My boobs are sore. Which is weird since it’s from doing 50 toes to bar. Every time I do toes to bar, my boobs get sore. The part of your chest that’s right up there next to your armpit. Yeah, right there. 50 toes to bar is just no fun. But I absolutely loved doing CrossFit open workout 14.4. This is what it looked like if you didn’t see it:

14 minute AMRAP:

30 cleans, 135 / 95 lb.
20 muscle-ups

So until Friday, I hadn’t done muscle ups in probably 4-6 months. I couldn’t even remember last time I tried them. So when we started the workout, I just wanted to at least get to the muscle ups and hopefully get one. That’s all I wanted, just one. So I finished the cleans with 2 minutes to go and had to stand there for about 30 seconds to breathe…my abs hurt real bad. But I was incredibly surprised when I did my first muscle up and it was easy. Easier than when I actually used to train for competitions. It’s weird that taking a step back from something and giving yourself a break can actually help improve things. Makes absolutely no sense, but I’ll take it. I ended up getting 5 muscle ups, which I was super pumped about!

Guess how I celebrated? Champagne shower. Ok, not really. But my friend Jeremy grabbed me some champagne earlier that day and my friend Jimmy got me a pink sippy cup. So I celebrated with a bottle of champagne. Talk about heartburn. Terrible. But we headed out to a restaurant afterwards to eat, drink, and hang out with our sweaty, disgusting clothes. I’m kind of sad for the CrossFit Open to end, just because it gives us an excuse to all hang out at the gym, bond, and get to know each other better. Next week, we have our second annual thrift store formal after our last open workout. We buy sweet thrift store outfits, go out, drink alcohol, things get weird and life is great. Yay!

Since a bunch of us were excited about getting muscle ups, we decided to do a muscle up workout on Sunday. Have you ever tried the workout ‘Nate’? It’s a good one. This is what it looks like:

20 Minute AMRAP:

2 Muscle-ups
4 Handstand Push-ups
8 Kettlebell swings (70/55)

I haven’t done it in probably a year and a half. So I did it yesterday in hopes of beating my score of 10 rounds. This time, I got 13 rounds! For once in my life, I finally like muscle ups! Well kind of. I got a blister and I’m not really into that. The lady at the nail salon was quite grossed out by my calluses on my hands last time I was there. I can’t imagine what she will say about my blisters. She said nothing about my gross feet, but definitely mentioned my rough palms.

Enough about gross hands, let’s eat.

Fully Loaded Citrus Marinated Chicken Lettuce Wraps

Ingredients

Scale
  • 3 skinless, boneless chicken breasts
  • 1/2 cup orange juice
  • juice of 2 lemons
  • juice of 2 limes
  • 1/2 tablespoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 jalapeño pepper, minced
  • 1 minced garlic clove
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • pineapple guacamole, to garnish
  • 6 strips of bacon
  • Sir Kensington’s Chipotle Mayo or homemade chipotle mayo
  • butter lettuce, for wrapping

Instructions

  1. Preheat oven to 400 degrees.
  2. Place chicken in a gallon resealable bag or in a deep dish. Add orange juice, lemon juice, lime juice, chili powder, paprika, jalapeño, garlic, salt and pepper. Mix well to coat the chicken and place in the fridge for an hour to marinate.
  3. While chicken marinates, make pineapple guacamole.
  4. Once guacamole is made, place in the fridge to chill. Place slices of bacon on a rimmed baking sheet lined with aluminum foil. Put in oven an bake for 15-20 minutes, or until bacon is cooked to preference then set aside for later.
  5. Remove foil. Place chicken on baking sheet and into oven for 15 minutes (discard marinade), then turn on the broiler and cook for 3-4 minutes until the chicken has browned on top and is completely cooked through.
  6. Place a couple pieces of butter lettuce on a plate, add chicken, top with chipotle mayo, bacon, then guacamole and enjoy!

    Congratulations on getting 5 Muscle Ups! i got to 164 reps. I was happy with that. My husband Mark Chisholm is 80 worldwide (out of 4,613 in ages 45-49) and 12th in the North East. He did 14.4 yesterday and only got 1 MU with 2:08 min left after the cleans. He is usually so good at MUS but did not take enough rest after the cleans. He is trying again this afternoon. Say a prayer! Not bad for 48 in May.
    I LOVE your website. I love cooking paleo and I LOVE CrossFit!!

    My husband’s hip flexors are TOAST from the T2B. Watching him hobble down the aisle to take communion at church was sort of hilarious. Laughter at a very inappropriate time ensued.

    That marinade looks so good that I probably wouldn’t even bother with all of that other stuff. That chicken would be in my mouth before I could get it into a wrap with guacamole 🙂 Thanks, as always, for the great recipe!

    Silly question about the pineapple guacamole recipe. It says “1/2 pineapple, diced.” Just want to clarify that you mean 1/2 of a whole pineapple and not 1/2 cup or something like that? I am assuming it is the former (and if you had meant 1/2 cup you would have said “cup”) but just wanted to be sure because 1/2 of a whole pineapple seems like it could be a lot.

    Also, I really hate how many times I just said “1/2” and “cup” and that my first comment on your blog had to do with pineapple quantity. :-/

      lol you are correct. 1/2 of a whole pineapple. it usually comes out to less than 2 cups of chopped pineapple
