The hubs started eating oats about a year ago and I started doing the same a couple months ago. When I first went paleo back in 2010, I believed oats were the devil. I believed that if I ate them, my gut would hate me and in turn cause me longterm health issues and I would die early. I mean, I was 22 in 2010 so I was quite dramatic. This means I went almost 10 years without eating oats. Then 2020 hit and I thought, if Jackson can make it through this year and our world hasn’t just combusted on us because it just simply cannot stand the human race any longer…well then I can eat some oats. And guess what? I’ve never felt better! I don’t eat them every day because I prefer a breakfast filled with animal based protein and lots of vegetables (I just feel better when I eat that way), but I do eat oats at least once or twice a week. And it’s lovely. They are comforting, filling, and packed with fiber. And if you haven’t heard the news, my word of 2020 is fiber.
In the past 3 months I’ve been concentrating on getting in enough protein and enough fiber every single day. I track my food most days to ensure I’m getting adequate amounts of both. I never really thought about fiber when I was strict paleo. I simply thought I was getting in enough since I was getting in lots of veggies. But turns out, I was 1000% wrong. My diet was hella lacking when it came to fiber. Until I started eating beans and oats this year. Now I have more energy, my skin is clear, and my gut has never felt better. I can’t even remember the last time I had a stomach ache in 2020, which is insane, truly. I tell you all this just to remind you that we don’t know everything. We don’t really know shit. We think we do, then our bodies change and we have to figure it all out again. When I first started paleo, I thought it was the end-all be-all. But as I got older and I found out more, I came to find out that it wasn’t the end-all be-all for me. My point is – BE CURIOUS. Try new things, test a food out that you think may be the devil, and be curious to things you think may be wrong. You may have some pretty positive experiences from your curiosity.
Speaking of curiosity, I think that may be my word of 2021. I’ve never had a word for a year, but I think I’m going to change that this year! And that all stems from my recent birth chart reading with She Sees The Stars. She told me 2021 is going to be all about spiritual curiosity for me, which I’ve already felt more of this year than any of my previous 32 years on this earth. She told me to stay open with different types of spiritual experiences, even though I may not love all of them. So that’s what I’m going to do this year – I’m going to stay curious, stay open, and hopefully my next fiber experience is coming my way, but in spiritual form. This just got so woo woo, huh? Well I’ll cut things off and save the rest for the podcast this week! In the meantime, it’s time for me to eat some beans. Kloveyoubyyyyyye!
Blueberry Oatmeal Bake
- Prep Time: 15 minutes
- Cook Time: 1 hour
- Total Time: 1 hour 15 minutes
- Yield: 6-8 servings 1x
Ingredients
- 20 ounces frozen wild blueberries
- zest of 1/2 lemon
- juice of 1 lemon
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup milk (oat, nut, or whatever you prefer)
- 2 tablespoons ghee, melted
- 3 tablespoons maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups gluten free old fashioned oats
- 1 teaspoon baking powder
- pinch of salt
- yogurt, for garnish (whatever yogurt you prefer)
Instructions
- Preheat oven to 350 degrees F. Grease a baking dish (8×8 or 7×10).
- In a medium bowl, toss together blueberries, lemon zest and juice, maple syrup, and vanilla extract. Pour mixture into baking dish.
- In another bowl, whisk together milk, ghee, maple syrup, egg, and vanilla extract. Then fold oats, baking powder, and salt. Pour mixture on top of blueberries and spread out evenly throughout dish.
- Place in the oven to bake for 1 hour. Top with yogurt before serving!

I love so many of your recipes and this looks divine. Really looking forward to making it and I’m sure it’ll be amazing! Do you think protein powder could be added in to give this a protein boost? If so, should other ingredients be adjusted to account for the additional dry ingredient? I usually use an unflavored, unsweetened pea protein powder (Nuzest). Thanks for always sharing such great content and recipes!
i’m sure that would work, but i can’t say for sure on any changes that would need to be made since i haven’t made the recipe that way.
Looks delicious! Definitely going to make this. I’m mostly paleo but can’t live without oats in the morning. Have you read The Carnivore Code by Dr. Paul Saladino? Worth checking out if you haven’t. It gives a different perspective on phytochemicals in foods and something else for us to open our minds to and consider. Reducing phytochemical load and including desiccated organ meat capsules in our diet has made a big difference in my family’s health this year.

I just made this today. Fresh blueberries I didn’t want to spoil. It looks delicious. Sorry to say it needs a little boost of flavor. I even added some cinnamon to both the bottom and top layer along with an extra Tbl of honey each layer. Rest I followed exactly. Not to worry. I’ll treat it like fruit granola with soy milk and more cinnamon. It’ll be good.

Made this for this week’s breakfasts and I love it! It’s not overly sweet which is perfect for first thing in the morning, as I don’t like to start my days in a sugar coma. The lemon is perfect with the blueberries. This and your chocolate chip oat bars are my favorite easy breakfasts! Thank you!
This recipe is amazing! I have made it twice this week, such a hit with our boys. I made it as written and added chopped walnuts to the topping. The second day (this morning), I subbed the 20oz of frozen berries with 20oz of chopped Honeycrisp apples and added cinnamon to the apples and added chopped almonds to the topping. For the sweetener, the second time around, I tried equal mixture of Lakanto Golden Monkfruit and Lakanto Maple syrup (following recipe measurements). Just as delicious. I cooked the apple variation for 45 mins. Our boys were waiting by the oven for this to come out. This will be on regular weekly rotation. Thanks
