Some of you are PUMPED for this recipe because you are doing the 21 Day Sugar Detox like I did just a couple weeks ago, and some of you are less than thrilled because you don’t give a sh*t about a sugar detox. Both understandable. So I have a solution for those not doing the sugar detox: add honey or maple syrup. PROBLEM SOLVED. You’re welcome. You can thank me by setting me up with your single, good looking brother, or cousin, or friend of a friend of a friend. I would thoroughly appreciate that. Thank you.
This recipe is actually based off of appreciation. I recently received a ice cream maker from an absolutely incredibly kind paleOMG reader. She emailed me to tell me she had mailed me a present to my work. Then I announced that I was doing my 21 Day Sugar Detox and she said it was fine if I re-gifted the present she sent me. When I opened the package to find an ice cream maker, there was no way I was EVER going to re-gift this amazing gift. Margaret told me she just wanted to thank me for my website and how much it has enhanced her family’s life. How awesome is that?! So Margaret, thank YOU for enhancing my life with this amazing ice cream maker so I can create even more recipes for the Paleo community and now the Sugar Detox community. I’ve already made 4 ice creams in it so there will be many more ice cream recipes to come! Maybe even in my cookbook!! Eeeeeek!
So guess what? This weekend was suppose to be an amazingly pain-filled weekend at Front Range CrossFit for their annual Colorado Open CrossFit competition, but I no longer will be participating. Insert sad face. I’ve competed 2 years in a row there, finishing 26th my first time and 2nd my second time around. And this year was going to be real fun because they are splitting the competition into a Pro Division and an Open Division. The pro division is filled with athletes from Regionals so I was super pumped to get my ass whooped by all those women. Alas, I injured my shoulder at my last competition and can’t pick up heavy things. I’m literally doing air squats, box jumps, and running every day. Thrilling. So instead, I will fill my weekend with creating new recipes for my cookbook and then go to Front Range to cheer on all the amazing athletes with food in hand. Hopefully I’ll make new friends if I bring food with me. Friends meaning men. Who am I kidding. All this event will bring is men who are wearing obnoxiously bright clothes and think they are unbelievably cool. Fact.
Sugar Detox Cinnamon Sweet Potato Ice Cream with Toasted Walnuts
- Yield: 2-3 1x
Ingredients
- 1 medium sweet potato or yam, baked until soft (stop worrying about size, it won’t make that big of a difference)*
- 1 (14 oz) canned coconut milk
- 1 teaspoon vanilla extract
- 2–3 tablespoons cinnamon (the more the better. duh.)
- sprinkle of nutmeg
- pinch of salt
- 1/3 cup walnuts, roughly chopped
- 2 tablespoons coconut oil
- 1/4 teaspoon vanilla extract
- more cinnamon
- one more pinch of salt
Instructions
- First, bake your sweet potato. So poke a crap ton of holes in it using a fork.
- Preheat oven to 400 degrees and place your sweet potato on a baking sweet.
- Bake for 35-45 minutes or until your sweet potato is soft to the touch. The longer you bake it and the gushy-er it gets, the sweet it will be.
- Let sweet potato cool and remove the skin.
- Place sweet potato in a food processor along with your coconut milk and puree until smooth.
- Then add your vanilla extract, cinnamon, nutmeg, and pinch of salt and puree one more time.
- Place in fridge to cool for 30min.-1 hour depending how warm your sweet potato was.
- Add cooled mixture to your ice cream maker and follow the directions.
- While your ice cream churns, pull out a small saucepan, place under medium heat and add your 2 tablespoons of coconut oil along with 1/4 teaspoon vanilla extract.
- Then add your walnuts and mix around to help the coconut oil coat on all sides.
- Let your walnuts begin to roast. After a minute or so, they will become fragrant and then add your cinnamon and a bit of salt. Keep flipping around your walnuts so they do not burn and they can coat in the cinnamon.
