High-Protein Pancakes – Simple & Easy Banana Protein Powder Pancakes

Simple is always better. Especially when I’m incredibly lazy on the weekend. Seriously lazy. I mean, I still always work out, but then I tend to not want to do anything else. So my cooking is extremely simple on the weekends. I make lots of eggs, some Applegate Farms precooked chicken sausage, and other people’s dessert recipes. I love trying out other bloggers recipes. Like Brittany Angell’s cosmic brownie recipe. I about cried when I tried that brownie recipe. Seriously the best thing you will ever taste. I swear. You have to try it.

Ok, let’s talk more about the weekend. So it started off on Friday, interesting huh? Well, my gym CrossFit Broadway does the CrossFit Games open workouts on Fridays. A bunch of us get together so we can do a quick, miserable workout and then drink together. I usually don’t drink because all we usually have in the gym refrigerator is beer. And well, beer is gross. I keep thinking that my taste buds will mature and I’ll actually enjoy beer at some point, but I don’t. I still tastes like dog food. But luckily this Friday, my friend Jeremy was oh so wonderful to pick me up some canned champagne. Anywho, after doing that god awful 14.3 workout and getting 108 miserable reps, I started chugging away. I never knew that champagne had such a high alcohol content. Well, my body figured it out pretty fast. My feet did the normal swelling how it always does, even with one sip of alcohol, and I felt a good buzz in no time. It’s always fun being buzzed with people you workout with. You think everything is funny. Especially watching other suffer through the workout you just did. And you REALLY think things are hilarious when you drink 4 of those little bastards. Man do they pack a punch on an empty stomach.

Well, after stuffing my face with some gluten free pizza and tucking myself into bed around 9:30pm, I woke up with one hell of a hangover. Instead of sleeping it off or eating my body weight in greasy food, I went straight to the gym. Sometimes a workout is all you need to cure a hangover. This was not that kind of day. My workout was sh*t and I felt worse afterwards. So I went grocery shopping to get it over with before the Sunday rush, then went straight home, ate some food and found my happy place right on the couch. I did not move from that spot until I had to get dinner. Then I ate dinner and parked my ass right back on the couch for some Modern Family and E! network.

The next day was a bit more productive. I actually showered and put on make up, then biked to brunch with friends. After biking home, I made these wonderful pancakes and then the brownies and proceeded on to watch three movies. Yes, three. First, The Hunger Games. Then Catching Fire (the second hunger games). Then Boondock Saints (had to celebrate St. Patty’s Day somehow). I also folded laundry and cleaned the kitchen. That’s productive, right?

Again, I like lazy weekends.

Damnit. I missed the premier of Total Divas. My weekend was not completely.

Stop judging me.

3 Ingredient Simple Protein Pancakes

  • Yield: 2-3 1x

Instructions

  1. Mix together bananas, eggs, and protein powder until well combined.
  2. Place a pan or pancake griddle over medium heat. Grease the pan with a bit of oil. Once pan is hot, add a large spoonful of the pancake mixture to the pan, about 3-5 inches wide.
  3. Sprinkle chocolate chips on top of the pancakes.
  4. Once the pancakes begin to bubble, flip them. Cook for about 1 minute each side, depending how hot the pan is.
  5. Regrease the pan, as needed.

    1. I actually tried with Gold Standard-Chocolate Malt and also mixed in 1/2 cup of instant oatmeal (uncooked). The outcome was great! So I guess to answer your question- I believe any protein would suffice. Hope this helps

  2. This was all de ja vu for me… I had a few glasses of wine after the open workout on Friday and woke up with a killer migraine Saturday and spent the majority of the day on the couch. We watched The Hunger Games and was going to watch Catching Fire but since I practically slept through The Hunger Games, I settled for some Keeping Up With The Kardashians. Yay for lazy weekends!

  4. OMG, I thought I was the only one who thought that beer tasted like dog food! Not that I’ve actually ever tasted dog food. Champagne makes me feel like crap too, unfortunately I love the stuff. These pancakes look great, like all of your other recipes, will be trying them soon. I don’t like mornings so this is perfect for breakfast in my house!

    1. Beer isn’t THAT bad but it is an acquired taste. I never drank beer before July 2011. I was with a group of guys in Nijnmegen, Holland for the annual “4 days March”. We didn’t think to bring anything with us because we assumed there would be food/drink provided more often than just breakfast and dinner. The only thing that was open most of the time at the military camping area was the beer tent. After that week beer doesn’t bother me anymore.

  5. Ugh, yeah, drinking on an empty stomach is the worst. That happened to me last week — three cocktails on an empty stomach and then I tried to make up for it by eating sweet potato fries. Woke up at 2 a.m. with a pending hangover that I mostly managed to kill by drinking a liter of water, but still felt like crap the next day.

