I LOVE granola. I can’t believe I didn’t eat oats for so damn long. They are absolutely lovely. Especially oats that are turned into crunchy, sweet, salty, chunky granola. It’s the best. This is my favorite granola of all time. It’s absolute perfection. Only problem is…we go through it like wildfire. Brian eats it so damn fast and I pick out the chocolate chips, like any civilized adult would do. And then we are left with no granola and I don’t have any interest in going to the store to buy another $7 bag. Call me lazy…because that’s what I am. I am a taurus through and through. So you know what I do? I make my own. Because it’s easy AF and way cheaper. Highly recommend it. Have you made my Snickerdoodle Granola or my Chocolate Sea Salt Granola. You need to try those, as well. Just trust me on this one.

PaleOMG Maple Almond Butter Granola

The other day I received a package of Quinn Maple Almond Butter Pretzels. These maple almond butter filled pretzels are booooomb and I couldn’t stop eating them. They sang a sweet song to my soul. And when I went to grab the bag, they were right next to a bag of oats. BOOM. Maple Almond Butter Granola idea. Is it that creative? No. But I stand behind it. Mostly because I have to since it’s something I made and it’s on my blog. Anywho, this granola is absolutely lovely. But you must follow directions. Let the granola COOL COMPLETELY before you dig into it. It doesn’t taste that great when warm and it’s not super crunchy. Plus it will burn your mouth and make you hate your life if you try to eat it right out of the oven. Just trust me on this one. I know too well.

PaleOMG Maple Almond Butter Granola

Anyone else out there craving a solo trip? I’ve been talking about this on instagram a lot lately and I’m ready for a trip somewhere by myself. I’m visiting friends in San Antonio this week then I have a trip with my hubs in 2 weeks, and even another trip in October to visit a friend. But I’m thinking November will be the month that I go somewhere by myself and soak up some time alone. I still can’t decide where I want to go. I’ve heard of a few really cool spiritual spas in Mexico, but I’m a bit over getting C tests to come back into the US. I’ve done that so many times now and it gets old. But if I stay here in the US and go to Santa Fe or Sedona or Palm Springs to a spiritual spa, no C test required. I just still don’t know where to go. Do I go super spiritual or do I go some amenities spiritual? Got any spots you love? Feel free to let me know. Someone planning this trip for me sounds pretty lovely.

Maple Almond Butter Granola

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together maple syrup, almond butter, butter, cinnamon, almond and vanilla extract. Once combined, add oats and salt then mix until completely coated in the maple almond butter mixture.
  3. Pour onto baking sheet, spread oats into a flat layer and press into the parchment paper. This will make it nice and chunky once cooled. Place in the oven to bake for 20 minutes, turn baking sheet, then bake for another 15 minutes. Once done baking, let cool COMPLETELY on the baking sheet.
  4. Eat by itself or in a bowl of your milk of choice!

Notes

*You can use a different type of fat such as coconut oil

    Have you ever substituted the butter with something non-dairy? I see the “*” but couldn’t see any notes for the butter. I guess you probably make this mostly for Brian as you you stay away from sugar and dairy for your skin.

      thanks for pointing that error out!! i updated it. you can use any fat you prefer, coconut oil or avocado oil are both great subs! and yes, i try to stay away from granola most of the time just because of the sugar content – my skin definitely doesn’t like that

    Wow, this granola is not only so tasty, but will also make your house smell amazing!! I used sugar free pancake syrup, light butter, and American Dream Nut Butter to make this more macro friendly, and then added pecans and butterscotch chips bc *balance*. Highly recommend, even my granola hating boyfriend couldn’t stop eating this!
