I wish I had something fun or cool to say, but instead I’m lying on the bathroom floor, clutching the toilet, in hopes of not puking salmon up again. The stomach flu is quite lovely. I have body aches, chills and fever, and I have no absolutely no energy. Even just writing those last few sentences took me 20 minutes. Killing it.
I don’t understand where this sickness came from. I coached for 6 hours at my gym then went home to eat lunch and it kicked in right after that. But my husband ate the same food so it wasn’t food poisoning. Boo. I just hate it.
I’ve been working on writing all this since 10am…it’s now 5pm. I’ll just stop and give you the recipe instead. Hope everyone is having a great Tuesday!
Lavender Lemon Poppyseed Muffins
- Yield: 10 muffins 1x
Ingredients
- 1/2 cup coconut flour
- 1/2 cup tapioca flour
- 1/2 cup maple sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon dried lavender buds
- 1 tablespoon poppyseeds
- pinch of salt
- 2/3 cup applesauce
- 3 eggs, whisked
- zest of 1 lemon
- 1/4 cup lemon juice (juice of 1 lemon)
- 2 teaspoons almond extract
Instructions
- Preheat oven to 350 degrees F. In a large bowl, whisk together coconut flour, tapioca flour, maple sugar, baking soda and powder, lavender buds, poppyseeds, and salt until combine.
- In a medium bowl, whisk together applesauce, eggs, lemon juice and zest, and almond extract. Pour wet mixture into dry mixture and mix until combine.
- Grease a silicone muffin tray then use an ice cream scoop to scoop out 10 muffins.
- Place in oven to bake for 20-25 minutes, until a toothpick comes out clean!

I’ve been listening to your podcasts and I have a “random reader question” that I hope you’ll address some day.
You’ve talked about your weight loss. I get the main idea: eat big, nutrient dense meals, minimize snacking, drink a TON of water, don’t eat a lot of nuts, etc. You listen to your body. This all sounds delightful. I’d love to be able to do this. I’m trying.
What I’m wondering is what does it feel like to listen to your body while you are losing weight. Surely, you must feel hungry? How do you know if your are eating too little or too much for weight loss by listening to your body? Did you ever get light-headed? Did you have any other tips for weight loss? Especially for when you were getting closer to your goal weight?
Love your recipes (had spaghetti squash sweet potato casserole thing for breakfast today and acorn squash with mini meatballs planned for dinner), and love your blog, and love your podcast…Just love you. Thanks for all of the motivation. You have an amazing body that is really inspirational.
Oh…and also any tips for how to walk in a handstand? I’ve been practicing and can hold a handstand for only a few seconds and maybe can take a couple steps, but I”ve seen you go across the room! Amazing!

hey becky! weight loss is a tough one and figuring out what your body wants and needs is even harder. i definitely don’t feel hungry. i feel hunger when i’m ready to eat again, but i’m eating what my body needs so it’s not feeling hunger! when i eat, i try to eat to the point i’m just satisfied, not overly full. whenever i’m eating to the point that i’m too full, i notice my body gaining weight and changing. it’s tough to get to that point to really know how to listen to your body, but it’s definitely possible! i don’t ever get lightheaded, though. with weight loss, i recommend people continue to workout regularly and eat just like you said and drink lots of water. weight loss doesn’t always come in a couple weeks or months, but over time. and as for handstand walking, what helped me the most was letting my feet hang so they pull you forward and your hands have to chase your feet. practice makes perfect!!

Oh…and have you tried Crio Bru. It is roasted and ground cocoa beans you brew like you would coffee. It is delicious and my favorite hot beverage (I don’t drink coffee). Just thought you’d enjoy it on days when you’re cutting back on coffee. Try it!

Question for you – kind of random … I am desperately searching for a good cranberry bread recipe (or could be muffins). I made one over the weekend and it is less than remarkable … do you have one? Or one of yours that I could sub cranberries in? Fresh cranberries. I looked on your blog and didn’t see any.
I hate tossing the one I made since it had 6 eggs and that seems like a waste but it was made w/coconut flour since I was trying to go cheapy … (almond flour is so pricey). But I hate wasting calories on something that tastes like dirt!

i haven’t tried that myself, but someone recently mentioned that they accidentally use maple syrup instead of maple sugar in a recipe and it still came out perfect so hopefully that will work for these too!!