    These pancakes, though, look like a hangover-killer for sure! A little syrup, some of those chocolate chips…yes, please 🙂 Thanks for sharing!

  6. I totally hate beer! And everyone seems to think that will change if I just try their favorite beer but let me tell you, it hasn’t. Guys like to tell me that beer is an acquired taste, but if I haven’t acquired a taste for it by 31 after all those ships of someone’s fave beer I’m giving up! I like hard cider, or fruity girly drinks with cherries and umbrellas! *sigh* Anyways, I saw that magic brownie recipe on facebook yesterday I think and I quickly scrolled past it because it looked so good I would probably eat the whole batch but now that you linked to it my willpower is gone and I have to try them…thanks a lot Julie!!! 😉

  10. Every time I try to make these damn things they turn into scrambled eggs with bananas in them.. I don’t get what I’m doing wrong. 🙁 They taste great, but your picture looks like real pancakes, the ones I make don’t even have the same texture as your picture does. Whats your secret?

    1. hahaha mine turn out the exact way, even using a stick free pan with coconut oil. Maybe I am too anxious and I flip them early?

  16. AH!! I’m usually pretty skeptical about protein powder in pancakes, but these were so good! I could barely taste it. I whipped up everything in my blender including a dash of cinnamon, making it a breeze for cleanup. Now I have the best go to recipe for healthy pancakes!

  17. Hi there. New to Paleo. I see you use Formulx Protein Powder in a lot of your recipes. I was wondering if it had to be that brand? I am sure you have tried a bunch of brands, did you find this one to be the best? It’s kiunda pricey, so I was wondering also how far the “26 serving” container goes with your recipes. How often do you have to buy it?

    1. nope, it doesn’t have to be that brand! however, some of the recipes like this one or the waffles could be different when using a different protein powder

  22. These pancakes were absolutely horrible. They burned on medium heat and they burned on low heat. We followed the recipe completely. Never trying these again. Yuck!

  23. AMAZING! Even my 2.5 year old loved them. I used 2 egg whites instead of 1 egg because I’ve been eating so many eggs lately I wanted to mix it up! They turned out great, and I am one of the worst cooks I know lol They did get brown fast but they were not burnt, just the color they were. I also blended them in my blender. Seriously thank you for this recipe, this is my new favorite protein pancake recipe!!

    For some reason my phone won’t let me click on the stars but it’s a 5 star recipe for us!

  24. Also, I used Isopure protein powder. It’s the only one that agrees with my stomach. I might have to try formulaX one of these days to see how I do with it! Isopure is hard to bake/cook with, I think because it’s no carb. But my pancakes were still perfect!

  25. Made these for Mother’s Day and they were delicious. Been trying to get my mom to eat better and we allnreally liked this recipe. I used my favorite Arbonne Essentials Vanilla Protein which is vegan, and gluten-free. Very moist texture too!

  27. I made these this morning! I used almond flour instead of the protein flour and I even added like an 1/8 cup of ground flax seed. Worked well! Thanks! I didn’t use chocolate chips. I did put a little applesauce over the top of the pancakes. I was going to warm up some frozen blueberries to put over them, but ran out of time.

  28. I have pancake-making deficiency disorder. Why can’t I make a descent pancake? I made these, and I can’t seem to get them firm without burning them. I flip them and they turn into mush, or I cook them too long and they burn. Disclaimer – I did use Paleo Protein powder, but still even with “normal” pancakes I seem to have issues. Anyone? Advice? Am I cooking at too high heat? Is a griddle better than a pan? I really want to be able to make pancakes for my little guys! Thanks! PS The taste was amazing, consistency, not so much.

    1. Okay, I was skeptical — but these came out awesome and tasted wonderful. There are some tricks to those who couldn’t get their pancakes in good consistency, burnt or otherwise.

      1) I didn’t use a protein powder; instead I used 4 (large) eggs to 2 (large) bananas in proportion. It doesn’t hold if there is more banana matter and gets scrambled. 2) Use medium-low heat. It takes a bit longer to cook, but this is the only way I could avoid burning (unless you blended everything evenly). 3) Use a smaller sauce pan as the batter doesn’t behave like regular; so you can make a ‘thicker’ but slower cooked pancake.

      So, there. I hope that helps those who got them burnt or scrambled :-).

      P.S. I substituted a quarter cup of blueberries and mashed them like hell into the batter.

  31. These were awesome. I am a Paleo newbie and they definitely helped with my no bread cravings. I changed they powder to 50% almond powder and 50% coconut flour they came out great!!

