OMG. These pancakes are like, the fluffiest pancakes ever. I want to marry them, then eat them for my honeymoon. Yep. Fact.
All I want to do is ride my bike everywhere. Mostly because it’s been about a thousand degrees here in Denver. And leather seats aren’t so friendly in this heat. I have to keep a towel on the seat of my car so my seat doesn’t become a slip and slide. Gross. So the other day, as I rode my bike everywhere while blasting Carrie Underwood from my phone, I came across a garage sale. I dig garage sales. My mom used to take me to garage sales all.the.time and I kind of hated them, but man, am I a sucker for a sweet deal. So I stopped at the garage sale, found some gorgeous white and glass shutter doors and purchased them right there. I had to go get my car, obviously. I’m not that strong anymore. I don’t know why I wanted these shutters, but they called my name. I want to put them in my imaginary house that I want to purchase next year. I have no idea where I will be living or what my place will look like but I guess I’ll be using some glass shutters as decorations. I have to now. I spent $10.
Am I going through a quarter life crisis? Is that a real thing? Is this what it’s like? You purchase things for imaginary circumstances? Too many questions for one paragraph. Moving on.
So I contradicted myself for at least the 46th time on my blog. You know how I told you that I don’t like going out and drinking. Well, I did it. And I actually really enjoyed myself. And I even worked out the next morning, wreaking of alcohol and feeling like less than 35%. I think that alcohol should only be consumed with certain people. Like people who love dance music and food. Fun, drunk nights are only enjoyable if there is dancing in the end. And working out the next morning, still drunk or not, it makes the endorphins flutter and keeps you from hitting the drunk depression. I’ve found the secret to consuming alcohol! Drinking with good looking, happy people, dancing, coffee, excess of water, working out, more water, garage sales for your imaginary house, then more water. Pretty simple. Sorry I contradicted myself once again, but sometimes, you just gotta say ‘eff it’.
I did find out that I still don’t like being the sober person out at the bars the next day. When girls are actually telling my guy friends that they wore a short skirt for them and want them to take them home, I know I’m in over my head at that bar. That’s really not a sexy look for ladies. So I went home and watched reruns of friends while reading paleo cookbooks. I personally think that’s a fantastic Saturday night.
Someone shared this video with me. Sometimes, it’s truly the story of my life. Mostly because I completely remember saying ‘Can I wear this shirt as a dress?’ in college. Wow.
I wonder how long these shutters will be in the trunk of my car.
Lemon Raspberry Pancakes
- Yield: 2-3 1x
Ingredients
- 1 cup raspberries
- 2 tablespoons lemon juice
- 2 tablespoons honey
For the pancakes
- 3 eggs, whisked
- 1/2 cup almond milk + 3 tablespoons (carton, unsweetened)
- 1 tablespoon raw honey
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1/2 cuptapioca flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- coconut oil, for greasing pan
Instructions
- In a saucepan over medium heat, add the first three ingredients: raspberries, lemon juice, and honey. Mix together and let simmer. Once raspberries have broken down, bring heat to low to let thicken slightly.
- Whisk together pancake ingredients: eggs, almond milk, honey and vanilla extract in a large bowl.
- Then, while continuously whisking, add coconut flour, tapioca flour, baking powder and baking soda and a pinch of salt to the large bowl. Whisk until batter is well combined.
- Grease a large pan or pancake griddle and place over medium heat. Once pan is hot, use a large ladle to pour a pancakes size pancake on the pan. Then use a small spoon to scoop out a tablespoon of the raspberry jam mixture and swirl it around on the top of the pancake.
- Once pancake has cooked and bubbles begin to surface on the top of the pancake, flip it. The pancake should need to cook for 2-3 minutes each side.
- Repeat with the rest of the pancake mixture.

Made these as waffles and my oh my are they delicious!!!! I’ve made them 4 times in as many weeks. We are moving this week (military family) and I made a double batch this morning so that I can take them to the hotel and have a yummy paleo breakfast everyday.
These were pretty good, I didn’t have the raspberries so I dropped in some frozen blueberries in the batter! They were fluffy, I slightly burned my first batch:( They were thick and I needed to spread them out with a spoon. I poured some coconut milk on them as they needed a little moisture/something sweet.
For sure would make again and play with toppings! Thanks

I have been looking for and testing out “healthy” pancake recipes for my kids and so far all have been tremendous flops until this one! My batter came out super thick so I had to add way more almond milk than suggested which is totally fine. I just kept adding until the consistency was pourable. The pancakes came out light and fluffy and the fruit topping was amazing! I wonder if coconut milk would be make them even lighter and fluffier than the almond milk? THANK YOU! LOVE THESE!

Made these this morning as my first attempt at Paleo pancakes; a little “grainy”, perhaps due to my modifications, but still very tasty even as I skipped the raspberry topping.
I made a 1.5 size batch which was actually too much for just 2 people; lesson learned.
I also didn’t have tapioca flour so I used 1/2 cup almond flour and 1/4 cup flax meal to replace 3/4 cup tapioca flour needed for a 1.5 batch and they came out great.
Additionally I added another 1/2 cup almond milk to thin out the batter which I mixed with a hand mixer. The batter was still thicker than a traditional mix but the cakes were decently fluffy nonetheless.
Thanks for the recipe! It fulfilled our pancake craving without the need for a post-consumption nap to digest.

I am SO SKEPTICAL of Paleo Pancakes as they always have some weird consistency that is nothing like a pancake after all and it leaves me huddled on my kitchen floor in a pool of disappointment. But, THESE PANCAKES are REAL PANCAKES. The texture is spot on, the flavor is right. They are SO GOOD!! I have been looking for a traditional nut-free pancake recipe that I could use to wow my SAD visitors, so I skipped the raspberry lemon sauce and made a caramelized banana topping with molasses, maple, and nutmeg. This is a GREAT Saturday morning cheat meal and will also be the spotlight for my Christmas morning brunch. THANK YOU!!
Don’t try making these right after completing your WOD. I did not have the strength to “whisk continuously” while coordinating my left hand to dump slowly. haha! They turned out AWESOME anyway. Also, I didn’t have all the stuff, so I just subbed coconut milk for the almond milk and blueberries for the raspberries. I may have dumped some lemon juice into the batter as well…just because. AND I melted some Kerrygold butter into the leftover blueberry sauce to pour over the top. OmmmmmmmG.
How this recipe got 5 stars is beyond me. This are downright inedible. The batter was more like dough, I nearly doubled the almond milk. Consistency is terrible-extremely grainy. They crumble to bits when cooking or moving in any way-so much so that I had to scoop them onto my fork. Zero flavor. Just yuck.
Hey Bridget! I’ve made these pancakes many, many times and the only time they have come out different is when I don’t use bob red mills tapioca flour. Then I have to add A TON more almond milk. But I made them last night exactly like the recipe and they were perfect. Try using bobs
