“Hello darling, my old friend. I’ve come to talk with you again.” Maybe that’s not exactly how the Disturbed lyrics go, but darkness just didn’t feel right in this scenario. I mean, look how bright this noodle salad looks. But a hello did feel right. I’ve been spending most of my time on my podcast, on my fitness app, and on instagram stories. I’ve had a baby for 10 months now and I still feel like I’m getting my footing. I want to do a million things, but only have time for a handful. It’s a hard balancing act that so many people seem to navigate…except me. I’ll get there. I believe it. But until then, I’ll be showing up the best I can.
And that starts today with a noodle salad. I’m feeling like a salad series is on the way because I’m loving salads lately. I made a strawberry poppyseed dressing on instagram recently and I’ve been putting it on every veggie, both raw and cooked. I need to make it for Avery soon, but without honey, and see what she thinks. Now that we are entering 10 months, there has been a definite shift. For the last 4-5 months. Avery has eaten anything and everything, but now we have an opinionated little chica on our hands. She now shakes her head no and gets super frustrated when she can’t do something that she wants to. They say toddler age starts are 12 months, but I think we are officially there!
You know what my new obsession is? Below Deck. I know I’m about 10 years late to this one, but that’s the best part – I have SO many seasons to watch. I’m definitely a person who likes consistency in my life (jokes on me since I now have a baby) so when I find a show that I love, I watch it incessantly. So that’s what I do every night. I do all the parent duties, then I sit back and relax, and turn on my comfort food while I eat granola butter. I don’t know what it is about reality shows since I’ve had a baby, but I now love them more than ever. Maybe because it feels like I’m doing something naughty, ya know? Just peering into someone else’s life, judging away, thinking I know what’s best for these strangers while I strongly understand that I know absolutely nothing about anything. But one thing I do know is that I’ll have this salad for leftovers for the rest of the week and I like that. I like that a lot.
Thai Peanut Noodle Salad
- Prep Time: 25 minutes
- Cook Time: 10 minutes
- Total Time: 35 minutes
- Yield: 6-8 servings 1x
Ingredients
For the “peanut” sauce
- 3/4 cup peanut butter
- 1/3–1/2 cup water (amount will depend on the thickness of the peanut butter
- 2 tablespoons honey
- 2 tablespoons coconut aminos or soy sauce
- 2 tablespoons sriracha
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
For the noodle salad
- 8oz pad thai rice noodles
- 1/2 yellow bell pepper, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/4 cabbage, thinly sliced
- 1/4 red onion, thinly slice
- 2 carrots, julienned
- 1/2 cup cilantro, chopped
- 1/3 cup mint, chopped
- 1/4 cup fresh basil, chopped
- 3 green onions, sliced
- 1 teaspoon salt
- 1/2 cup dry roasted salted peanuts
- 1/2 teaspoon white sesame seeds
- 1/2 teaspoon black sesame seeds
Instructions
- Blend all peanut sauce ingredients in a blender and set aside.
- Follow directions on rice noodle package and cook noodles until al dente. Rinse noodles and place in cold water to keep cool and to keep from sticking to each other.
- Place the remaining veggie and herb ingredients in a large bowl. Sprinkle with salt on top. Add cold noodles and then pour peanut butter sauce on top. Toss to combined then top with roasted peanuts and sesame seeds, before serving.

i am so making this tomorrow! I had shoulder surgery and have been having some random aches and pains and just need something easy and delicious in the fridge for when i am too lazy or in too much pain to make something.
You know how they say to never make a new recipe when you’re having guests? I totally ignored that and made this when people were coming over for dinner. So glad I did because this is easy and delicious!
