OMG. These pancakes are like, the fluffiest pancakes ever. I want to marry them, then eat them for my honeymoon. Yep. Fact.
All I want to do is ride my bike everywhere. Mostly because it’s been about a thousand degrees here in Denver. And leather seats aren’t so friendly in this heat. I have to keep a towel on the seat of my car so my seat doesn’t become a slip and slide. Gross. So the other day, as I rode my bike everywhere while blasting Carrie Underwood from my phone, I came across a garage sale. I dig garage sales. My mom used to take me to garage sales all.the.time and I kind of hated them, but man, am I a sucker for a sweet deal. So I stopped at the garage sale, found some gorgeous white and glass shutter doors and purchased them right there. I had to go get my car, obviously. I’m not that strong anymore. I don’t know why I wanted these shutters, but they called my name. I want to put them in my imaginary house that I want to purchase next year. I have no idea where I will be living or what my place will look like but I guess I’ll be using some glass shutters as decorations. I have to now. I spent $10.
Am I going through a quarter life crisis? Is that a real thing? Is this what it’s like? You purchase things for imaginary circumstances? Too many questions for one paragraph. Moving on.
So I contradicted myself for at least the 46th time on my blog. You know how I told you that I don’t like going out and drinking. Well, I did it. And I actually really enjoyed myself. And I even worked out the next morning, wreaking of alcohol and feeling like less than 35%. I think that alcohol should only be consumed with certain people. Like people who love dance music and food. Fun, drunk nights are only enjoyable if there is dancing in the end. And working out the next morning, still drunk or not, it makes the endorphins flutter and keeps you from hitting the drunk depression. I’ve found the secret to consuming alcohol! Drinking with good looking, happy people, dancing, coffee, excess of water, working out, more water, garage sales for your imaginary house, then more water. Pretty simple. Sorry I contradicted myself once again, but sometimes, you just gotta say ‘eff it’.
I did find out that I still don’t like being the sober person out at the bars the next day. When girls are actually telling my guy friends that they wore a short skirt for them and want them to take them home, I know I’m in over my head at that bar. That’s really not a sexy look for ladies. So I went home and watched reruns of friends while reading paleo cookbooks. I personally think that’s a fantastic Saturday night.
Someone shared this video with me. Sometimes, it’s truly the story of my life. Mostly because I completely remember saying ‘Can I wear this shirt as a dress?’ in college. Wow.
I wonder how long these shutters will be in the trunk of my car.
Lemon Raspberry Pancakes
- Yield: 2-3 1x
Ingredients
- 1 cup raspberries
- 2 tablespoons lemon juice
- 2 tablespoons honey
For the pancakes
- 3 eggs, whisked
- 1/2 cup almond milk + 3 tablespoons (carton, unsweetened)
- 1 tablespoon raw honey
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1/2 cuptapioca flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- coconut oil, for greasing pan
Instructions
- In a saucepan over medium heat, add the first three ingredients: raspberries, lemon juice, and honey. Mix together and let simmer. Once raspberries have broken down, bring heat to low to let thicken slightly.
- Whisk together pancake ingredients: eggs, almond milk, honey and vanilla extract in a large bowl.
- Then, while continuously whisking, add coconut flour, tapioca flour, baking powder and baking soda and a pinch of salt to the large bowl. Whisk until batter is well combined.
- Grease a large pan or pancake griddle and place over medium heat. Once pan is hot, use a large ladle to pour a pancakes size pancake on the pan. Then use a small spoon to scoop out a tablespoon of the raspberry jam mixture and swirl it around on the top of the pancake.
- Once pancake has cooked and bubbles begin to surface on the top of the pancake, flip it. The pancake should need to cook for 2-3 minutes each side.
- Repeat with the rest of the pancake mixture.

We’ve only been eating Paleo as a family for 3 weeks now, but I don’t think there’s one recipe of yours that we’ve tried and not loved!! Seriously! These pancakes are SCRUMPTIOUS! They make me feel like I’m cheating!! Thank you!!
I can’t find tapioca flour, so I tried just omitting it and using coconut flour. While the flavor was fine, I just couldn’t get them to hold together. I have no idea what jm doing when i dont have a recipe, so I dont know how to sub that. So sad. 🙁
you could find arrowroot powder and use that
Thanks for the tip of the arrowroot flour to sub for tapioca flour. I ended up going to a whole foods out of town when I went to get my mom from the train station and found some tapioca flour there. I made them again this weekend with the tapioca flour and they were perfect! 🙂
I followed this recipe exactly and they did not turn out at all! The batter was like paste. When I tried cooking them, the tops and bottoms were cooked…..almost too much…..yet the inside was doughy and not fully cooked. The Lemon Raspberry sauce is good though. My partner and I did not finish them and opted for our old standby of oatmeal, but with the Raspberry Sauce. Not sure why other people are raving about these pancakes. Zero stars from me.
Sorry to hear that, Lisa. I’ve experienced this before as well. I think it depends in the tapioca flour you use. Try using bens red mill tapioca flour next time, that’s the kind I’ve used and it’s worked every time
I was craving pancakes last week so finally this past weekend had some time and made these. OMG. SO. GOOD. I actually used arrowroot powder instead of tapioca starch (1:1 substitution), and they were still perfect. LOVE the raspberry sauce over the pancakes (with a generous heap of Kerrygold, of course). They were very filling (unlike regular pancakes I used to eat back in the day), so I ate half on Sat & half on Sun (I made 6 pancakes total) & was full for hours! Definitely felt like a huge treat!
I tried this and totally didn’t turn out first go round. I’ll have to try again another time. I didn’t have tapioca flour so I just left it out and substituted the almond milk for coconut milk. The batter turned out too thick so I added more coconut milk and even some water. I also didn’t have coconut oil to use so I used butter and it just didn’t work. I think this recipe depends on entirely how the batter turns out. Sigh. I’ll try again.
These are a staple in our home now! I’ve made them every Sunday for the last 4 Sundays. I perfected them on the 3rd try and now could probably make them with my eyes closed. I love cooking and baking and thanks to this website my family is able to eat paleo without feeling “deprived” of yumminess! Thank you, thank you, thank you!!!

I’ve made these 3 times in 2 weeks. My two-year-old asks for them all the time! My husband loves them too. They are truly fluffy!
I substituted water for the milk and added 1/4 teaspoon ACV. They turn out perfectly! I’ve also added some blueberries to the top before flipping. So delish!
I bye coconut milk would work good too.
I haven’t tried the raspberry/lemon topping yet. I bet that adds a ton of flavor!

Perfectly fluffy pancakes! This is a miracle! Every pancake recipe I’ve tried results in a super flat omelette-like pancake, gross! These were PERFECT! I did tweak it a little along the way. I added a little more almond milk since the batter was very thick with the coconut flour alone. Then I cut down the tapioca flour to 1/4 cup instead of half. I also added a little cinnamon powder. Can’t wait to make them again!
