to make pudding!

  40. The best recipe ever! Tastes like dessert, but scores points on veggie servings! I just hope that there isnt’ any bodily harm that can be caused by overconsumption of carrots b/c I can eat the whole batch in one sitting if I’m not careful.

  41. Finally watched the video, and I really want to be your friend. Just sayin. You’re a cool chick 🙂 Thanks for the laughs and blogs!!

  42. Just made with a can of pumpkin instead of carrots because it’s been staring at me in my cupboard. Used pumpin pie spice because I didn’t have cloves. Yummmmmy! Thanks girl.

  43. I’ve been wanting to make this since I first saw the post. Well, I made it tonight and it’s ridiculous. I’ve actually been making a lot of your recipes lately and have loved every one of them. Thanks for posting all of your delicious recipes!

  44. I made this tonight for dessert. I only had a little less than 1 cup of carrots on hand so I halved the recipe…let’s just say, I didn’t need the final step of how to store it in the fridge because it never made it into the fridge. Straight into my belly.

So good! But probably should practice some self-restraint.

  45. I follow your blog like tweenies follow twitter. I. Love. It. Anywho I wanted to know what brand of sunbutter you use. The only one I’ve been able to find has cane syrup or whatever sugary sounding thing that they refuse to just call sugar.

I will be making this as soon as I restock my vacation starved refrigerator.

  46. This is literally the best thing I’ve ever made. Hands down….I must confess that there wasn’t much that made it into the fridge….

  47. Just made this and it’s excellent! I’m on day 1 of the 21dsd, and this just made the transition MUCH easier. Thank you!!! 🙂

  48. I make this all the time. It’s so easy and we love it!!! I make coconut cream whip cream to top it off and it is amazeballs. I’m trying to find some sort of crust recipe to make this into a pie. Thanks Juli!

  49. You saved the day, yet again. Day 1, phase 3 and I was dying for something sweet after dinner. This is yummy enough to fake my brain out. I think I will be going through a lot of carrots in the next 21 days!!

  50. Is there any substitute for the coconut butter? My attempt at it was an EPIC FAILURE– I think I really did need to use coconut FLAKES instead of shredded, and a bigger bag of it as well… Anyways– I REALLY want to make this but I’m not sure how to get around my coconut butter problem!

  51. I tried it bc it has a puree setting, but my blender sucks so i mashed the carrots as much as i could, it’s still a little chunky, but good. I did add honey however 🙂

  52. You my friend are hilarious. Founf this site yesterday and I’m jazzed to start making some of these great treats. Thank you for being so f’in funny.

  53. I’m on the 21-DSD and it’s the third time I make this recipe. It’s a life saver. It’s also delicious if you replace the spices with cocoa powder (but keep de vanilla)

Thank you Costco for the huge bags of organic baby carrots !

  54. I made this last night and it was SO good! I didn’t have any sunbutter with no sugar (tricky jerks!) so I just doubled up on the coconut concentrate, yummmm!

  55. this recipe may have just pushed me over the fence into a no-sugar lifestyle….or was it the dance moves? thanks! keep inspiring!

  56. Hi! I was wondering, do you think canned coconut milk would work for the recipe instead of creamed coconut? I know its a bit runnier, so I would add a bit less, but do you think it would work?

  57. Juli!!!! Brilliant recipe once again 🙂 started the detox just yesterday and was craving sweets somethin’ fierce today!! Made this delicious little bundle of joy and it did just the trick! Love it so much I will continue to make it after the detox to enjoy in place of ice cream. Love ya! Keep up the awesome work!

  58. Woww…now if that wasn’t the best food presentation I have ever seen, LOL, Awesome! Oh, and recipe sounds good as well, did you say the fridge after?

  59. I made this pudding last weekend and have made it 2 additional times since. Yeah – doesn’t last more than 2 days in my house either apparently…

  60. Holy crap Juli!!! I made this yesterday. It was like eating carrot cake batter. AH-MAZING! I couldnt stop eating it… Somehow I’ve managed to save a little bit and will mix some walnuts through it. Perfection!!

  61. Do you ever come up to Fort Collins? Because I am pretty sure I need to hang out with you. And dance. And stuff.

  62. Just made this and am SO impressed how yummy and satisfying (& damned healthy!) it is – without any added sweetener! You ROCK! And I love to dance so it’s a real win/win with your bonus video! Thanks, Juli!

  63. I made this today and YUMMMM!!!! So delish! I had some Sweet & Salty Sugarless Snack Mix from the Paleo Parents on hand and sprinkled it on top – yowsers!!!! It was awesome. Which got me thinking – maybe you should use this recipe as a “base” for a Sugar Detox Ice Cream – oh hell yes!!!!

