I.love.sweet potatoes. I love sweet potato fries. Sweet potato hash browns. Sweet potato hash. Sweet potato cakes. Sweet potato brownies…ahhh sh*t that was a good idea. Doin’ it. They are pretty much the best starch of all time. And they go with everything. Chocolate. Cheese. Meat. Almond butter. Sweet potatoes are the perfect food. Don’t fight me on this. You’ll lose.

Since most of us are in love with chowing down on chips at parties, these are an epic alternative. And way more delicious. I’m serious. Homemade chips are just way better. You could make beet chips too!! Then serve it with Roasted Red Pepper dip. Duh.

So you know how when you’re at a super bowl party and have to make some uncomfortable conversation with random awkward person in the room….I love awkward those people. I’m pretty overbearing to most people, especially awkward people. If people are uncomfortable around me, I’m really REALLY good at making them even more uncomfortable. Even more uncomfortable than this guy on the left side at 0:11 and 0:17 seconds. Watch him in this commercial. Seriously do it. I keep watching seconds 0:10 through 0:20 and laugh by myself. Then Laura will chime in with laughter. I heart her. I want to hold this man and make him feel less scared of the cameras that are video taping him. He’s an awkward turtle. I love him. I can’t wait to hang out with him at my Super Bowl party. With cheesy bread. Ok, everything I just said was a complete lie.  I would crap myself if I ate that cheesy bread. It might be worth it though. Especially if I was being forced to watch the super bowl.

Superbowl Snacks: Sweet Potato Chips

Ingredients

Scale
  • 4 sweet potatoes (try to grab skinny ones)
  • 23 tablespoons coconut oil
  • salt, to taste

Instructions

  1. Preheat your oven to 400 degrees.
  2. Use a mandoline or a knife to cut your sweet potatoes thin. I’d say the thickness of a silver dollar or maybe a little thicker.
  3. Put some parchment paper down on a cooking sheet.
  4. Place sweet potato rounds on the parchment paper.
  5. Melt coconut oil and use a pastry/cooking brush to paint some coconut oil on top of each sweet potato round.
  6. Sprinkle salt on top.
  7. Place in the oven to bake for around 8-10 minutes.
  8. Flip sweet potatoes over and bake for another 5 minutes or until edges are brown and have curled up a bit.
  9. Let cool. Serve with Roasted Red Pepper dip.

Notes

If you make these chips too thick, they won’t crisp up. Too thin, and they will burn pretty quickly. Just beware.

    Well, my chips were a total fail, but they were still delicious bc, duh, they’re sweet potatoes! I used aluminum foil, instead of parchment paper- maybe that’s why? Only the nearly burnt ones were crispy…maybe I did too much oil? Either way, five stars bc the crispy ones were perfect with the dip! 😉

    I’m waiting for that sweet potato brownie recipe. Last week I was thinking “OMG sweet potato brownies…I have to ask Juli to make these”. Then you bring up the awkward guy video. Every time that comes on, my daughters and I get a good laugh. AWKWARD. I feel awkward just watching it. OK…waiting on the brownies!

    OK…i made these over the weekend. EFFIN SWEET!!! i actually am not a fan of sweet potatoes, but these chips were awesome. Let me tell you how I made mine…first i tried frying a few on the stove top in coconut oil. YUM. Then, i had this brilliant idea. I was cooking bacon in the oven (only way i make it cause it comes out more delicious) i put the bacon on a rack on top of a lipped sheet pan place in the oven @ 350 until done to your preferred flexible-ness. ANYHOO, my brilliant idea? once the sheet pan had some grease drippings from the bacon on it, i added a little more coconut oil…then put the sliced sweet potatoes UNDER the bacon…BOOM!! thats right folks…sweet potato chips with bacon drippings…it was like Christmas in my mouth!! I don’t feel ridiculous being so excited about this on your blog…i am among others who worship the bacon. 🙂
    Just thought i would share.

    I make bacon in the oven too, flat on a sheet pan. I just so happened to have made some bacon right before I saw this recipe. So I sliced up a sweet potato and tossed them on the bacon greased sheet, and flipped them over to cover both sides. They came out great! Now I need to work on my knife skills. Seriously need a mandolin. And a food processor. And a drink.
