Say what?? I want to eat this all day. No seriously. I almost did yesterday.

Alright. I need to put something out there. Right on the table. This is for my readers that have read my blog for a while now and know my complete life story. First, thank you for sticking with me. You’re the best. You’ve been with me through the ups and downs. So a while back, you read about my break up. Well, months later, that lovely man and I rekindled our happiness and have been together for sometime now. Annnnnd we moved in together. First time moving in with a guy. Woooo weeee. I decided to keep some of my relationship stuff to myself since there are so many variables when it comes to creating a happy relationship. Sometimes it’s just better to keep that stuff between you and your partner, instead of the world wide web. BUT since I hadn’t updated anyone and there were some questions in my last blog post, there ya go. He’s just wonderful. We’ve had our ups and downs, but I couldn’t be happier. Taking a new journey together has been awesome.

Sorry this post is coming at you a little late. Let me explain myself. So yesterday, lovely Sunday, I woke up and made a smoothie. Fact. Then worked out. Then the true fun began. I went couch shopping. Ugh. Not only is furniture shopping an extremely awful task, but on a Sunday when all hell breaks loose in every parking lot, it’s an even worse task. Ok, I shouldn’t really complain. It wasn’t that terrible. It just gets pretty unfun when you’re hungry and have to pee. So we looked for couches, found one we liked, couldn’t decide if we should get it, then went to another furniture store. Which was even more unfun because it was way more expensive. But the parking lot was better, so that was a positive.

Yes, I understand unfun is not a word. If you were thinking that in your head, you’re unfun.

So after the boyfriend and I found out we couldn’t come to a conclusion, we headed to brunch. Around 3. I was starving. Hangry. After a couple mimosas, I felt decent for them not being as strong as needed on a sunny Sunday. But I knew I wanted to make this recipe. So we bolted home for him to take an afternoon snooze and for me to bake. And I baked. And failed. I put this recipe into a too small baking dish and it pretty much went every where. All over the oven. I mean…I still ate the edible parts. But the non edibles turned into smoke inside the oven. So I then cleaned the oven and couched it for a while in frustration. But I couldn’t go down that easy, so I made it again last night and just stared at it since I couldn’t eat it until I took pictures until today. Which leads me to right now. This very moment. I just took pictures of this beauty. Now go make it. It’s amazing.

Coffee Cake Banana Bread

Instructions

  1. Preheat oven to 350 degrees. Grease a8×4 loaf pan with oil then line the middle with parchment paper. It will make it easier to remove from the pan without it coming apart.
  2. In a large bowl, mix together bananas, maple syrup, vanilla extract, eggs, and almond butter.
  3. Then add coconut flour, baking soda, baking powder, cinnamon and salt and mix well.
  4. Pour batter into baking dish. Place on a baking sheet.
  5. In a small bowl, add butter, coconut sugar, almond flour, cinnamon, and pecans. Use your hands to mix the toppings together.
  6. Place chunks of the toppings all around the top of the banana bread mixture.
  7. Place in oven to bake for 50 minutes.
  8. Remove from oven, place on cooling rack and let rest for 5-10 minutes before cutting and serving.

    Tastes so yummy, but didn’t firm up for me. Made exactly as it said. Baked for 65-70 minutes and starting browning too much before it finished cooking. Will try again for sure though! Just have to eat it with a fork this time.

    What brand of coconut flour so you use? I know there’s differences in brands.

      not sure why that happened, i’m sorry! i usually just use bob’s red mill coconut flour!

    Hi!

    This recipe looks very nice! BUT like so many other healthy recipes it has almond flour and coconut flour and I really don’t like almonds and coconut… I also seem to be the only person into healthy foods that doesn’t like dark chocolate or peanut butter! (I know right!) So I’m always looking for alternatives to those as I, of course, like yummy things! So what can you use instead of almond flour? Instead of coconut flour (coconut flour is actually ok even though it’s not my favorite) and would any type of nut butter do instead of peanut butter?

    Sorry for the long post but I’ve been trying to get answers to this for a long time and any tips would be great 😀

      for this exact recipe, there aren’t a ton of substitutes. but you could use different nut flour instead of almond flour, coconut flour is tough to sub but maybe cassava might work, and yes, any other nut butter would work

      oat flour wouldn’t be paleo, so that’s up to you. and i’ve never used oat flour so i don’t know what it’s texture is like and how it reacts so i couldn’t tell you…

    I make this all the time, adding 1 tsp of ground coffee in the topping mix which gives the bread a more robust flavor! I slice the entire loaf & freeze in baggies for a quick bread to go with my morning eggs & coffee! Your recipes rock Julie!! 🙂

    Please help- I just made this and even though I cooked 10 min longer than recommended, it’s still wet and falling apart. Where have I gone wrong? I did double the recipe (but i have to- I have a big family and need to make it worth the effort!). I also used 2 regular loaf pans… not sure what you mean by baking “dish”, does it have to be clear/glass or something? I did put a baking sheet under my pans but not sure why I needed to do that. Can you explain? My measurements weren’t exactly the same as your loaf pans but surely that wouldn’t ruin the recipe? They were less than an inch off. Should I have sifted my coconut flour or anything? I can’t think of what else to have done different. Smells so good in my kitchen, it’s just a big goopy mess though! 🙁 By the way I tried your pizza spaghetti pie and my whole family loved it, thanks!

      it’s probably due to doubling the recipe as well as using different sized pans. and even the ripeness of the bananas can change the wetness. did you cook it any longer? i can’t say exactly what went wrong since i wasn’t there and the recipe was altered some. doubling recipes can definitely change the consistency and outcome.

        Ok thanks, i’ll try not doubling next time… I wonder if my eggs were bigger than the ones you use too… So if I go buy new loaf pans, the exact sizes you mention, what kind should I get? Are you referring to a glass pan when you say baking “dish”? Why do you bake it with the dish on a baking sheet? Thanks!

          i’ve use glass and metal making this and it’s worked for both! and i’ve baked it on top so in case it bubbles over at all

    The reviews are proof enough about this recipe, but I still had my doubts…. wow, it is totally scrumptious!!! I only had 2 bananas so I subbed one with some leftover canned pumpkin and it worked really well. Not SCD legal with the coconut sugar but who cares… it’s sooooo good!!
