OMG. These pancakes are like, the fluffiest pancakes ever. I want to marry them, then eat them for my honeymoon. Yep. Fact.

All I want to do is ride my bike everywhere. Mostly because it’s been about a thousand degrees here in Denver. And leather seats aren’t so friendly in this heat. I have to keep a towel on the seat of my car so my seat doesn’t become a slip and slide. Gross. So the other day, as I rode my bike everywhere while blasting Carrie Underwood from my phone, I came across a garage sale. I dig garage sales. My mom used to take me to garage sales all.the.time and I kind of hated them, but man, am I a sucker for a sweet deal. So I stopped at the garage sale, found some gorgeous white and glass shutter doors and purchased them right there. I had to go get my car, obviously. I’m not that strong anymore. I don’t know why I wanted these shutters, but they called my name. I want to put them in my imaginary house that I want to purchase next year. I have no idea where I will be living or what my place will look like but I guess I’ll be using some glass shutters as decorations. I have to now. I spent $10.

Am I going through a quarter life crisis? Is that a real thing? Is this what it’s like? You purchase things for imaginary circumstances? Too many questions for one paragraph. Moving on.

So I contradicted myself for at least the 46th time on my blog. You know how I told you that I don’t like going out and drinking. Well, I did it. And I actually really enjoyed myself. And I even worked out the next morning, wreaking of alcohol and feeling like less than 35%. I think that alcohol should only be consumed with certain people. Like people who love dance music and food. Fun, drunk nights are only enjoyable if there is dancing in the end. And working out the next morning, still drunk or not, it makes the endorphins flutter and keeps you from hitting the drunk depression. I’ve found the secret to consuming alcohol! Drinking with good looking, happy people, dancing, coffee, excess of water, working out, more water, garage sales for your imaginary house, then more water. Pretty simple. Sorry I contradicted myself once again, but sometimes, you just gotta say ‘eff it’.

I did find out that I still don’t like being the sober person out at the bars the next day. When girls are actually telling my guy friends that they wore a short skirt for them and want them to take them home, I know I’m in over my head at that bar. That’s really not a sexy look for ladies. So I went home and watched reruns of friends while reading paleo cookbooks. I personally think that’s a fantastic Saturday night.

Someone shared this video with me. Sometimes, it’s truly the story of my life. Mostly because I completely remember saying ‘Can I wear this shirt as a dress?’ in college. Wow.

I wonder how long these shutters will be in the trunk of my car.

Lemon Raspberry Pancakes

Ingredients

Scale
  • 1 cup raspberries
  • 2 tablespoons lemon juice
  • 2 tablespoons honey

For the pancakes

  • 3 eggs, whisked
  • 1/2 cup almond milk + 3 tablespoons (carton, unsweetened)
  • 1 tablespoon raw honey
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 cuptapioca flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • coconut oil, for greasing pan

Instructions

  1. In a saucepan over medium heat, add the first three ingredients: raspberries, lemon juice, and honey. Mix together and let simmer. Once raspberries have broken down, bring heat to low to let thicken slightly.
  2. Whisk together pancake ingredients: eggs, almond milk, honey and vanilla extract in a large bowl.
  3. Then, while continuously whisking, add coconut flour, tapioca flour, baking powder and baking soda and a pinch of salt to the large bowl. Whisk until batter is well combined.
  4. Grease a large pan or pancake griddle and place over medium heat. Once pan is hot, use a large ladle to pour a pancakes size pancake on the pan. Then use a small spoon to scoop out a tablespoon of the raspberry jam mixture and swirl it around on the top of the pancake.
  5. Once pancake has cooked and bubbles begin to surface on the top of the pancake, flip it. The pancake should need to cook for 2-3 minutes each side.
  6. Repeat with the rest of the pancake mixture.

Yields 4-5 four inch pancakes

    These pancakes were delicious! Hubby declared them the best we’ve had in a long time! I used coconut milk (cause that’s what I had on hand) and made a blueberry sauce to go on top! I used Bob’s Tapioca a Flour and had to add extra milk but no biggie! They were great….love your recipes! I tried to give it 5 stars but can’t seem to do it!

    Sorry… But these were bad. Very dry and a really strange texture. I much prefer pancakes made with almond flour. Usually the recipes here are winners, but this one I won’t make again.

      sorry Kathleen, sometimes the tapioca is different depending on the brand. it probably just needed more liquid added to it

    Best paleo pancakes ever!! I used spelt flour instead of tapioca floor, as I could not wait for that to arrive. I am pregnant and craved these the second I sae the picture 😀 I also used cocnut milk instead of almond milk, and I think it gave these a nice flavor. They turned out very fluffy and delicious. This batch was just right for me and hubby, we were full. Not a joke portion like most other pancake recipes. Will be making these again, this time with tapioca flour as it just arrived 🙂

    I ended up making waffles with this batter and it turned out okay with the berries on top. Next time I’ll add more milk.

    These pancakes are my favorite ever (even compared to “regular” pancakes that I used to eat frequently). I often cut out the first three ingredients and add in blueberries or chocolate chips (for the kiddos!) too. I’ve found the thickness or runniness of the batter is completely dependent on the type of coconut flour. When I make my own coconut flour, it sometimes turns out really runny and I have to add more flour. When I use brands from the health food store, it’s usually way too thick. Adding more flour or more milk always works like a charm. I also sometimes use arrowroot instead of tapioca flour which tends to yield an even fluffier/lighter pancake. My husband and 4-year-old love these as much as I do. YUM! Thanks for the recipe. I believe my search is over for the perfect pancake recipe!!! My next move is to try and translate it into a waffle recipe using the guidelines below:

    Flour = same
    Baking powder/soda increased by 25%
    Salt = same
    Sugar/honey increased by 300% (crisper, sweeter waffle)
    Milk reduced by 20—25%
    Eggs same
    Melted butter increased 100% (or 1/4 c if no butter or oil are in the recipe)

    I am eating these as I write and they are amazing! Taste like “real” pancakes. My batter came out very soupy as well but I added almond flour and a little extra coconut flour and all turned out well.

    Just made these. My husband said “those smell really good, can I eat one now?” Since I had one “ugly one” I let him have that one. I was able to get 10 pancakes, or 5 servings @ 2 reasonably sized pancakes per serving. I didn’t change a single thing about the recipe.

    My husband’s comment was, “You’ve done a number of pancake recipes lately, and I think this is number one. You’ll probably agree because it most resembles the pancake taste, and texture you keep looking for.”

    It’s a school holiday today, and my kids requested pancakes for breakfast. We’re eating them now and my 7 year old daughter just said, “These are the best pancakes ever….even better than IHOP.” I have to agree. WIN!

    I’m gonna give you 5 stars, but not me! Mine were crepes, not pancakes. Super runny mixture. BUT… I use coconut pulp, not flour (I’m too lazy to dehydrate it) and then reduced the liquid. Very yummy even as crepes. BTW I was just reading another blog a couple of days ago that says baking powder isn’t paleo as it contains corn starch, thought?