  64. I’m in the middle of a paleo challenge at my gym and just made this. Not going to lie, I was a bit skeptical, but this was DELICIOUS and totally hit the spot. I should’ve known better than to question it, your recipes never disappoint!

  65. Julie- I am trying to go Paleo (and sugar free!! ah!) but there is a problem that I seem to be coming across…I am allergic to nuts AND coconut (which seems to be in almost EVERY recipe). Any way you can post some recipes or substitutions for me? Thanks!!

    1. hey sarah. that’s super tough, BUT it’s probably better because then you won’t be creating some of these naughtier foods that include coconut or nuts. if you keep looking through google, you may be able to find some recipes out there without that stuff

  66. I’m on day 3 of my first time sugar detox and this pudding is saving my life! Juli thank you so much for making it fun & easy to go Paleo and for posting sugar free recipes!!

  67. I don’t know if anyone noticed or commented but ….you licked the spoon and put it back in the food processor. I am so not eating at your house.

By the way, you are a good dancer…don’t sell yourself short!

Thanks for this website and all you do!

  68. You absolutely crack me up. I have similar dance moves, but I don’t look as cool as you, haha! We also cook very similarly: without measuring and surely licking the stirring spoon often. 🙂

  69. Thank you for that! Very informative and funny at the same time! You are know tied for my favorite blogger (with Cave Girl Eats)!

  70. even though the coconut butter explanation was super long, I totally needed that haha! I couldn’t bring myself to spend $13 on a jar at the store, but now I know I can just make it myself duh, why didn’t I think of that?! Totally trying this 21 DSD when I get home.
Oh and sick arms girl! rockin it 🙂

  71. I gave up sugar over a yr ago and so glad I did! Feel so much better! This looks yummy! Love your blog!!!

  72. I love raw carrots but I am not a fan of cooked carrots. I am on the 21 day sugar detox. Do you think I will still enjoy this recipe?

  73. This is such a great idea – who needs sugar, right? No wait…. I’ll slurp up that maple syrup on the bottom of your plate…. I’m trying! And lately I do well except during yet another sugar-ful holiday. Thanks for this recipe – it will help me be STRONG!

  74. LOVE this recipe! I also added a tbsp of cocoa powder and it tastes like a chocolate chai latte… mmm… And for for those with nut/coconut allergies, I mostly don’t make this recipe including the nut/coconut butter (for the most part because I never have them in my house as I have either finished them off or am too lazy to go to the store…) and it still turns out great 😛

  75. I’m on Day 4 of the 21DSD and I was really needing something sweet…just made this and it is phenomenal!!!

  76. You are hysterical! That video just made my day and I cant wait to try this recipe…I am currently on day 11 of the 21DSD and all I want are strawberries!
    Thanks for being so awesome!

  77. OMG…hysterically entertaining video!! Seriously LOLed at the end. Super Excited to try this recipe!! ((And….shoutout the Sami who commented above me…I swear I am a different person….random!))

  78. Looks great if I think of it as a side dish. I have a suggestion for you-
toss your bottle of ground nutmeg in the garbage.
Buy whole nutmeg (they are in the spice section at most grocery stores, but I get mine at Penzey’s online) and a micro plane grater.
Shave off small amounts just before you are ready to use.
Inhale the aroma of the freshly grated spice. Swoon.
Use with caution at first because this is a bit stronger than the pre grated product.
    You’re welcome.

  79. did you ever figure out if the nuts were the root cause to the acne? as i to deal with acne just wondering if that could be it for me as well…do u have any egg free breakfast ideas?

    1. they are probably not the cause of my acne, they definitely did make my face break out bad though. and made me sick. they are good to remove from the diet. check out my maple bacon breakfast meatballs with no eggs

  80. I just started reading your blog and oh man I love it! Particularly…
“Puree that sh*t. Add some to vanilla to that sh*t. And love that sh*t. That’s what I did. Like a kid in a candy shop. And I hear carrots are good for your sight. I can see through walls now. Fact.” Ha! I just started paleo/primal-ishness a week ago and love it!

    Thanks for the inspiration!!!

  81. I just found your website and am about to start the sugar detox….just did this recipe with a minor adjustment (used 1/2 cup plain unsweetenend almond milk)…..amazeballs!!!! Also love the website….ohh and dancing! Brings excitement to

  82. I just made this and it turned out SO well! I didn’t have any cloves on hand but it still ended up being delicious. Once I added the spices the puree seemed to thicken up a bit, so I added a tiny bit of unsweetened almond milk to thin it out. Great!

