All I’ve been craving in sweet potatoes, nutella, chocolate, and ummmmm more sweet potatoes, in fry form. That’s all I’ve wanted. Thankfully I’ve been eating other stuff, but I don’t know what the hell is going on. No, I’m not pregnant. And no, it’s not that time of the month. You should know that by now if you’ve read my blog regularly. Gross. I’m gross.

I kind of want ice cream.

Ok, enough about food. This blog is a food blog, I shouldn’t be talking about it. Just kidding. Let’s talk about these banana breads. I wanted banana bread the other day and ended up making it without nuts or seeds, which I haven’t done before. I’m not really sure if a coconut is a seed or a fruit, but I don’t really care because my body gets along with coconuts. I’m sure someone will tell me on my blog. That’s usually how I learn stuff.

I got my nails AND toes done yesterday. My feet feel lighter. I’m pretty sure it’s been 7 years since I got a pedicure. SEVEN YEARS. Do you know how many calluses build up in 7 years? While doing CrossFit. And wearing shoes that don’t take very good care of my feet. Either way, my toes look pretty good at this point. I have ugly toes so I need as much help as I can get. I’m so excited to get sandals.

Never once did I think I would say that. My life is so different compared to last year, it’s ridiculous. Last year, I was wearing CrossFit clothes constantly, working out multiple times a day, never taking off my tennis shoes (mostly because they smell terrible), Rx’ing every workout, and rarely taking off my headband. I now get my toes and nails done, suck at workouts, style my hair about 60% of the time, drink bloody marys more often than not, and shop online more than I ever thought I would. ModCloth is doing well off of me. I’m even going shopping for jeans twice in one week after crying in the dressing room last time. But I’m definitely getting jeans this time around. I’m not letting any jeans get me down, like I would have last year. Anyone know a good seamstress in Denver? I think I’m gonna need it.

I just ate sweet potatoes and there is grease on my keyboard. I’m a terrible blogger.

So I was sitting at home thinking about making banana bread and I came to this site to see if you had a paleo version and lo and behold it was on the front page! Awesome, thank you!

Is there anything I can sub for coconut cream concetrate? I have coconut cream. If I put it in the fridge, can I just scrape the cream off top? Thanks!

    1. Kermit says:

      Great recipe,
I used coconut cream/scraped off the top, thick stuff and it works out well! Thank you

I just made a modified version of these – delicious! I didn’t happen to have any dates, but I have a lot of prunes sitting around, so I subbed prunes. I’m sure it would be even better with dates, but it’s pretty awesome with prunes. Also, I didn’t have coconut butter, but I ground dried coconut in a spice grinder to make a paste. Seemed to do the trick! Thank you for the recipe!

Um, I made this, and I am not that good at cooking, and it was AMAZING! I brought it in for my coworkers and they all loved it. Thanks!

I just put these in the oven. The only thing I changed was….nothing! Can’t wait to try them.

I made all three of these for my friend’s birthday party today. They were a huge hit and a lot of guests asked me for the recipe!

  8. Anye says:

What is the texture supposed to be like when these are done?

I made muffins with this recipe and ended up cooking for an hour total and they are still mushy on the inside, poking a toothpick in never comes out completely clean (though it has come out mostly clean since the 30 minute mark, the results hadn’t really changed since then). I don’t know if that’s an artifact of the gluten free recipe or not since I’ve never baked with these ingredients before.

The taste is good but my honey is afraid it’s not fully cooked. I can’t see how muffins cooked at 375 for an hour wouldn’t be fully cooked though. The only thing I can think of I might have done wrong was, I wasn’t sure whether you are supposed to reconstitute the coconut cream extract (per package directions) or leave it as is?

    Thanks!

Do you use any type of dark chocolate chips for this recipe or a certain brand? And does anyone else get stomach upset with coconut products? I love LOVE coconut but man it sometimes does a number on my digestive system! Thanks!

    1. juli says:

i usually use enjoy life chocolate chips

  10. Trisha says:

Coconut cream concentrate. I watched a video about using it (still have not done so). It says to put the jar into a hot water bath to melt, and then stir it and then use it — as it sits in the jar now it’s totally and clearly separated. So, is that what this would require? Did you use melted / liquid state coconut cream concentrate?