  32. Love these pancakes. Your recipe called for protein powder, which I thought might allow them to keep their shape. It did help a little but I had a hard time keeping them in pancake form….ended up looking like scrambled eggs. Topped with some almond butter it was so good, just not pretty. Thanks!

    1. Mine didn’t scramble, but my batter was too runny and my pancakes would burn before cooking. I did add some unsweetened cocoa powder and that helped. I want to try adding a 1/4 cup almond flour.

  33. I made this with a UK protein powder, which isn’t the most natural in the world but I am using it up before I switch to a better brand. The problem was, I found this very sweet! Since cutting out a lot of carbs and sugar from my diet, I’ve lost my sweet tooth. Next time I’m going to leave out the vanilla and see what it is like – don’t know if it will be too eggy. Going to try the lemon raspberry pancakes tomorrow. But my Mum loved these!

  34. I didn’t have any protein powder so I used about 2 Tblsps of coconut flour. I added a dash of nutmeg and two dashes of cinnamon. They were great! Side note: I’m at sea level. Not sure if that makes a difference for how much coconut flour to use.

I didn’t have any chocolate chips …. and I am going to try the spinach puree next time for some extra nutrition. So glad I found your blog!

  40. These pancakes didn’t really stick well for me for some reason. Maybe I just need to use more butter or oil but it was really mushy. However ugly my pancakes were they were yummy but not really fluffy at all like pancakes. I’d make it again in a pinch though 🙂 it’s so simple and quick!

  42. I took had an issue with the sticking in the pan no matter how low I turned the heat. I tried two pans, more coconut oil….still stuck. I will try again this weekend and mix it up more with the blender. The taste was super yummy. My teen kids loved them too! Wonder if they would turn out if I baked them?

  45. These pancakes are my every morning staple! My heartfelt thanks for sharing. Simple to make. And I’ve added a whole lotta cinnamon and shredded coconut in lieu of chocolate chips. Delish! As for Formulx. That is the only protein powder I use too. It doesn’t bother my digestion. It’s awesome!!! Happy Sunday Funday meal prep! Cheers! 🙂

  46. Thank you for the idea! I dont use protein powder but I do love pumpkin and fresh ground almond butter,
    1/2 c fresh ground almond butter
    1/3 c canned pumpkin
    2 large eggs
    pumpkin pie spice
    2 packets of splenda (use what you use normally)

    add almond butter to unbeaten eggs, beat together(binds ingredients together better I have found), add pumpkin, then sweetener.
    on small non stick w/butter pour 1/8 cup batter, shake a little to spread, cook till slides easily, then slide out of pan onto waiting spatula, flip back into pan, cook until brown. slides right out. Dont make too big or you get a massive fail lol

  47. Awesome recipe! Just got hooked on protein powder. I used Vega chocolate protein powder here and it worked great! Such a delicious, nutritious substitute for (paleo/nut/gluten free) flour or nut butter in common paleo pancake recipes. Well done, Juli!

  48. I made these tonight after having a craving of something with substance and sweeter! I’m currently in bikini prep, so i needed something clean also! I made this recipe exact with the exception of adding in a tablespoon of coconut flour, a teaspoon of baking soda, and a splash of unsweetened vanilla almond milk (literally a small splash!) and they came out awesome!! Same exact texture of pancakes! I also used ALLMAX Vanilla protein, and they tasted perfect! I was able to make around 8 medium sized cakes.

    I was curious if where was a way to get the nutrition of each cake? Also, would you be able to sub the eggs for egg whites?

  49. These were delicious and so simple. I followed the tips, blend the batter and cook then on low at first so they don’t burn. I cooked them with coconut oil, and heated up some blueberries as a topping. Perfect weekend breakfast, and my sweet toothed OH loved them too!

  50. In defense of beer lovers out there, beer only taste like dog food when you drink the cheap domestic crap. Try some of the brews from your local breweries.
    Thanks for the recipes. I usually stick to the same breakfast most mornings so this will be a nice change.

  52. Like this recipe; thanks wanted a protein based pancake to help me go 24 hours without sleep… less food, low sugar caffeine seems to help. But protein is really the most helpful, thanks.
    Your drinking tradition and CrossFit workout is awesome; and according to Drunk History of Paul Revere, the men that were willing to join the militia got free beer (hopefully after shooting and military drill practices, instead of while shooting guns(?)).
    4/5 stars because there was not an alternate protein source given. Using sweet trail mix, ground up, in the ratios you gave. Probably adding baking powder for some fluffiness too; and mixing for 10 people so I’m using a few more bananas, eggs, and including flour. Also adding sugar and vanilla to the mix.