  83. I purposely went out and bought coconut butter and nut butter so I could make this amazing treat. I don’t eat those ever but I was like- screw it, I will for this recipe. I get home and I have no freaking carrots!

jesus, i’m tempted to boil apples and blend the heck out of those for an apple pie filling.

  84. I love you and all your recipes! Being on day 9 of my detox this really hit the spot! Thanks for all the amazing recipes and funny commentary to go along with. You rock!

  85. Too cute! This looks super delicious. I wonder about adding an egg and some coconut or almond flour and baking like a cupcake.

  86. This came out soooo great! Starting week 2 of 21DSD. Week 1 was fine…NOW the cravings are really kicking in! This may have just saved me. Is it weird that I like it warm right out of the processor?!? Yum!

  87. You’re a genius. I’m sure you’re sick of hearing that! This came out SO delicious! Made it last night and my husband have me a funny look as I had everything going in the food processor, even funnier look when I told him what it was. Forced him to take a bite and then he asked for another! Eating the leftovers for breakfast right now!!!! My phone hates me so it won’t let me rate the recipe! 5 stars!!!!

  88. What a small world! My cousin pinned your site on her pinterest and I knew you looked familiar. Hope all is well, Juli!! LOVE the recipes and videos. Excited to try some of these out. I’m a paleo, GF DF nut too!

    _Sarah Lightfoot

  89. Julie, I am new to your site and I just want to thank you for bringing to me fun and creativity in cooking paleo! I am 49 and have autoimmune issues. Your recipes are simple, delicious and satisfy my cravings for the things I miss. You are a ray of sunshine!

  90. This recipe is about to save my life! I’m on day 9 of my first ever 21 DSD! Thank you for this recipe and the video! I may just have to send you props on my blog, if I don’t screw this recipe up 😉

  91. Excellent! You are so entertaining you just made my day. I’m 65 years old and felt like getting in the kitchen with you and creating and dancing!
Keep up the good work, I look forward to many more videos.

  92. Whitney Leliefeld

I’m doing the 21 day sugar detox and I need a treat or I’m going to cave to my cravings, or die. It’s that serious. This looks amazing! Thank you.

  93. hey! i know this video is old but…i love your website and recipes and….i would LOVE to know what is the BEST food processor you recommend? i recently got a 13cup kitchen aid and it is having multiple problems…what should i get in place?? thanks so much! i want to try this asap!

  94. I don’t know what I did wrong, but I tried this recipe And it turned out super gross! Usually I love your recipes, but maybe carrot Pudding and I are just not meant to be 🙁

  95. Loving your blog and make recipes from it all the time. This video was awesome! Made me smile this morning and my 4 month old was completely mesmorized during the dance portion. Making this tonight- thanks for all the great recipes and humor! Way better than watching food network!

  96. Ho. Lee. Crappppp. This is SO FRIGGIN GOOD!!!!! I’m on the 21DSD and I just made this with a couple alts (250g carrots, 1 tbsp coconut milk, 1 tbsp coconut flakes, 1 tbsp Sunbutter) and I swear it was orgasmic. WHOA.

    55555++++++ stars. Thanks Juli!

  97. Hi Juli!
Well I just noticed you already have 180 comments about this AMAZING recipe but I had to add another one to THANK YOU. I’m on day 9 of the Sugar Detox and well, this dessert is just PERFECT. Exactly what I needed. Every recipe of yours that I try just turns out great! 😀 Can’t wait for your new book!
    Love from Europe 🙂

  98. this is so delicious, juli!!! i just finished the detox and made it today haha i thought the detox was pretty easy since i was eating the 1 piece of fruit every day but this was a nice sweet dessert!

  99. So I just made this last night…. holy mother of god this stuff is good! I hate carrots, but I can now say that in this form, I LOVE carrots.

Or maybe I just love coconut butter and sunbutter and carrots make me feel less guilty….

Either way, LOVE THIS. Especially love it hot.

  100. Loved this! Used almond butter as it’s what I had. Had some last night after my workout. Thank you for posting!

  101. Your stuff a goofball 🙂 Love it 🙂 Starting the 21dsd tomorrow. Thanks for this recipe idea. I’m sure it will come in handy! Love the green apple coconut treats too. Will try for sure. XO

  102. I love this recipe! I’ve made it many times, and I’ve experimented with adding different quantities of spices, adding ginger, and using different kinds of nut butters. It’s the perfect low sugar treat! Thanks for an awesome recipe.
