Happy hump day, everyone! I’m just over here settling back into my home after spending the last 2 days in Vegas! If you read my post yesterday, you know I was pretty happy to get out of the house while they re-piped our sewer line. Now I have a pile of dirt as a backyard. Which is now covered by an unexpected blizzard. Cleaning Jackson’s paws every time he goes outside is going to be a real ball of a time.
In brighter news, Vegas was a blast. I left Monday morning and got back Tuesday evening, all for a quick work trip with Cassy from Fed and Fit. In case you didn’t hear about it already, I teamed up with Cassy for her newest and biggest project yet: her Fed and Fit Book! This book will be filled with 175 squeaky clean paleo recipes PLUS a 28 day guide to food and fitness for ramping up your healthy lifestyle! I teamed up with her on the fitness portion, so I created all the workouts for the program, all of which you can do with no equipment! Anywho, we needed to get some fitness photos together and get some photos of different movements for the workouts, so we both hopped on a plane to meet with our publisher in Vegas and got to work right away.
After a few hours of photos, it was time for the best thing in the whole world: curry. You need to understand something about me…I f*cking love curry. Not just like, “oh yeah, curry is like, my jam” (in Olivia from the Bachelor voice). Curry is not just my jam, it’s what I want to eat for every meal. For my very last meal. So when Cassy told me about a hole in the wall, off the strip, but totally well known place called Lotus of Siam, I was 1000000% in. And it was all I was dreaming about the entire day. Once we got there, I quickly ordered a thai iced tea, which was so sugary and naughty and delicious and then I decided on the crispy duck panang at a spice level 3 (I asked for mild and he recommended it). Well, it was an intense 3. But an amazing 3. The curry was so freaking flavorful and you could tell so much kaffir lime had gone into the dish, so even though it was super spicy, it was calmed down by the citrus flavor. It was epic. No seriously you guys, I’m already planning to go there when I’m back in Vegas in June. The only part that sucked was they gave me a gigantic spoon to eat with. So every time I would put the spoon in my mouth, it would burn my lips. There was no getting around it. But it was worth every burn. I could have eaten another order of that stuff. Absolutely. I’ll be dreaming of that place for weeks.
After dinner, we quickly hurried over to the Luxor to see the Blue Man Group. When Cassy and I decided we needed to go to Vegas, she instantly said we should see a show. And since the last cirque show I saw made me fall asleep, I thought either the BMG or the Jabbawockeez would be fun to see. BMG did not disappoint. I thought it was awesome, funny, interactive and left you feeling like you got your money’s worth. After the show, I instantly wanted to wikipedia the guys and find out there story. How did they get started? Has it been the same guys over the many years they’ve had the show? What do they look like? How much do they make in Vegas? Do they party hard? Do they make up their own stuff? I want to know all the things. But I have sh*t to do, like write this post. And drink this cocktail.
Coconut Lime Margaritas
- Yield: 4 1x
Ingredients
For the lime simple syrup
- 1/2 cup water
- 1/4 cup lime juice
- 1/4 cup honey
For the margaritas
- 1/2 cup coconut water
- 1/2 cup coconut cream
- 1/2 cup silver tequila
- 1/4 cup lime juice
- 1/4 cup simple syrup
- zest of 1 lime
For garnishing
- ice cubes
- lime wedges
- coconut flakes
Instructions
- Place the ingredients for the lime simple syrup in a small saucepan over medium and whisk until completely combine, about 2-3 minutes. Let cool.
- Place all ingredients for the margaritas (except for the ice cubes and lime wedges) in a blender and blend until smooth.
- Fill 4 glasses with ice cubes, pour cocktail mixture on top then garnish with lime wedges and coconut flakes.
- Then you drrrriiiiiink!

Hey-quick question. Every time I go to paleomg.com and click on your blog post, I am redirected to the App Store to buy some game. It consistently happens every time I go to your website. Yum curry! I currently addicted to this curry chicken salad that is sold at a health food store. It’s called “Awesome Chicken Salad” and the name is says it all! We drive an hour every week so I can get and the deli manager laughs because I bolt to the case to grab it every time I’m there SOOO good! This margarita looks fantastic! I had wrote them off because of the sugar etc but this I have to try! Do you have a preferred tequila? Patron or Don Julio is fantastic!

I love Lotus! Their fried shrimp dish is really good too. I will have to try their curry. I just saw BMG a couple months ago. Glad you enjoyed BMG! It wasn’t my thing so I’m glad I didn’t have to pay! Lol.
Oh, before I go off your site to go to bed, (yes, I don’t keep very paleo hours of sleep, oh well!) I wanted to wish you: Best of luck with your wedding staying on schedule!!!! I read about your woes in the previous blog posting and forgot to send wishes your way,… of course I was also getting annoyed at my browser because it was sucking down my virtual memory and it wasn’t until I closed a tab that was, for some reason, sucking down the memory, I’ll never know why some pages suck memory while other pages don’t. So with that, I couldn’t stick around long to type a proper message. I so dislike third party rotating sites, which I already found your blog long ago, some very nice recipes on here!! I can’t wait to make that sweet potato brownie recipe, I have a feeling I’m going to be eating those down very quickly, although I hope not, because that won’t be very paleo either, 😉 hahahaha!!! Lol. But, then who made who king or queen of paleo? I mean, I get the whole not eating beans, but beans are very good, if one soaks them properly and then cooks them or finds out how to buy dry beans but maybe soak them very long so they are soft, but still raw. Of course that also being the case then paleos shouldn’t be eating chocolate and we wouldn’t have had access to cacao beans 😉 I say: “Whatever!” I’ve already given up so much over the years;
First: I thought it was sugar causing the problem of my rotting teeth, and turning them brown, so I dropped all soda and other sugars.
Second, and final: I find out it’s wheat ’cause in this house nothing is in moderation, because it’s all to freaking convenient, as well as the damned processed foods, is it any wonder why my gut is all bloated and sticking out again? Somebody just doesn’t want to take his time in the kitchen to cook a proper and healthy meal from scratch, and it’s beginning to tick me off. As well as his defense on Corn Syrup, yet damns my honey. Well, I got news for him: Corn Syrup is worse than Table sugar, it still spikes the blood sugar which is why I feel like sh… after eating spaghetti ’cause he’s been adding it in, which is even more terrible for diabetics and those who are borderline diabetic. My mom wonders why she’s still on the border, oh, I don’t know, ’cause you’re still eating wheat which spikes the blood sugar, not to mention all the other things, which I won’t go into because I’m sure you already know all about it, which is why you’re Paleo.
Some of Paleo standing and sitting positions make sense, it explains why I don’t have any back pain, I’m constantly not sitting in one position nor am I always sitting for long periods of time, I get up about every hour and walk around.
*sigh* Anyway, best of luck again, sorry for the rant; my family’s ignorance on gluten and wheat is just so annoyingly frustrating, yet laughable at the same time. When there are more nutritious meals that are just as convenient, but they are too stubborn to get off S.A.D.
Hey! Since you’re using coconut water and coconut cream– could I just use coconut MILK to simplify? 🙂
