Are you crushing this New Year?! It’s honestly just making me overwhelmed. With some upcoming trips in the books and maybe traveling internationally by myself next month, my brain is always working overtime. So much so that I can’t fall asleep until 3 in the morning. And then the next night I’m worried I won’t fall asleep until 3 in the morning and that worry keeps me up. It’s become a vicious the 2 weeks or so. There’s honestly nothing to worry about or overthink, but I keep doing it. I’m worried about booking my flights, getting a ride from the airport to wherever I decide to stay, getting recipes done ahead of time, thinking up new workouts for you guys, getting posts done ahead of time in case wifi fails overseas, what will I pack with me on the plane, will I need lots of snacks, will I need an iPad, I don’t have an iPad, where will I exchange my money, should I get Global Entry, could I even get it in time, will I need a spray tan, I don’t want to burn, should I bring a jump rope, will I find new podcasts to listen to, should I read more books…this is what happens as soon as I put my head on pillow. It’s driving me insane!

On a lighter note, and because I mentioned books, are you as excited as I am about 50 Shades Darker coming out on Valentine’s Day!? There are so many people who talked sh*t about the first movie, but after I read then book, I loved the movie. And the guy who plays Christian is THE BEST, except for when you think of him as a f*cked up murderer in the show The Fall. But after seeing an extended trailer after The Bachelor the other day, I’m extremely excited for that movie. Who doesn’t love a little soft porn that’s socially acceptable? That sounded weird. I think I’ve been listening too much to the podcast Guys We F****d. I ran out of true crime podcast and moved on to dirty ones. Lovely.

WAIT. Soft porn….duh, THE BACHELOR. I don’t know why I’m even talking to you right now. I have episode 1 to finish up. I started it yesterday and got too distracted with work and didn’t pay attention to the sh*t show so it’s time to re-watch it with my full attention. You can’t miss out on any second of that show. It’s time to pick my favorites. I really should join a fantasy league, but, ain’t nobody got time for that. Ok, I’m gonna watch it while I make you guys a new recipe so stay tuned on the blog tomorrow for a little recap. And if you don’t watch The Bachelor, GET YOUR LIFE TOGETHER! It’s the best. It’s an absolute waste of 2 hours, but what the hell else are you gonna do in the winter time on a Monday night!? COME ON! Ok going to watch byyyyye!

PaleOMG Supreme Pizza Frittata

Supreme Pizza Frittata

  • Yield: 8 slices 1x

Ingredients

Scale
  • 1 pound hot italian sausage
  • 12 eggs
  • 1 cup pizza sauce
  • 1/4 cup fresh basil, torn into small pieces
  • pinch of salt
  • pinch of black pepper
  • red pepper flakes, to taste
  • 1 green bell pepper, sliced
  • 6 button mushrooms, sliced
  • 6 pepperoni slices
  • 2 cups arugula
  • juice of 1/2 lemon
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place a large cast iron skillet over medium heat. Add sausage and use a wooden spoon to break into small pieces, until no pink remains. Spread sausage evenly throughout the skillet. Turn heat down to medium-low.
  3. In a large bowl, whisk together eggs, basil, pizza sauce, salt, pepper, and red pepper flakes. Pour mixture into skillet and let cook in the pan for 5 minutes. Then top the frittata with green pepper slices, mushrooms and pepperoni. Place in oven to bake at 20 minutes.
  4. Toss arugula in lemon and olive oil and place on top of frittata before serving!

  1. I hate not being able to fall asleep at night because you have so much on your mind.. its the worst. Global entry is the best thing! It has saved me so many times from the dreaded airport lines! It takes a while to get an interview once you sign up for it.. so if you want it I would start the application soon. And about the iPad I use mine for just about everything I barely use my laptop anymore because I have it! Can’t wait to try this recipe! Thanks!

  2. Re: Global Entry–get it! For me, the whole process from online application all the way to getting my card in the mail took about 3-4 weeks. Since I’ve had it, it has never taken me longer than 15-20 mins from when I start deboarding the plane to when I’m out of customs/immigration and at baggage claim. And this is in the Miami/Ft Lauderdale area where customs is usually a 1-2 hr process! Completely worth it.

  3. So I’ve lived out of town for 2 years and now that I’m home I’m so excited to go all-out girl mode on the Bachelor! My friends watch on Tuesdays on Hulu so I may have to watch what I read on here. But we did a paper bracket because we wanted to make up our own rules instead of following the pre-set online ones. I have Raven winning because I think she will be a come out of nowhere one who sticks around longer than expected, but who knows! I don’t do much reality TV but I’m super psyched for this lol.

  6. I don’t know where you are traveling to, but I am excited for you! I have been overseas/on international trips a few times and found I have the best luck exchanging money right at the hotel or withdrawing cash from an ATM. If you use an ATM may just make sure you have a backup credit card or spare cash in the rare chance the machine sucks in your card and doesn’t give it back! ATMs at hotels or actual banks are the safest bet. Also make sure you let your bank know you’re going abroad so they don’t deactivate your cards!

