I hope these weekly dinner menus have been inspiring you because I’m feeling SO freaking inspired lately. I’ve been shopping more local, like going to our local fish market, and picking items based solely on what looks best. Instead of turning to what feels most comfortable since I make the same things most weeks, I’m pushing myself out of my comfort zone and falling in love with food in a whole new way. On Friday, I took Avery to the fish market and the fish monger said the halibut was super fresh, so I bought that! I’m always intimidated with fish because it sucks balls if you overcook it, so I used a heat thermometer for the fish time on fish, got it completely perfect, and ate it with coconut rice and mandarin orange salsa since it was the only fruit I had on hand. It was AMAZING. I loved it so so much.

I’m excited for this week’s recipes! My Pork Belly Tacos w/ Pineapple Salsa are a bit of a labor of love, but truly SO worth it. But luckily my Pizza Spaghetti Pie is only five(ish) ingredients so it offsets the work the next night. I also can’t wait to make this Israeli Couscous Salad since I’ve been cooking with couscous more often!     You could probably use trader joes fully cooked pork belly that would save some steps. I am currently marinating one in a Middle Eastern/Mediterranean pomegranate marinade that I usually use for chicken.

    I love these meal plans. As a busy mom of three it’s hard for me to figure out what to eat. I love to cook but it’s the meal plan that stresses me out. These have been so helpful. I also love that you don’t JUST highlight your recipes but other people too.