- Add more cinnamon if you want. I did.
- Once your ice cream is done, top with walnuts. I also topped mine with a bit of sunbutter.

*especially when they’re soft…
Sheesh, it’s all your fault…get me thinkin’ like that! Meanwhile, I’ve already bought the ice cream maker and I’m ready to roll!
Just got back from my 7th crossfit fundamental workout and I see this awesome recipe. BUT! No ice cream maker here 🙁
Would this work in my zoku pop maker???
I’ve never heard of that…
You might be able to use the Zoku pop maker if it’s viscous enough to pour but I would worry that there isn’t enough sugar and it’d get stuck. You can always try the no-machine method: “Not ready to splurge on a gadget to do the churning for you? Kaminsky shares, “Pour the base out into a rectangle baking dish and place the dish on a level surface in your freezer. Wait 45 minutes or so, and then using a fork scrape up the ice crystals forming around the edges. Put the dish back into the freezer, wait 30 minutes, and scrape again. Repeat until the entire mixture is frozen.” While this technique will result in a less smooth texture than what you may be used to, a great non-dairy base will still give you a dreamy rich taste.”
This looks amazing! Can’t wait to try it!
Sorry about your shoulder 🙁
Try adding a couple of raw egg yolks to your ice cream mix next time, whisked of course, but it makes it taste really rich and buttery.
I’ll definitely try that!!
Do you add the eggs in without cooking, or cook the mix slightly prior to adding to machine?
I would add them to the warm mixture while you are puree-ing it, yeah I can’t spell that one. Anyways, if you add the egg yolks to a super hot mixture they will curdle which is pretty gross. You want to add them warm but do not give them time to get all scrambled egg-like in your ice cream. If that makes sense.
If you take some of the warm mixture and add it to the eggs little by little, you can add them to the hot mixture without them scrambling in the process. It’s called tempering if you want to look up detailed information on how to do it.
You need to go on tour with your book, expand your circle of people. I’d suggest Albany, NY, but I’m pretty sure after dating all of the d-bags I found the last good guy in town.
I like cheering on your love life 🙂
oh and this recipe sounds delicious!
I now feel the need to buy an ice cream maker! Perhaps with a little searching I can figure out how to make ice cream without having an ice cream maker, if not, hello Macy’s!
My ice cream maker is in transit and I have sweet potatos waiting on the counter…i can’t wait to make this…oh and I have a gorgeous son I would gladly let you date!
I’d like to thank Margaret for buying you the ice cream maker because I am so excited about making this. It’s so freaking hot over here so ice cream will definitely help.
Acne – I’ve had it since jr high school – can’t seem to kick it. And to boot, nothing topical helps it and I’m allergic to the sulfa in acne meds so I take a diuretic of call things (recommended by a derm) called Spironolactone and that has it completely cleared it up for the past 10 yrs (I’m 33 so you can imagine living like that until I was 23 ugh!). I wanted to be drug free once upon a time so I tried getting off and failed. Not sure what the long term side effects are or if you’re even open to drugs but thought I’d share. I like your face paint idea. Thanks for the ice cream recipe too….I’m dying to make that and the vanilla bean caremelitas this weekend!
Get off the RXs of Western Med. They DO NOT HELP. THEY only temporarily MASK the issues in your face. I have struggled with my acne/rosacea for more than 25 years and finally went to an Eastern doctor who uses herbs to HEAL, not mask. He put me on an herbal remedy. I have been on these for 14 days and my face looks AMAZING. I tried every supplement and/or potion you can imagine. Acne/Rosacea is NOT TOPICAL. it comes from digestive and stress issues, just finding this out after 25 years of copays and RXs that never did anything to improve my face and skin. The long-term antibiotics they had me on caused every problem you can imagine. I have the information on the product if you are interested. 🙂 hope you are healed by now 🙂
Okay, I officially “need” an ice cream maker. Thanks.
