Yesterday, I was in such a rut, I had to shower and do my hair and makeup just to feel productive. Then you know what I did? Still wasn’t productive. I think I haven’t fully recovered from Vegas, even though there wasn’t much to recover from since I didn’t drink that much or eat that terrible. Maybe it’s the second hand smoke in my lungs that I’m trying to recover from. That’s really the only thing I can think of. That’s gross.

Oh maybe it’s my monthly gift from hell. Yep, it’s probably that. Perfect timing.

I think I might be over the winter olympics. I’m really sorry if you love it, but I’m more into the summer olympics. I can only watch so much cold sports. It makes me cold. And I’m over being cold. I’m ready to wear skirts and dresses. Do you hate me for just disliking sports because it makes me feel cold? Yeah. Me too.

Speaking of being cold, I got about a bajillion instagram tags about people being snowed in and baking from my website. And when I say bajillion, I mean like ten. I wish I had that excuse why I was lazy yesterday. I almost baked so I wouldn’t feel lazy, but then I would have stuffed my face with food all day. And with the time of the month it is and my emotional instability, I decided baking would have been a poor decision.

I WANT RED VELVET CHOCOLATE MOLTEN CAKE!!! Like, really bad.

I wonder what it’s like for people to come in and read my blog for the first time and a post like THIS one is the first one they read. I would be like, daaaaaaamn this b*tch is cray, and I’d be right.

But on a serious note. If someone brought me chocolate cake to my house today, I think all emotional disarray would be gone. And life’s order would be brought into perspective. It’s the simple things, ya know? Ya follow me? Me neither. Let’s get out of this post as soon as possible.

And into these muffins!!!! Happy Vday you lovely humans!

I didnt read through all the comments so not sure if anyone has asked already but does anyone know where I can buy Barney’s almond butter locally in Denver?? Don’t really want to order it online. I went to Whole Foods off Hampden and couldn’t find any! Thanks for the help 🙂

These are so fabulous. I didn’t have Barney Butter so I made the variation you suggested but baked it in a loaf pan since I don’t have any muffin pans where I am right now. I sliced the loaf up and put it in the freezer so I could pull out a slice when “needed”. They are amazing toasted with or without homemade nutella. Thanks for the awesome recipe!

I’m glad to see people occasionally “cheat” every once in awhile. I am working towards a Paleo lifestyle myself, and having to give up my favorite foods 100% might drive me bonkers.

I say this because I’ve met some people who have banished non-paleo food completely. Unless there are certain reasons, I don’t believe the seldom bite of a cheesecake or muffin will do that much harm.

    Keep up the great recipes!

Hello so I just made these the other day and they tasted really good but they were too dry. What should be added if I make them again? Or I was thinking of cooking them for less time not sure, let me know what you think ..thanks!

    1. juli says:

try using an almond butter that has a little more oil to it

      Hi Kara,
      I hope you don’t mind me suggesting…

My oven pre-heated for a long long while (not smart in the summer but I was dying to make these…and a few other treats) so I knew my muffins would need less time. So at 20 minutes I tested their doneness with a toothpick and I feel they were perfect at 20m for me:) I may try 15m next time just to see how they roll! xoxo~a

    Juli,
I just bought the paleo kitchen! Best book ever! Serious. I am eager to get cooking. But first things first…It’s a baking day and these muffins were on the line up. They came out of the oven looking so BEAUTIFUL! Never thought I’d be saying that about a double chic almond muffin. They hit the spot…I couldn’t even wait for them to cool off. Trying not to get crumbs on the laptop while I let you know how much I love them. Supper yummy – they are a 10! A full 5 stars!! xoxo ~a

Forgot to click the star thingy. It happens when you’re excited! I think peeps should read the comments section as they are meal planning and prepping to cook the recipe bc you give very helpful hints and ingredient substitutes that are helpful if you can’t get your hands on one.

These are great! I suck at cooking/baking, but I can follow instructions. Do you have a recipe for chocolate/”peanut butter” muffins where the almond butter flavor comes out a little bit more? My husband is inquiring…so that I can make them for him.

I think he wants a muffin, but I might make the chocolate/almond butter cups and stop pretending like we’re not having dessert when we eat chocolate muffins.

Any suggestions on the muffins, though, in case we want to continue our charade?

  10. Emily says:

Terrible recipe! I followed the instructions exactly but by the time I went to put it in muffin pans the bowl had nothing in it…but my hands and face were covered in some sort of chocolatey goo! My poor kids and husband were so disappointed:( Maybe I’ll try again tomorrow…wish me luck!
