What is up with fall and it making me crave everything that sounds like fall? Like these pancakes. Don’t they just sound like fall? I think they do. Except I always hated caramel covered apples growing up. How are you suppose to bite into one of those things? And actually enjoy it? With sh*t in your teeth?! I mean COME ON. No one likes that. Ok, I’m done complaining. Caramel and apples together, with no stick involved, is a beautiful partnership.
So this weekend was pretty wonderful. On Friday night, Laura and I ate our favorite burger at Finley’s Pub, had a beer, and watched a movie. We are truly like a married couple. Minus the sexual attraction to each other. Or fights. We don’t really disagree about many things. But we both fit on our couch, lying feet to face, under one blanket. Lucky Laura gets my smelly feet in her face. Jokes on her!
We decided that we needed to catch up on the last season of The New Girl. Have you not watched this show? YOU HAVEN’T!? ARE YOU HIGH? You see, I don’t even really like tv shows (other than anything on the food network…obviously) but this show is pretty much the best show in the entire world. Oh wait, I love Glee too. I’m such a walking contradiction. Anyways, The New Girl is stupid hilarious. Like hold-your-crotch funny. So we watched a couple episodes since the new season starts this month.
Best line of the show, “I don’t really like being around old people. They’re like walking raisins.”
Don’t think that’s funny? Whatever.
The show did teach me an important lesson though. Don’t backslide. Ever heard of backsliding? I hadn’t either. But it’s when you go back to the person you broke up with, when you’re lonely. Being lonely always leads you back to comfort. That’s why I tend to eat ice cream on Friday nights. I’m kidding. I meant brownies. So you singles out there, get with the program. Don’t backslide. It’s dumb.

Caramel Apple Pancakes (nut free)
- Yield: 3-4 1x
Ingredients
For the pancakes
- 1 cup coconut flour
- 1 cup carton coconut milk
- 1/4 cup coconut oil, melted
- 7 eggs, whisked
- 1 heaping tablespoon raw honey
- 1–2 tablespoons cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- pinch of salt
For the caramel
- 12 dates, soaked in water for 30 minutes, pits removed
- 5 tablespoons canned coconut milk
- 3 tablespoons water
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- pinch of salt
For the apple toppings
- 3 apples, cored and sliced thin
- 3 tablespoons coconut oil
- 2 tablespoons Coconut Cream Concentrate or homemade coconut butter
- 1 tablespoon raw honey
- 2 teaspoons cinnamon
- pinch of salt
Instructions
- I know, I know, it seems like a lot. It’s not terrible. Just put on your big kid pants.
- First make your apple topping. Add your coconut oil to a large skilletover medium heat then add your sliced apples.
- Let your apples cook down, moving them to around to make sure they do not burn. Let them cook for around 10 minutes until they are nice and soft/wilted, then add your coconut cream concentrate, honey, cinnamon and salt.
- While your apples are cooking, add your soaked dates (without the water) to your food processor and begin to puree.
- When the dates have begun to break down, add your coconut milk and water. Then add your vanilla extract, cinnamon and a pinch of salt. Puree until smooth and the date caramel looks like real caramel.
- Now mix together all of your pancake ingredients.
- Place a large skillet or pancake griddle over medium heat and pour your pancake mixture onto your skillet. I made my pancakes 3 inches so they were easy to flip. Cook on both sides for 2-3 minutes. My mixture made 13 pancakes.
- Then stack your pancakes. Pancake, caramel, pancake, caramel, then apple topping!
- Serve with some kind of protein, like bacon or sausage. Do it.

just WOW – i made these last night for morning’s consumption and just could not resist tasting as the recipe went along. THANK YOU for sharing this. I now have three amazing paleo recipes for pancakes, yummy “caramel” and even home-made coconut butter (hope my neighbors were not too upset while i had food processor on for 10min).
One observation – I think next time I might add more milk to the pancake batter as it turned out quite thick. Wonder how much more milk can be added to make crepes?
Can I use canned milk instead of carton coconut milk?
that should be fine, you just might need to use a little bit more since it’s thicker

I just tried this recipe here at home, and I loved the way the date caramel topping turned out, as well as the apples. Delicious.
However, my pancakes ended up having quite a different texture than I expected. They reminded me a little bit more of biscuits or shortcakes than pancakes. I used only 5 eggs, but extra milk. Is this why they turned out like this. I didn’t think using those extra 2 eggs would make much of a difference as long as the pancake batter was ‘wet’ enough. Hope that makes sense.
Any ideas why my pancakes turned out a little thicker than they should be?

my ingredients were limited so i made banana pancakes (banana and egg- that’s it) and made your apple topping. it was the bomb! i topped it all off with some shredded coconut and macadamia nuts. holy marbles. i am making it again this morning for breakfast.

Made these this weekend! I am new to cococut flour so was wondering if the batter should be as thick as it was? It was more like spreading them on the pan than “pouring” them?
They were plenty tasty though not fluffy like ol’ flour pancakes! Loved the date “caramel”!
