Omg. The Superbowl is almost here. One of the biggest days of the year is just around the corner. And you know what I’ll be doing during the game? Most likely blogging. Maybe watching a little Jersey Shore. And hopefully consuming delicious food from my Sunday Funday cooking extravaganza. No, I will not be watching the Super Bowl. No, I will not be cooking Super Bowl food to bring to someone’s house to watch the big game. And no, I will not be rooting for any team. Because it’s dumb. And boring. Watching sports is like watching paint dry. It’s pointless. Ok, now that I pissed all of you sports fans off, I’ll apologize and change the subject. And do not comment that CrossFit is a sport. I consider it my workout. And the guys I watch workout are all half naked while working out, count me in as a participant in that “sport”.
I just drank a “dirty chai” and my stomach might explode from this sugar bomb. Abort. Never doin’ that sh*t again.
But back to the super bowl. People really only like special days like this because of the food that is involved. That’s why you just googled ‘super bowl food’ or ‘paleo super bowl food’ and you mouth started salivating. Pavlov style. Well since I’ve never really been to a Super Bowl party, I had to think of things I would want to snack on. But that’s too simple to me. All I really want to snack on is nuts (insert dumb jokes here. original.) shredded meat, and anything involving sweet potatoes. So I had to think a little bit more to satisfy all of you sports snacking freaks out there. That wasn’t an insult. If you like snacking, I like you. Sports or not.
I used this dip for everything. Sweet potato chips. Shredded chicken. Ham, rolled up in lil fruit roll ups-minus the fruit. Celery. Really anything, honestly. It’s pretty stupid delicious. And simple. I also ate it by the spoonful. Stop judging me.
Superbowl Snacks: Roasted Red Pepper Dip
- Prep Time: 5 mins
- Total Time: 5 minutes
- Yield: 4+ 1x
Ingredients
- 1 (12-14 ounce) jar of roasted red pepper
- 1 cup walnuts, chopped
- 1 garlic clove, peeled
- 1–2 teaspoons olive oil
- 1/2 teaspoon onion powder
- salt, to taste
Instructions
- Pull out your handy dandy food processor.
- Add roasted red peppers and garlic clove. Turn on to puree.
- Then add your walnuts and turn food processor back on to make a paste.
- Add olive oil, onion powder, and salt. Puree all until you get the consistency you like.
- Serve or chill first before serving.
Notes
If you can find a jar of roasted red peppers WITH garlic cloves included, even better! Grab it! Save yourself garlic fingers.

This is WONDERFUL. I’m wondering if I should have drained the roasted red peppers to thicken up the dip? I added more walnuts instead. Maybe it will thicken with chilling. But even if it doesn’t, I don’t care. This is incredible. I cannot BELIEVE there’s no dairy in it. It’s so creamy!

Juli, I meant to comment on this recipe ages ago, when I first tried it for a little gathering at work. This dip is fantastic! We consumed it with veggies, with pretzels, tortilla chips (well, my coworkers tried it with the chips), and I even tried it with fruit! The flavor of the dip was complimented by each of the delivery methods…which should be a little odd, but wasn’t. It’s just amazing! Thanks for the recipe!
Do you put the liquid from the roasted red pepper jar in as well? Or just the peppers by themselves?

I made this once before and loved the texture and creaminess, but I found it a bit bland (even with added Sriracha. Today, I threw in an jalepeno, and it has much more of a kick. Will likely add 2-3 next time. Love this blog!!
This sounds perfect for a veggie/dip tray I’m supposed to provide for a shower. Does it get better if it sits in the fridge a few days? With it being a cold dip, I wondered. Make ahead potential?
