It’s fall. That means every girl has a new pair of brown boots, including me, which I didn’t take off for the last 3 days I had them. Everyone is wearing scarves. And everyone wants a pumpkin spice latte from their coffee shop. I, for one, just want a pumpkin pie blizzard from DQ. For real. As soon as that guy comes out, I’m going straight to DQ and buying the biggest one they have. Yes, I know it’s not paleo. No, I don’t care. That thing could save a relationship, it’s that good. So worth the stomach ache later. Not really, but kind of.
Anywho, over the weekend, I spent one of my lovely evenings with my friend Sarah. I’ve talked about her many times on the blog, mostly because she’s pocket sized with the biggest heart. AND she loves food as much as I do. I tend to flock towards those kinds of people. So while we hung out on Saturday night, we made pumpkin cookies (non paleo style) and watched ‘The Girl with the Dragon Tattoo’. Talk about intense. Geez. The pumpkin cookies lightened the mood at least. I had two little bites of one and my stomach was growling for hours. Gluten, you stupid.
But to the point. I’m hoping you’re one of those people that love pumpkin as much as I do. Because if you are, you’ll love this post. For breakfast this AM I’m having…
Cinnamon and Maple Roast Pumpkin Bowls with Egg White, Bacon and Mushroom Filling!
- 1 small pumpkin, halved and de-seeded.
- coconut oil
- maple syrup
- cinnamon
- 3 eggs
- 3 rashers of bacon
- cup of chopped mushrooms
- black pepper
*Rub your halved and deseeded pumpkin with coconut oil, turn over do flat side is down and roast on 180′c for 45mins.
*Turn over pumpkins, drizzle over the syrup and cinnamon, and continue to roast for another 15/20mins (Judge by how caramelised you like your pumpkin)
*When there’s 10mins left on your oven timer, fry up your bacon, mushrooms and egg whites and sprinkle in some ground pepper.
*Take out your pumpkin bowls, fill with egg and bacon mixture, drizzle with a little extra syrup if you wish, and enjoy!

Woman, who needs DQ pumpkin blizzards with all this holy-pumpkinness? Your pumpkin granola is in my oven now! I have made that so many times. YUM. I sprinkle that on everything. The pumpkin ice cream is awesome but it comes out like a rock so I recommend those be popsicles or not frozen in one batch. I think I will make the pumpkin chili for our paleo potluck this week!

I made the pumpkin pie bars this weekend. I usually do not eat pumpkin pie at thanksgiving but I’ll admit, they’re good.
I also made the crockpot-egg dish. Unfortunately I didn’t follow your recipe exactly. Mine looks like dog food.

Love this! I made your Chipotle Chocolate Chili about a week ago and it was FAN. TAS. TIC. Might have to work in that Pumpkin Chicken Casserole, that sounds pretty delicious as well. My husband isn’t the biggest fan of spaghetti squash, but he loves pumpkin so this could be the perfect compromise!
I need to grow a pair and try the pumpkin cream chicken again. I made it about 9 months ago and it was a total flop. But I was fairly lame in the kitchen then. I’m sure it has everything to do with my lack of skillz and nothing to do with you or your recipe.
P.S. This is not pumpkin related, but aloo gobi is epic. Especially for breakfast. Right now. However, my husband can’t seem to remember the name and keeps calling it goo goo gumby.

Hey Kat! I think my tanks run pretty true to size but a few people have said they run a bit small. I am 5’7, 150lbs and I wear a medium tank and it fits great! Hope that helps!

My girlfriends and I had a “fall fest”…an evening filled with spiced cider, fall crafts, and fall-themed food items…I made your pumpkin granola and it was a big hit!!
My parents have owned and operated a pumpkin patch for about 25 years, so my childhood was spent picking pumpkins, decorating and being Mom’s guinea pig for new recipes. I quit eating pumpkin about 10 years ago.
However, I started Paleo about a year ago, and am thrilled to have all these recipes that aren’t sweet! And since I don’t have to pay for the pumpkin, it makes it that much more desirable to start eating again ;-)
My only recipe is a pumpkin roll. It’s most definitely not paleo, but Mom sells between 2,000 and 3,000 in the two-month time frame they’re open! Evidently it’s good!
The pumpkin pie recipe from Mark’s Daily Apple. Is FANTASTIC. I don’t bother with the crust, just make it in large ramekins. It’s been my pumpkin “pie” for the past 3 Thanksgivings. So tasty!!!

I made George’s Pumpkin Coconut Squares last night and they rocked. I read some of the reviews on his site that claimed they “never set up”. I can see where that might have seemed true: they have a LOT of good fats in them, a ton of lovely pumpkin and only 3 T of coconut flour. If you don’t let them cool down, to the point of being chilled even, they won’t be firm enough to pick up as a square. They’re like a firmer version of pumpkin pie filling, not a cake bar. Definitely making them again. Yum!

I love to use pumpkin this way:
I love to roast kabocha/butternut sliced in thin crescents with fresh garlic, salt/pepper in clarified butter/evoo.(think of these as croutons)
I caramelize onions on top of stove with 1 or 2 chipotle peppers and 2 tsp of adobo sauce. (think of these as the noodles)
and add both of these to my chicken soup. YUM. Thanks for all the great pumpkin recipes and links.
