It’s time to figure out your grocery orders for the week and make some colorful, delicious meals! Like I’ve said before, I like to spend my evenings on Pinterest, looking at colorful meals and seeing the creativity of the cooks and chefs out there in the world. I’ve talked about this cookbook before, but Ottolenghi Simple Cookbook is a constant inspiration to me. He creates the most amazing meals from the simplest ingredients. And that’s what I’ve been craving lately – some simplicity that’s packed with flavor. I’m making two of his recipes this week and I can’t recommend buying his cookbook enough. He’s so freaking talented! I hope this week’s dinner menu inspires you, gets you cooking from different books and blogs, and introduces you to different culinary styles and flavors!

Sunday – Mediterranean Inspired

Monday – French or Italian Inspired

Tuesday – Mexican or Latin Inspired

Salad: Ottolenghi Simple Cookbook Green Onion and Herb Salad (page 47)

Main: PaleOMG Taco Lasagna Casserole

Wednesday – Asian Inspired

Main: PaleOMG 15-Minute Salmon Poke Bowls (swapping out the shrimp in the recipe for sushi grade salmon)

Veggie: I Heart Umami Kimchi Pancakes

Thursday – Pasta Inspired

Salad: Watercress Salad with Avocado, Golden Raises, and Pumpkin Seeds

Main: Feasting at Home Orecchiette with Creamy Carrot Miso Sauce
