All I’ve been craving in sweet potatoes, nutella, chocolate, and ummmmm more sweet potatoes, in fry form. That’s all I’ve wanted. Thankfully I’ve been eating other stuff, but I don’t know what the hell is going on. No, I’m not pregnant. And no, it’s not that time of the month. You should know that by now if you’ve read my blog regularly. Gross. I’m gross.
I kind of want ice cream.
Ok, enough about food. This blog is a food blog, I shouldn’t be talking about it. Just kidding. Let’s talk about these banana breads. I wanted banana bread the other day and ended up making it without nuts or seeds, which I haven’t done before. I’m not really sure if a coconut is a seed or a fruit, but I don’t really care because my body gets along with coconuts. I’m sure someone will tell me on my blog. That’s usually how I learn stuff.
I got my nails AND toes done yesterday. My feet feel lighter. I’m pretty sure it’s been 7 years since I got a pedicure. SEVEN YEARS. Do you know how many calluses build up in 7 years? While doing CrossFit. And wearing shoes that don’t take very good care of my feet. Either way, my toes look pretty good at this point. I have ugly toes so I need as much help as I can get. I’m so excited to get sandals.
Never once did I think I would say that. My life is so different compared to last year, it’s ridiculous. Last year, I was wearing CrossFit clothes constantly, working out multiple times a day, never taking off my tennis shoes (mostly because they smell terrible), Rx’ing every workout, and rarely taking off my headband. I now get my toes and nails done, suck at workouts, style my hair about 60% of the time, drink bloody marys more often than not, and shop online more than I ever thought I would. ModCloth is doing well off of me. I’m even going shopping for jeans twice in one week after crying in the dressing room last time. But I’m definitely getting jeans this time around. I’m not letting any jeans get me down, like I would have last year. Anyone know a good seamstress in Denver? I think I’m gonna need it.
I just ate sweet potatoes and there is grease on my keyboard. I’m a terrible blogger.
Banana Bread 3 Ways (nut free)

- Yield: 4-6 1x
Ingredients
For the banana bread base
- 6 bananas (brown ones are sweeter)
- 4 dried dates, pitted
- 4 eggs
- 1/3 cup coconut butter
- 3 heaping tablespoons of coconut flour
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1–2 teaspoon cinnamon
- pinch of salt
For the variety
- Sliced banana
- Dark chocolate chips
- Dried strawberries (diced) and dried blueberries
Instructions
- Preheat oven to 375 degrees.
- Add dried dates to the food processor and puree until you get a lumpy paste.
- Then place bananas in the food processor and pulse until completely pureed.
- Next add eggs and coconut butter and puree.
- Then add coconut flour, baking soda, baking powder, vanilla extract, cinnamon and salt.
- Pour batter into three small baking bread dishes.
- Add sliced banana on top of one, then pour in as many chocolate chips as you would like into another and mix with a knife to incorporate, then add dried strawberries and blueberries to the last one and use a knife to mix well.
- Place all three on a baking sheet and into the oven for 40-45 minutes until you poke each one with a toothpick and they come out clean.
- Let rest for about 5 minutes then slice.
- Love life.

These are some of the best muffins I have made! I used 5 large bananas and placed into muffin tin (about 15). I added Enjoy Life dark chocolate chunks and walnuts. YUM!
I just started the paleo diet and I want to start making snack foods like this yummy banana bread but I am nervous that it still isnt the greatest to eat because it could still be fatening. Would you suggest I wait until I am more into the diet to start making these kinds of things or think its okay to do it now? thanks

I just made this recipe with the wrong cooking apparatuses:
– Blender instead of food processor
– Random glass pans instead of bread pans
And with the wrong ingredients:
– Prunes instead of dates
– Coconut oil instead of coconut butter
And then I put them in for the wrong amount of time:
– Toothpick was clean at 28 minutes instead of 40
Juli, your recipes are so awesome that none of the giant baking fails above seem to matter. These pans of paleo goodness smell freakin’ FANTASTIC and I bet they’re going to taste even better!
So I posted yesterday about the size pan. The mix was so yummy and all I had was a normal size pan. We’re you talking a small loaf pans? Or what was the measurement. I followed the recipe to a T but it didn’t make enough to be split in 3 pans, so I put it all in one. I had to cook it longer almost an hour. The toothpick came out clean, but the only piece that was edible was the end piece. The rest just had a funny taste and odd consistency like that of a really eggy/moist(I hate that word) loaf. The mix was delicious…so was it the pan? Do i need smaller pans or should i mAke muffins, is it something else? i would love to try it again as I am trying to convert my 2 year old and 4 year old…. Any thoughts would be greatly appreciated
I would try muffins next time. I used the smallest loaf pans I could find but not sure what the measurements were.
Just made this recipe….with the exception of making the coconut butter (made it with a blender….going to buy a processor today!!) this recipe was super easy! I was only able to fill 2 tins (??) so hoping it works out cause it smells delish!! Made one with enjoy life choc chips and one with banana slices….mmmmmm…..banana bread (insert gross drooling sounds here).
Mine only filled 2 small pans also but they are delicious!! My new favourite banana bread recipe!
One of my favorite Paleo banana breads yet! It had a great sweetness to it (dates are so delicious!).
I used almond flour instead of coconut because I was out.
I didn’t use a loaf pan- just used a regular glass baking pan (8×8). I cooked for 40 min- may cook longer next time, my toothpick came out clean but it was still a little moister on than I prefer (but still good!).
Yum!

Another delicious recipe, Juli! I have been making your banana bread from the french toast recipe for months now. The bread is totally awesome even without making it into french toast. But – like you – I started having some *ahem* issues with nuts. I tried this recipe instead and fell in love! What a perfect snack!