  7. Just an FYI, if you apply for Global Entry and interview here at DIA, the first interview dates are now booked out until July of this year. Yay! Our tax dollars clearly at work. If you plan to be in different cities in the US this year, perhaps see if they have earlier interview dates? I unfortunately have to wait until June for my interview when I’m going to Cuba in February. Lovely… Good luck!!

  8. You know what’s very strange? The fact that that every time you talk about going out with friends and drinking only Perrier is super inspiring to me. Please keep telling me about the times your husband and friends get too drunk and you’re very sober, because it gives me encouragement to do the same and I hate alcohol! Anyway, I used to suffer from the SAME “sleep anxiety”, and you know what cured it? Supplementing with Magensium glycinate (it has to be glycinate because glycine is an important amino acid for calming the brain).. anyway.. you’re the best!

    1. Yes! I take Magnesium at night too, and (usually) sleep like a champ, now! I just got the Nature Made stuff at the grocery store and it works really well!

  10. Great tips above! Agree that global entry is worth it but it can take a while to get the interview. You might be able to do it at a different airport that you happen to be going through anyway more quickly (e.g. We live in columbus Ohio but we did our interviews in Detroit MI).

    Definitely let your bank and visa or whatever credit card know you are leaving the country so they can put an alert on your card. Getting money out of an ATM once at your destination is usually easiest bc it will usually come out in the local currency even tho you can select how much you want in US dollars (USD). I’d still take maybe $100-$150 in cash in 1s (for tips), 5s 10s and 20s just in case it takes a day or so to find a good ATM. Google about best ways to take out money in Bali for sure bc it does vary country to country (e.g. Scandinavia you can just directly pay with your credit car everywhere…Germany? Cash everywhere!)

    Finally: when it doubt while packing, leave it out. I went to Japan and Singaporean for 8 weeks with 3 v-neck tees and a single pair of jeans. My back thanked me AND I had more room for random finds plus a good excuse to shop (I need a scarf! Etc)

  11. Yaaaay, travel! I can’t wait to hear more details about your travels. I am hoping we can get our act together for a big trip later this year cuz my travel bug is itchin’! 🙂 I would check if your credit cards have international fees or not: mine does not so it is the best when traveling, especially since it seems like more and more places internationally accept cards now. If you do need cash, I have found the exchange rates are usually the best thru the ATM. I would also usually use the ATM at a bank.

You’ve gotten plenty of responses on the Global Entry already, but just wanted to reiterate that I applied for mine late last summer, and it took about 3 weeks to get approved, and then another few months before I was able to actually get an interview. This is at the Austin airport though, which is notoriously backed up, but it seems from a previous poster that that might be the same issue at the Denver airport. Two things you can do though: either 1) look at a different airport in a place you’re already traveling or any nearby airports that you could drive to easily OR 2) do what I did and sign up the earliest available interview but then check in once a day to check for cancellations and take that spot. My original interview was scheduled for November but by checking everyday I was able to get moved up to end of August. So, it COULD work out, but in any case, you travel often enough that, even if you can’t get the Global Entry in time for your solo trip, getting the TSA Pre-check in the long run would be worth it for you. Global Entry comes with Pre-check and is only $15 more than just getting Pre-Check by itself, so even if you don’t luck out with the interview on time, my advice (for what it’s worth) is that it’s worth the gamble if you apply now. You’ll definitely use the Pre-check in the near future.

    As for your other questions, I usually like to try to get a small small amount of local currency before I leave, just in case things are difficult to find or otherwise broken when you arrive. I only do a small amount though since usually exchanging stateside can have a high exchange rate. Definitely make sure to have one credit card with no foreign transaction fees to use, but also make sure to take a bank card, as I agree with other posters that withdrawing directly from an ATM is the best way to get local currency.

    Depending on how long you will be there (I’d say something more than 10 days), I’ve also found it super helpful to buy a local SIM card that allows international texts or calling. It’s usually cheaper than enabling international plans stateside, and you’ll get better service since it’s a local network.

    As for packing, if you’re not packing light enough to take everything in a carry on, I’d highly recommend packing at least one or two changes of your clothes and as many toiletries as you’re allowed (including anything prescription you need to take everyday) into the carry on in case your check in gets delayed. Nothing worse than arriving in a foreign country and not having the things you need!

    Finally, I recommend staying in hostels that are a little pricier and/or have the most great reviews. I find I love the ease of being able to meet other travelers that a hostel provides, especially compared to a hotel. Being a solo traveler in some ways makes me (a borderline extrovert/introvert) SO much more open to meeting new people in a way that doesn’t quite happen when you already have your people. But since being on your own can also cause your guard to rise up a little, I always spend a little more than I normally would to feel truly safe and comfortable. Enjoy solo international travel to the fullest–it’s your time to do literally whatever you want!

  14. I have the same issues with sleep. I try to go to sleep at a good hour so I can get my 8 hrs in, but then can’t fall asleep because I am worried that I won’t get enough sleep, which keeps me up, which makes me more anxious that I won’t get enough sleep. Its a vicious cycle. When you find a solution please share in a post.

  21. This was really good! My husband has been complaining about missing pizza since we started Whole30, so I made this to hopefully shut him up 😉 It worked! I left out the pepperoni, because it doesn’t appear that Whole30 compliant pepperoni exists, but the sausage and other items gave it plenty of flavor.
