You may think that this meatloaf sucks because it doesn’t have anything to bind it together, but you’re wrong. You’re dead wrong. It does stay together. And it tastes probably way better than it looks. Promise swear.

The other day, as I typed on this here computer at my kitchen table, I looked outside just in time to see a goose land on the top of my car. On my sunroof to be exact. It was closed, just FYI. As he waddled around on the top of the car, I thought about yelling at him. But then I would be the person yelling at a goose. And no one wants to be that guy. So I just watched to see what he would do. And he did exactly what you would think a goose would do in this situation. He shat on my car. Straight up, took a poop directly on the top of my sunroof. And it wasn’t like the normal goose poop you see in the park. No no. It was the runny kind. Like what you find in newborn baby’s diaper. Gross. I went directly to the gas station and used the good ole’ squiggy to clean that poo up. And leave it on a squiggy for the next lucky devil.

I just told an entire story about goose poop. Wow.

I’m so excited it’s summer. That means lake time. And you may wonder what I’m talking about since CO kind of lacks in lakes. But there are lakes out there, small ones, but they are bodies of water that you can boat on. I’ve decided that I don’t need to try to wakeboard any longer. If I would have started much younger, when my ligaments and bones moved like they were suppose to, then wakeboarding would be much easier. But now, when it hurts to sit in a squat, it seems like a much better decision to try surfing instead. And just stick to watching the badasses wakeboard. This is what badass looks like.

This is what I look like. Remember, this is surfing, when the boat is going probably 10 miles per hour. And you’re holding on a rope 2 feet away from the boat. And that’s a beer bong. Not a lake snake. Oh, the things that Lake Powell will make you try.

4.6 from 21 reviews

  • Yield: 4-5 1x

Ingredients

Scale
  • 1 pound ground beef
  • 1012 ounces bulk pork breakfast sausage
  • 1 tablespoon bacon fat (or other fat)
  • 2 garlic cloves, minced
  • 1 yellow onion, diced
  • 1 medium zucchini, diced
  • 4 ounces of button mushrooms, sliced
  • 2 tablespoons dried parsley
  • 2 tablespoons dried basil
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Place a large skillet over medium-high heat. Add fat along with 2 garlic cloves and diced onion.
  3. Once the onions begins to become translucent, add diced zucchini and cover to help steam the zucchini.
  4. After about 3-4 minutes, add the mushrooms on top and cover again for about 4-5 more minutes.
  5. Once vegetables have softened, add in parsley, basil, garlic powder and salt and pepper. Mix well then remove from heat to cool.
  6. Once vegetables are cool, add ground beef, breakfast sausage, and cooled vegetables to a large bowl and get dirty with your hands. Mix well to combine, trying not to squish the zucchini too much.
  7. Line a large loaf pan with parchment paper and place the meat mixture into the dish. Press firmly to make sure it all sticks together and to keep it from falling apart.
  8. Place in oven and bake for 40-45 minutes until meat presses back at you when you poke it.
  9. Let sit for 10 minutes after baking.
  10. Eat with some avocado on top. And fruit on the side. What up breakfast!?!?

This looks pretty delicious, thank you for something super healthy! I will whip it up this weekend; a nice change from egg bakes.

PS: It’s minor, but I really love your recipe’s print function. So many websites print terribly or else require a copy/paste to get a useful format. Yours rocks!

  2. Ali says:

Thank you!! I LOVE your egg-free breakfasts!!!

  3. Kim says:

Love your site, your recipes, and your rants. You go ahead and yell at that goose next time. Geese are evil.

  4. Emily says:

While I love your food, I love the fact that you do beer bongs while surfing behind a boat on a lake even more!

  5. Carla says:

For the longest time there was a mother goose nesting on an island with bread crumbs all around her in my Kroger parking lot.She just sat there and she was huge.

My first comment is about a fat goose. #greatfirstimpression

    Pregnant things freak me out.

This recipe looks amazing!! Meatloaf gets such a bad rep, but I’ve always loved it! Love how you added the zucchini and spices in there too – awesome combination!

  7. fayrene says:

healthy? no. far too much fat – breakfast? not sure how you coined that either, because it has vegetables? I’ve made meatloaf like that for years – for lunch/dinner – but I do not any longer use pork sausage or bacon fat and stick with more lean beef for a healthier version. there are many ways to make it healthy, with the exception of the veggies, this is just as bad for you as any other old-time meatloaf. Love your page but………

      We obviously see fat differently

    2. Stephanie says:

Someone obviously does not know this is a paleo recipe. Fat rules!

    3. Melody says:

Breakfast? No way! Where is the whole wheat toast and orange juice?

      Julie’s response? Best. Response. Ever.

    4. Ali says:

You’re on the wrong website my friend…maybe you should try weight watchers or south beach if you don’t understand the benefits of fat and meat.

I’ve made this twice, it’s awesome.

      1. Tina says:

OK. South Beach is a very low carb/high fat & protein diet. .

While I agree, this doesn’t seem “breakfast-y” in the traditional sense, the only thing that makes a meal breakfast, lunch or dinner is the time of day it’s eaten. So, give it up people.

Also, Paleo is grain free and [added] sugar free. There is no toast or orange juice in Paleo. (okay, technically some OJ’s fit the bill, but it’s way better for you to eat an orange than drink OJ).
If you don’t like the bacon fat, sub coconut oil or olive oil or something. These fats are “healthier.” It’s only a tablespoon, anyway.

I’m totally making this for dinner tonight. I was trying to find something with ground beef and zucchini. I don’t have any sausage, though, so it will have to be all beef. Thanks! I don’t think I woulda thought to put zucchini in my meatloaf.

    5. Myrina says:

Nope. Definitely not breakfast. More like breakfast, lunch, AND dinner!

  8. Joanna says:

This is exactly how i make my meat loaf. I had never made one before i started the specific carb diet and dont use binders either. Just meat and veggies! It turns out great every time… Especially when i add beef liver.

  9. Ron H says:

The meatloaf sounds great. It will make a change from omelet in the morning. I’ll be trying it out this weekend.

  10. Ali says:

How easily would this freeze?? I’m making a few meals for a neighbor- their 20 year old is under cancer treatments and they were told to “eat dairy and gluten free for optimal health” while he unders goes chemo etc… (Hmmmm- for health eat that way eh???….) So my few primal paleo friends and i are all over making meals!! But they need to be easily frozen/heated on demand.
Is this a good one? Are there any others you or anyone could recommend?
    Thank you!!!!

    1. juli says:

I’m not sure how it would freeze but I’m guessing just fine!! And I’d say any paleo chili or a soup would be great for freezing and reheating
