I hate when you have to pee but you kind of forget about it while you are driving, until you get in your house, then suddenly you’ve pulled your pants down in the living room (in front of your roommate) as you run to the bathroom. No? That’s never happened to you? Cool.

My Colorado world is very quiet right now. It’s probably because this soccer player named Tebow is playing right now. That soccer playin’ sonofab*tch. I’m kidding, I know Tebow plays tennis. But I’m pretty thankful for the calmness among the world. You know why?? BECAUSE A MARATHON OF GLEE IS ON! Holy sh*t balls. They are dancing to ‘Barbara Streisand’ by Duck Sauce. No no, not dancing, flash mobbing. I seriously want to flash mob more than anything in the world. I wish I were kidding. I’m a really terrible dancer BUT I have no shame so I would be epiiiiic in those situations.
Hey so you know how I’ve talked about having this stuff called acne, it’s still really stupid dumb. So I got a peel done. If you don’t know what that is, the jist of it is…they spread acid on my face, it burns really bad, then my face peels off. SH*T I’m sexy. These men be chasin’ me down! That was a lie. At least CoverGirl is still begging for me to be their new spokes model. Begging.
But seriously, my face lady told me not to pick at my skin. My peeling skin. Are you effing kidding me? Have you ever had a sunburn that peeled? Did you just let the skin sit on your body as you went on with your day? Sh*t no you didn’t. That’s weird, and gross. It’s like having a booger hanging out of your nose and you not picking it because it’s not “socially acceptable” to pick your nose in public. Complete bullsh*t if you ask me. So I’ve been picking…a lot. Why else do we have nails? Duh.
Almond Flour Coconut Waffles
- Yield: 1-2 1x
Ingredients
- 1.5 cup almond flour/meal
- 2 eggs, whisked
- 1/4 cup canned coconut milk
- 1/4 cup unsweetened shredded coconut
- 1 tablespoon arrowroot powder or coconut flour
- 1 tablespoonraw honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon
Instructions
- Plug in your waffle iron. You don’t have a waffle iron? Why? Because it’s the most pointless tool in the kitchen and is only useful for one kind of food. True. But buy one. Waffles are awesome.
- Whisk your eggs in a medium-large sized bowl.
- Add your coconut milk and whisk together with eggs.
- Next add your almond flour and mix together.
- Then add your shredded coconut, arrowroot powder, baking soda and mix together.
- Lastly, add in your honey, vanilla, salt and cinnamon. Mix together thoroughly.
- Pour into your waffle iron and cooking until cooked through. It took about 4 minutes for mine to cook through and crisp up.
Notes
This made 3 full waffles for me.

Is the mixing sequence in your Almond Flour Coconut Waffle recipe intentional or, perhaps, the sequence that simply occurred as you created this? In other words, did you deliberately not do the traditional mix all wet together, mix all dry together, and then combine?
Either way, delicious recipe (tried it yesterday)!

Made these for the family with Almond flour chicken breasts for some chicken and waffles. The flavors work perfectly together!
Staying with my parents. No waffle maker. Added about 1/4 cup of almond milk to mix and made pancakes. Served with 1 cup of mixed berries with a squirt of lemon and a bit of vanilla (nice measurements I know 😉 and 1 tsp agave syrup all combined in a food processor instead of syrup! ( the berry sauce is adapted from Jane’shealthykitchen.com). Thank you again!

Oops, should have stated I omitted the shredded coconut and cinnamon and increased the vanilla because I wanted it to be as close to a “regular” waffle as possible.
These have become a weekend favorite in my house. My 3.5 year old absolutely loves them! I use 1/2 cup of coconut milk, so I can get a little more out of the batter. They also make excellent leftovers during the week. I refrigerate them and then pop them in the toaster to heat them up slightly. An excellent recipe, thank you!
Just got a waffle maker and I can’t wait to try these! One question though, how important is the honey? I can’t have any sugar right now (wah!!). Could I substitute with some stevia? Or just got without a sweetener?
Nevermind! I just made them (SO GOOD!) and I skipped the honey and just used one packet of stevia. Can’t imagine how awesome these would be with maple syrup – but they were great with some almond butter smeared on top.

These are super yummy, but I agreed with peeps who said they are very thick, think next time I will try more milk also. Is there a reason for the shredded coconut? That’s not my favorite and I might try without it, but wasn’t sure if it is key to the recipe. I have kids who I am working on adapting to Paleo as I am pretty sure my daughter has some degree of intolerance to gluten. She has been asking for waffles so I’m super grateful!
