Sugar Detox Carrot Cake Pudding (with a cooking video!)

Two desserts this week. You smart people are excited. You dessert nazis are annoyed. Haters. Well luckily, this dessert has no added sugar in it. So really, it could just be a side dish for all you people who hate desserts and deny yourself happiness. And if you’re doing the sugar detox like me, this is a perfect dessert  for you. If you aren’t doing the sugar detox, you are a much happiner person AND are lucky because you can add honey and chocolate chips to make it stupid good. You b*tches.

That paragraph was all over the place.

So this dessert is made from carrots. Obviously. Carrots are slightly sweet. That’s why some genius out there started making cakes from carrots. Have you ever tried my carrot cake cupcakes? HOLY BALLS. Maybe one of my favorite desserts. Maybe. Anywho, on this sugar detox, I can still have carrots. Woot woot. Puree that sh*t. Add some to vanilla to that sh*t. And love that sh*t. That’s what I did. Like a kid in a candy shop. And I hear carrots are good for your sight. I can see through walls now. Fact.

 

I kinda miss Drew Barrymore in movies. I like her.

Wanna know something gross? I have a scab on my inner thigh from rope climbs. And now it’s peeling off. It’s a blessing in disguise that I can’t fit into jeans because that could get real uncomfortable. I don’t know why I’m telling you this.

Sugar Detox Carrot Cake Pudding (with a cooking video!)

Ingredients

Scale
  • 2 cups baby carrots
  • 2 tablespoons coconut butter
  • 2 tablespoons sunbutter (or nut butter)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (or more)
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • pinch of salt

Instructions

  1. Throw your carrots in a saucepan with water that covers your them.
  2. Place under medium heat and cook for 20-25 minutes or until carrots are soft when you poke them with a fork.
  3. Drain carrots.
  4. Place carrots in the food processor and puree.
  5. Then add the rest of your ingredients to your food processor and puree until completely mixed.
  6. Eat that delicious goodness!

    And sorry to be the killjoy, but carrots don’t improve eyesight. That was a myth created by the British military during WW2 to explain why their pilots could see so well at night. Cover story so that no one else knew they had radar technology and they could win battles in the dark.

    1. Carrots may not help your eyesight, but you DO need them for proper vision. or rather, you need vitamin A. carrots have a ton of vitamin A. there are 3 different ways in which we use the Beta-carotene. one is for the cones that make us see colors. one is for the rods which are for night vision. and there was another one which is for mucous production or something…i can’t remember but i learned it in class last quarter in grad school.

      anyways, this recipe looks awesome, iwill have to try it soon!

I made my own coconut butter tonight and quite possibly killed my food processor in the process so I will be making this tomorrow if it some how revives overnight. I finally figured out I wasn’t eating enough carbs. Hope it gets better thats no fun. Panoxyl8 you can get over the counter at the pharmacy its really strong and it dried out my face… and this is going to sound cliche but proactive it the only thing that has balanced my face, and eating more which isss definitely not a problem ha.

  39. One of my new favorite treats now is dipping baby carrots in coconut butter. It came about the other day when I didn’t feel like making another batch of pudding – not that it’s hard or anything – and opted for this instead. It’s good for a quick fix or when you feel too lazy to make pudding!

  44. I made this tonight for dessert. I only had a little less than 1 cup of carrots on hand so I halved the recipe…let’s just say, I didn’t need the final step of how to store it in the fridge because it never made it into the fridge. Straight into my belly.

    1. hey sarah. that’s super tough, BUT it’s probably better because then you won’t be creating some of these naughtier foods that include coconut or nuts. if you keep looking through google, you may be able to find some recipes out there without that stuff

  78. Looks great if I think of it as a side dish. I have a suggestion for you-
    toss your bottle of ground nutmeg in the garbage.
    Buy whole nutmeg (they are in the spice section at most grocery stores, but I get mine at Penzey’s online) and a micro plane grater.
    Shave off small amounts just before you are ready to use.
    Inhale the aroma of the freshly grated spice. Swoon.
    Use with caution at first because this is a bit stronger than the pre grated product.

    1. they are probably not the cause of my acne, they definitely did make my face break out bad though. and made me sick. they are good to remove from the diet. check out my maple bacon breakfast meatballs with no eggs

  82. I just made this and it turned out SO well! I didn’t have any cloves on hand but it still ended up being delicious. Once I added the spices the puree seemed to thicken up a bit, so I added a tiny bit of unsweetened almond milk to thin it out. Great!
