Ok, before you judge the sh*t out of these pictures and think this dessert looks disgusting and hate on this recipe, breathe. I cooked these guys for almost three hours and they almost esploded. That word is way cooler than exploded. So it was hard enough to get them into a bowl, let alone get a picture that made your taste buds salivate. Green apples don’t really look delicious when cooked down. They look a brown-green color. Similar to baby vomit. Or poo. Take your pick.
Anywho, these dessert apples are pretty amazing, especially being part of the sugar detox. You’re allowed green apples in moderation while on the sugar detox, and if you read my post yesterday about my experience with the detox, you know that green apples began to taste super sweet to me after cutting out all sugar. The best thing about these stuffed apples is that they turn into an applesauce if you leave them in the crockpot long enough. Mine were getting close to applesauce. Which I was diggin’ since it was pretty much like eating a apple streusel thingy. I don’t even know what a streusel is. Maybe I meant to say strudel? That doesn’t sound right either. I don’t even know what I’m talking about.
Just so all of you know, I ate two of my favorite burgers in this world within a week. I think I could die happy. No I’m kidding. I haven’t had dessert yet. I need a legit dessert. Like bacon wrapped dates. Get this, when I get back from Lake Powell, I plan on making a blackberry loaf or waffles or pancakes and topping them with a vanilla curd. And maple syrup. I need that cheat. I need that cheat very badly. Bacon wrapped dates will be a side dish, obviously. Back to the point, I told you about my new favorite burger I had last week…WELL I just had a burger with pork belly on top. And a sweet potato jam to top it off. Yeah, life is good.
Did you know I’m in the water at Lake Powell right now? Happy happy joy joy. Can’t wait to share pictures with you. Now make this dessert and stop gagging at the pictures.
Crockpot Sugar Detox Dessert Stuffed Apples
- Yield: 4 1x
Ingredients
- 4 green apples, cored, bottom still in place
- 1/2 cup coconut butter, melted
- 1/4 cup sunbutter, unsweetened (or other nut butter)
- 2 tablespoons cinnamon (the more the better in my world)
- pinch of nutmeg
- pinch of salt
- 3–4 tablespoon unsweetened shredded coconut
- 1 cup water
Instructions
- First you gotta core your apples, which is a pain if you don’t have an apple corer or paring knife…like me. I use a knife and drilled out the top then used a spoon to scoop out any core, leaving behind as much apple as possible and making sure not to remove the bottom. Perfection is not needed here.
- Mix together your coconut butter and sunbutter along with cinnamon, nutmeg and salt.
- Place cored apples in your crockpot and pour water in the bottom.
- Use a spoon to pour in your coconut and sunbutter mixture into each apple until it’s at the top.
- Top each apple off with a bit more cinnamon and your shredded coconut.
- Cook for 2-3 hours on low. The longer you cook it, the softer the apple will become so you decide!!
Notes
*These would also be wonderful with any sort of nuts mixed in!
*If you are not on the sugar detox, dried fruit would be great in these!
